Perfect for autumn or winter when the petite seckel pears are in season. But you can use any favorite pear. It has a surprising crunch, creating a delicious new version of guacamole. The pistachios on top make it extra special and contrast so nicely with the pear and avocado.

3 Hass avocados, halved, pitted and cubed
2 firm ripe Seckel pears or 1 large Anjou pear, cored and finely diced
2 tablespoons chopped fresh cilantro
1 1/2 tablespoons fresh lime juice
3/4 teaspoon ground coriander
Kosher salt
1 clove garlic, finely chopped
1 small jalapeno, minced with some seeds
Freshly ground black pepper
3 tablespoons chopped roasted pistachios
Lime wedges, for serving
Blue corn tortilla chips, for serving

Steps:

  • Toss together the avocados and pears in a medium bowl. Stir in the cilantro, lime juice, coriander, 1/2 teaspoon salt, the garlic and jalapenos until combined. Add additional salt and pepper to taste.
  • Transfer to a serving bowl, sprinkle with the pistachios and serve with lime wedges and blue corn tortilla chips.

1/3 cup low fat cottage cheese or 1/3 cup soft tofu
2 garlic cloves, chopped coarsely
1/2 cup packed fresh basil, chopped (NOT dried)
1 tablespoon olive oil
2 tablespoons white onions, chopped
1/4 teaspoon Tabasco sauce, to taste (for spicier version, add your favorite whole chile -- jalapeno, serrano, Thai, etc.)
3 tablespoons parmesan cheese
2 tablespoons pine nuts, toasted (can substitute almonds, hazelnuts or walnuts)
2 medium avocados, peeled and pitted
2 -3 teaspoons lemon juice, to taste
1/2 cup firm tomatoes, diced
salt
pepper

Steps:

  • In a blender, puree the yogurt and cottage cheese until smooth.
  • With blender running on high speed, through the feed tube add the garlic, fresh basil, olive oil, onion, Tabasco sauce, Parmesan cheese and nuts.
  • Blend until smooth.
  • In a bowl, mash the avocado together with the lemon juice using a fork. Fold in the yogurt/cottage cheese mixture then stir in the tomatoes, salt and pepper to taste.
  • Adjust seasonings. If not eating immediately, cover well and refrigerate.

I discovered this recipe when on vacation in Camogli, Liguria in Italy. Traditional pesto without garlic is made in a pestle and mortar. This raw sauce is tossed with fresh green beans cooked with fresh trofie pasta. If you can't find the twisty trofie pasta, use any fresh pasta-even linguine.

2 tablespoons pine nuts
2 ½ cups fresh basil leaves
1 teaspoon rock salt
½ cup freshly grated Parmigiano-Reggiano cheese, or to taste
2 tablespoons finely grated Pecorino Romano cheese
½ cup extra-virgin olive oil, or as needed
1 (16-ounce) package fresh trofie pasta

Steps:

  • Add pine nuts to a large mortar and pestle and crush until a past forms, about 2 minutes. Add 1/4 of the basil leaves and begin to crush and grind the basil leaves until they have begun to release their oil and leaves begin to break apart. Add another 1/4 of the basil leaves and the salt. Crush and grind the added leaves and the salt. Continue this until all the basil leaves have been added and crushed; turning into a paste.
  • Add the Parmesan and Pecorino cheeses and mix with a wooden spoon. Once well combined, add the oil little-by-little until a creamy paste has been achieved.
  • Bring a large pot of lightly salted water to a boil. Add fresh trofie pasta and cook, stirring occasionally, until tender yet firm to the bite, 3 to 4 minutes. Drain. Mix in pesto sauce, adding a bit more olive oil if needed.
