Turkey Meatballs with Pesto and garlic are seared and simmered in a rich and delicious tomato sauce. Serve over pasta for an easy weeknight dinner!

2 pounds (1 kg) lean ground turkey mince ((or beef, pork or chicken))
1 cup breadcrumbs ((or almond meal for lower carb))
1 large egg
4 tablespoons traditional basil pesto
1/4 cup chopped parsley
2 tablespoons tomato paste
4 cloves garlic (crushed or minced)
2 heaping teaspoons paprika ((sweet or smokey))
1/4 teaspoon red chilli flakes ((optional but gives them a nice kick))
Salt to season ((about 2 teaspoons))
17 ounces (500 g) pasta sauce of choice ((or crushed tomatoes))
15 ounces (420 g) condensed tomato soup ((or Passata / Tomato Sauce for U.S readers))
Salt/pepper to taste
Fresh chopped parsley and grated parmesan (, to serve)

Steps:

  • Combine all meatball ingredients in a large sized bowl. Shape into meatballs (I made 18 meatballs about 2-inches in diameter).
  • Spray a nonstick pan with cooking oil spray or grease with a drizzle of olive oil and pan fry meatballs until underside is golden. Turn them and cook until browned on both sides.
  • Pour in tomato sauce (or crushed tomatoes) and the tomato soup (or passata/sauce). Season with salt and fresh cracked pepper. Simmer on low heat for 10 - 15 minutes or until meatballs are cooked through.
  • Garnish with parsley and parmesan cheese, and serve over spaghetti or quinoa or rice!

1 egg
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp dried basil
1 cup of pesto
2/3 cup mozzarella cheese

Steps:

  • Preheat oven to 400F
  • In a large mixing bowl combine ground turkey, egg, salt, pepper, garlic powder, and dried basil
  • Use your hands to combine this mixture thoroughly
  • Take 1/4 cup of the pesto and spread a thin layer along the bottom of a 10×10 square baking dish
  • Form 16 meatball by taking 2 tbsp of the turkey meatball mixture for each meatball
  • Arrange the 16 meatballs in the baking dish
  • Pour the remaining 3/4 cup of pesto over the meatballs ensuring each one is covered
  • Bake in the oven for 25 minutes
  • Then remove from the oven, add the mozzarella cheese and bake for an additional 5 minutes or until the cheese melts
  • Allow to cool slightly and serve with noodles or veggies!

3 tablespoons Pesto, plus more for serving

1 lightly whisked egg

1/2 teaspoon freshly ground pepper, plus more for serving
1 smashed and peeled garlic clove

These delicious meatballs coupled with homemade sauce and wheat pasta are a great traditional dinner with a wonderful twist.

1 onion, diced
1 clove garlic, minced
1 cup frozen spinach
1 pound lean ground turkey

salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a large baking pan with cooking spray.

1 pound ground turkey
2 heaping tablespoons store-bought pesto
Coarse salt
2 medium red bell peppers, seeded and diced
12 ounces broccoli florets (about 4 cups)
2 tablespoons extra-virgin olive oil, plus more for drizzling
Fresh basil, for garnish
1 lemon
Freshly grated Parmesan, for garnish
6 ounces thin spaghetti

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the ground turkey, pesto and a pinch of salt in a large mixing bowl. Using your fingers, form 1-inch meatballs. Place the meatballs on one side of a sheet pan and the bell peppers and broccoli florets on the other. Drizzle with the olive oil and a good pinch of salt. Roast until vegetables are tender and meatballs start to turn golden, about 30 minutes, then turn the oven to broil. Drizzle 1 or 2 tablespoons water over the broccoli, then put the sheet pan under the broiler until toasted, about 5 minutes.
  • For the parents, serve garnished with fresh basil, a lemon wedge and freshly grated Parmesan.
  • Now for the kids! In the meantime, boil the spaghetti in a pot of salted water until al dente. Reserve about 1/2 cup pasta water and drain the rest.
  • Toss the pasta with the pasta water, a tiny drizzle of olive oil and a small helping of meatballs and veggies. Garnish with cheese and serve!

1 lb lean ground turkey (90-93 percent)
2/3 cup basil pesto
2/3 cup panko breadcrumbs (no substitute)
salt and pepper
3 (14 1/2 ounce) cans diced tomatoes
1 tablespoon extra virgin olive oil
1 onion, finely chopped
4 garlic cloves, minced
1 pinch red pepper flakes or 1 pinch cayenne pepper
1 lb spaghetti, dry
3 tablespoons fresh basil, chopped

Steps:

  • Gently mix turkey, pesto, panko, 1/2 teaspoon salt and 1/4 teaspoon pepper in bowl using hands until uniform. Shape mixture into 16-18 meatballs.
  • Pulse 2 cans diced tomatoes (reserve the 3rd can for Step 5) in food processor until mostly smooth; set aside.
  • Heat oil in 12-inch nonstick skillet over medium heat until just smoking. Brown meatballs well on all sides, about 10 minutes; transfer to paper towel-lined plate.
  • Add onion and 1/8 teaspoon salt to fat left in skillet and cook over medium heat until softened, 5 to 7 minutes. Stir in garlic and pepper flakes and cook until fragrant, about 30 seconds.
  • Stir in processed tomatoes and remaining 1 can diced tomatoes and their juice. Bring to simmer and cook for 10 minutes. (I add a pinch of sugar at this point.).
  • Return meatballs to skillet, cover, and simmer gently until meatballs are cooked through, about 10 minutes.
  • Cook pasta until al dente. Reserve 1 cup cooking water, then drain pasta and return it to pot.
  • Add several large spoonfuls of tomato sauce (without meatballs) to pasta and toss to combine. Season with salt and pepper to taste and add reserved cooking water as needed to adjust consistency.
  • Divide pasta among individual bowls. Top each bowl with remaining sauce and meatballs, sprinkle with basil and Parmesan cheese. .
