PICKLED BEETS



Pickled Beets image

This recipe was given to me many years ago by an elderly farmers wife and has been one of my 'must do' yearly canning recipes. If you have a large amount of beets, just keep repeating brine until your beets are all gone! Enjoy!

10 pounds fresh small beets, stems removed
2 cups white sugar
1 tablespoon pickling salt
1 quart white vinegar
¼ cup whole cloves

Steps:

  • Place beets in a large stockpot with water to cover. Bring to a boil, and cook until tender, about 15 minutes depending on the size of the beets. If beets are large, cut them into quarters. Drain, reserving 2 cups of the beet water, cool and peel.
  • Sterilize jars and lids by immersing in boiling water for at least 10 minutes. Fill each jar with beets and add several whole cloves to each jar.
  • In a large saucepan, combine the sugar, beet water, vinegar, and pickling salt. Bring to a rapid boil. Pour the hot brine over the beets in the jars, and seal lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

Yield: 8 x half-litre (US pint) jars or 4 litre (US quart) jars

3 kg home-canned beets ((about 7 lbs))
1 spice bag ((see NOTES section below))
1 litre vinegar ((5% acidity or higher. 4 cups / 32 oz ))
500 ml water ((2 cups / 16 oz))
400 g sugar ((2 cups / 16 oz. Or 2 cups / 50 g of Splenda®))
300 g onion ((peeled and thinly sliced. Optional. 3 cups / about 3 medium))
1/2 teaspoon salt
1/4 teaspoon Pickle Crisp ((per jar. optional))

Steps:

  • Cut off beet greens if still attached, leaving a small bit (2 to 3 cm / 1 inch), as well as any roots.
  • Wash and scrub well.
  • Boil the unpeeled beet roots just until they are tender. This should be about 20 to 25 minutes in boiling water (depending on size) or try pressure cooker (see Pressure Cooker section below). Don't overcook. You won't want mushy pickled beets.
  • Meanwhile make up and set aside your spice bag. (See NOTES section below.)
  • Let beets cool till you can handle them safely, then peel, then cut into slices about 1 cm (1/4 inch) thick.
  • Mix vinegar, water and sugar in a large pot. Add spice bag. Bring to a boil. Add onion (if using) and beets, bring back to a boil then lower to a simmer for 5 minutes.
  • Remove and discard spice bag.
  • Use a slotted spoon to divvy the onion (if using) and beet out amongst the jars.
  • To each half-litre (1 US pint) jar add: 1/2 teaspoon salt and optionally, 1/4 teaspoon Pickle Crisp. (Double those quantities for litre / US quart jars).
  • Top jars up with pickling liquid.
  • Leave 2 cm (1/2 inch) headspace for either size of jar.
  • Debubble, top up with more liquid as required to retain headspace.
  • Wipe jar rims.
  • Put lids on.
  • Process either size jar in a water bath or steam canner for 30 minutes; increase time as needed for your altitude.
  • Best after at least a month of jar time.

Lightly pickled with apple cider vinegar, these sugar free beets are the perfect way to ensure you have this delicious super food on hand to add to your meals all week!

6 large beets (beetroot)
6 tbsp apple cider vinegar
5 tbsp honey
Handful fresh dill (optional)
Salt & black pepper to taste
3 1/2 cups warm water

Steps:

  • Place the beets in a large saucepan and cover with water. Simmer on a medium high heat for about 35 mins, or until the beets are cooked through. Take the beets out of the water and allow to cool. Wearing a pair of rubber gloves, pull the skins off the beets with your fingers (they should come off easily) and top and tail them with a sharp knife.
  • Slice the beets into small cubes or rounds. Place them in glass jars with airtight lids. Add a few sprigs of dill in each jar (optional).
  • In a large jug, mix together the apple cider vinegar, honey, salt & pepper, and warm water. Pour into the glass jars until the beets are covered.
  • Store in the fridge overnight for the flavours to infuse, then enjoy!

1 - 2 large beets
1-2 Tablespoons white vinegar
1 cup water
1 cup sugar
1 cup white vinegar

Steps:

  • Trim leaves 2 inche from beet root.
  • Place trimmed beets in large saucepan. Cover with water. Add 1-2 T⅞ablespoons of white vinegar.
  • Boil until tender, approximately 25 minutes to an hour depending on size of beet.
  • Cool in cold water until easy to handle.
  • Remove skins using gloved hands or a vegetable peeler, and dice into bite-sized chunks.
  • Add diced beets to a clean jar or glass bowl.
  • In a saucepan, boil water, sugar and white vinegar, whisk to mix.
  • Pour hot brine over diced beets.
  • Cool, cover and refrigerate for a minimum 18 to 24 hours before eating.

  • Rinse off any excess dirt and cut off the stem and root. I suggest finding ones that are similar in size to ensure even cooking. If some are larger than the others, which is bound to happen, slice the larger ones into smaller pieces so they can cook evenly.
  • Add water to a large pot with a steamer basket and steam for 30-45 minutes. The time will depend on how large the beets are. They are done when you can easily pierce them with a knife.
  • Remove from the pan and let them cool for a few minutes. Next, you will need to peel them. With the beets being warm, the skin should be able to peel right off.   • Selecting the beets. The most important step! You need beets that are FRESH and crisp. Limp, old beets will make nasty tasting canned beets. Guests will probably throw them at you..
  • Prepare the jars and canner. Wash the jars and lids. This is a good time to get the jars ready! The dishwasher is fine for the jars; especially if it has a "sanitize" cycle.
  • Trim the ends and cut into smaller pieces. Just take a sharp knife and trim off beet tops, leaving an inch of stem and roots to prevent bleeding of color.
  • Wash the beets! I'm sure you can figure out how to scrub the beets in plain cold or lukewarm water using your hands or a vegetable brush.
  • Cook the beets. Put similar sized beets (hopefully, they're ALL of a similar size so they take the same time to cook) together with enough boiling water to cover them and cook until tender (usually about 30 to 45 minutes in an open pot, or 10 - 15 minutes in a pressure cooker).
  • Cool the beets. You can pour ice over them, or just let them cool on their own. It's just to cool them enough so you can handle them to remove the skins, stems, roots and then slice or quarter them.
  • Trim, peel and slice. Trim off the roots and stems. The skins should easily slide off. Slice the beets into 1/4-inch slices. You can leave the beets whole (if they are small, say 1 inch or less), or quarter them or slice them into 1/4-inch slices.
  • (Optional) Slice the onions. If you like onions in the mix (most people do), peel and thinly slice the onions.
  • Make the Pickling Solution. Combine the vinegar, salt, sugar (or Stevia (in a prepared form like Truvia, it measures same as sugar; if you use another form, you'll need do your own conversion) - or Splenda, if you prefer, if you need a no-sugar version) and fresh water in a large pot.
  • Heat the mixture with the beets and onions. Add beets and onions to the pot and simmer for 5 minutes. Then remove the spice bag.
