Quick Pickled Garlic Jalapeños image

Pickling peppers doesn't require any fancy equipment or waiting weeks for results. All you need is a mason jar and a few ingredients. These are the best spicy and sweet accompaniment to slow-roasted barbecue meats such as brisket. They also go great in soups, on sandwiches or even by themselves!

6-7 jalapeños, deseeded and sliced
6-7 cloves of garlic, thinly sliced
1 1/4 cup white vinegar
1 1/4 cup sugar
1/2 cup water

Steps:

  • Combine vinegar, sugar and water in a sauce pot.
  • Bring to a boil and simmer until the sugar is dissolved.
  • Remove from heat and cool until it reaches room temperature.
  • While it cools, you can use this time to slice the peppers and garlic.
  • To remove the seeds from the peppers, remove the top of the pepper and roll the pepper firmly on a cutting board using your palm. Then squeeze the pepper gently until seeds start to fall out. This won't remove every single seed, but it will help lessen the spiciness of the peppers. If you want the pickles to be extra spicy, skip this step.
  • Fill a mason jar with the garlic and peppers and pour the vinegar mixture over top until it reaches the neck of the jar. You will most likely have extra liquid that can be discarded.
  • Use a spoon to push down the garlic and peppers so they are completely submerged in the liquid.
  • Cap the jar tightly and refrigerate for at least three days. Wait over a week for even better results.
  • The peppers will stay good in the refrigerator for several weeks.

A really simple pickled chilli recipe that goes with everything you need a little heat for.

12 - 15 Jalapenos
3 Clove Garlic
250ml White vinegar (5% acidity)
150ml Water
1 tbsp Sugar
1 tbsp Salt

Steps:

  • Give your jalapenos a rinse and ensure they are clean and then you can begin slicing them. Cut into rounds, seeds and all and discard the stalks.
  • Prepare the pickling vinegar by adding the peeled, gently crushed garlic to a pan along with the water, vinegar, sugar and salt. Bring the pickling liquor to a simmer over a gentle heat.
  • Once the pickling liquor is simmering add the sliced jalapenos and allow to simmer for a minute before turning off the heat.
  • Ladle the hot liquid and jalapenos into the sterilised jar, a jar funnel is good for this. Seal the jars with the lid and allow to cool to room temperature.
  • Store the jars in the fridge for a month if not more. Mine never last that long.

We use a lot because we're big fans of pickled garlic too. You could also substitute serrano peppers for the jalapenos, cauliflower for the carrots, or add small onions. Pickles will keep approximately 6 weeks in the fridge.

½ cup olive oil
2 carrots, chopped into bite-sized pieces
16 fresh jalapeno peppers, chopped
1 head garlic, peeled, or more to taste
2 tablespoons whole black peppercorns

2 tablespoons kosher salt
2 tablespoons whole mustard seeds
2 teaspoons thyme leaves

Steps:

Incredibly versatile, they can be tucked into tacos, quesadillas and sandwiches, mixed into tuna salads or eggs for omelets, or served as garnishes, crowning nachos, hot dogs and pizzas. The tangy brine, which can be used to punch up any vinaigrette, tames the heat of the chiles. There are countless store-bought options - and people tend to be loyal to particular brands - but pickling your own is easy, and allows you to customize to taste, altering the vegetable ratios, herbs or sugar content. Inspired by fruit-based vinegars available in the Mexican countryside, this version combines white distilled vinegar with natural rice vinegar, adding a dose of sweetness.

1/2 cup vegetable oil
6 ounces white pearl onions (or trimmed spring onion bulbs)
4 garlic cloves, peeled
1 pound whole jalapeños (stems intact)
1/2 pound medium carrots, peeled and sliced 1/4-inch thick on the diagonal
2 cups distilled white vinegar
1 cup unseasoned rice vinegar
5 dried bay leaves
1 tablespoon dark brown sugar
2 teaspoons dried oregano
1 teaspoon dried thyme
5 whole cloves, stems removed and discarded, rounded tops crushed between fingertips
1/4 teaspoon ground cumin
2 tablespoons kosher or sea salt
1 teaspoon freshly ground black pepper

Steps:

  • In a large (12-inch) skillet or a heavy pot, heat the oil over medium-high until hot but not smoking. Add the onions and cook for 1 minute, stirring occasionally, until their outer layer begins to soften. Stir in the garlic and cook for 1 minute, until it barely begins to turn golden. Incorporate the jalapeños and carrots, and cook for 3 to 4 minutes, stirring a couple times, until the jalapeño skins begin to slightly dull and wrinkle.
  • Stir in all remaining ingredients and simmer briskly for about 7 minutes, until the liquid reduces and the vegetables soften. Turn off the heat and let cool.
  • Transfer the pickled vegetables and their liquid into a container with a tight-fitting lid and refrigerate for at least 12 hours. (They will last for at least 1 month.)

1 1/2 quarts water
2 cups white vinegar
1/2 cup pickling salt

Steps:

  • In clean sterilized jars, place the olive oil, oregano, garlic and carrots and onions (optional).
  • Mix the brine ingredients and bring to a boil.
  • Pack your peppers (and other vegetables) in jars to 3/4 full (peppers will expand).
  • Pour boiling brine over the peppers within 1/2" from the top.
  • Seal by hot water bath for 20 minutes.
  • Let jars sit for 3 weeks for the best flavor.
  • NOTE: The amount of peppers is not given here. It all depends on how many peppers you can stuff into a jar, and how many jars you will be making. I think I used 1# or maybe 1 1/2# for this amount of ingredients.

  • Brine Solution - Bring water, vinegar and salt to a boil.
  • Adjust the amount of remaining ingredients according to amount of beans you have on hand.
  • Place 1 to 2 cloves of garlic, 1 jalapeño pepper cut in half(leave a few seeds in) and 2 to 3 sprigs of dill in to large pint jars.
  • Pack jars tightly with fresh green beans, leaving 1/2 inch of space at top.
  • Pour brine solution in to jars leaving 1/4 inch of space at the top. Remove air bubbles by stirring with a butter knife.
  • Wipe rim clean with a cloth and seal. Tighten rings finger tight.
  • Ive never processed my jars and have never had any problems with them sealing. Feel free to process if you like.
  • Store beans in a cool place for a minimum of two weeks before eating.
