CHERRY PIE IN THE SKY

Cap off a stargazing or sing-along evening around the campfire with cherry sweet treats!

Ingredients

2 tablespoons butter or margarine, softened
8 slices white sandwich bread
1/3 cup cherry pie filling
1 package (3 ounces) cream cheese, sliced
2 tablespoons sugar, if desired

Steps:

Heat coals or gas grill for direct heat. Spread butter on 1 side of 2 slices of bread. Place 1 slice, butter side out, on sandwich press. Spoon one-fourth of the pie filling onto center of bread. Top with one-fourth of the cream cheese. Top with other slice of bread, butter side out. Close press; trim excess bread.
Grill over campfire or on grill 4 to 6 inches from medium heat 15 to 18 minutes, turning once, until bread is golden brown and cream cheese is melted. Sprinkle with 1/2 teaspoon of the sugar. Repeat with remaining ingredients. Serve warm.

1/3 cup graham crackers, crushed
1/3 cup sugar
1/4 cup superfine sugar
1 cup cherry juice
1/4 cup grenadine
4 shots white rum
1 cup club soda
1 lime, juiced
Lime slices, for garnish
Maraschino cherries, for garnish

Steps:

In a bowl, mix together graham crackers and sugar. Moisten the rims of the glasses and coat with sugar mixture.
In a large pitcher, add superfine sugar, cherry juice, grenadine, rum, club soda and lime juice. Stir.
Pour over ice in the rimmed glasses with and garnish with lime and cherries.

3/4 cup sugar
1 tablespoon flour
1 teaspoon cinnamon
4 to 6 Granny Smith apples, peeled and sliced thin
2 tablespoons sweet butter
1 egg, beaten
1 tablespoon cream

Steps:

Combine sugar, flour and cinnamon. Lay the pie crust in a 9-inch pie plate and dust it with about one-fourth of the sugar mixture.
Alternate layers of apples in concentric circles, dusting each layer with the sugar mixture. Dot the top layer with butter.
Lay over the crust and crimp the edges. Beat the egg with the cream and thinly glaze the pie crust with several tablespoons of the mixture. Cut vents in the pie.
Bake at 450 degrees for 10 minutes, then lower heat to 350 for 40 more minutes or until crust is golden.
