Steps:
- Place crab meat onto sheet pan and spread evenly.
- Place sheet under broiler for approximately 2 minutes; remove.
- Change oven setting to bake and set to 350°F.
- Remove all shells from crab meat.
- Saute celery, onions and red pepper in a large saucepan for approximately 2 minutes.
- Place sauteed vegetables on sheet pan and refrigerate about ten minutes.
- Slice basil into julienne strips.
- Place crab meat, bread cubes, basil and sauteed vegetables in a large bowl and mix gently.
- Fold in mayonnaise.
- Spray a baking sheet lightly with cooking spray.
- Measure four ounce portions onto pan.
- Place in oven for 15 minutes.
- Serve with sauce of your choice (Cajun style sauce would be delicious, but whatever you like best is appropriate).

CRAB CAKES - DEL FRISCO'S
Steps:
- 1. Soak white bread and cream together. 2. Place a sauté pan on the stovetop on medium heat and add butter to the pan. 3. Add the onion and celery and sweat them till they are soft. Then transfer the softened vegetables to a half size sheet pan and cool under refrigeration. 4. Pour crabmeat onto half size sheet pan and pick out shells. 5. Transfer the cooled vegetables to a chilled stainless steel mixing bowl and add the heavy cream and the soaked bread. 6. Fold in all of the ingredients except the crabmeat to combine forming the base. 7. Fold the crabmeat into the base without breaking up the lumps. 8. Let crab cake mixture rest under refrigeration for 2 hours. 9. Once mixture is ready scale out 4 ounces for mixture at a time and form into crab cake shape. 10. Place the crab cakes on a half sheet pan and bake at 350 degrees F for 15 minutes. 11. Once crab cakes are done transfer one crabcake to a plate of choice and serve with the remoulade and lemon. 12. Garnish with chive sticks and serve. FOR THE REMOULADE 1. Place all ingredients into a stainless steel bowl and whisk with a wire whip to combine. 2. Once sauce comes together taste to check seasoning then transfer to a small plastic container and let sit for 4 to 6 hours before using.

Steps:
- Melt margarine in a skillet over medium heat. Cook and stir onion and green bell pepper in margarine until tender, about 5 minutes. Stir mustard, Worcestershire sauce, seafood seasoning, salt, hot pepper sauce, black pepper, and cayenne pepper into the onion mixture. Sprinkle flour over the mixture; stir to integrate. Pour cream over the mixture; bring to a boil, stirring constantly and cook for 1 minute. Fold crab meat into the mixture.
- Spoon some of the liquid from the skillet into the bowl with the beaten egg yolks to temper the egg; stir. Pour the egg mixture into the skillet and stir. Cook, stirring constantly, until the mixture thickens, about 5 minutes.
- Transfer crab mixture to a bowl; refrigerate until chilled completely, about 1 hour.
- Mix bread crumbs, melted butter, and paprika in a shallow bowl.
- Divide the crab mixture into 4 portions; form into patties. Gently press the patties into the bread crumb mixture to coat.
- Pour enough corn oil into a flat-bottomed pan to be 1-inch deep; heat to 350 degrees F (175 degrees C).
- Cook patties in hot oil until golden brown, 2 to 3 minutes per side.

- Mix together Old Bay™ seasoning, baking mix, and parsley in a medium size mixing bowl. Stir mayonnaise, mustard, egg, and Worcestershire sauce into dry ingredients. Mix in crab meat gently. Form mixture into 6 to 8 balls.
- Heat 1 inch oil in a large, heavy bottomed skillet to 365 degrees F (185 degrees C). Place balls in pan, and flatten slightly with a spatula. Flip the crab cakes over after 3 minutes, or when the crab cake is browned on one side. Continue frying until done. Drain on paper towels.

MACADAMIA NUT CRUSTED CRAB CAKES
Recipe from the "Pineapple Grill" in south Florida. These are very tasty crab cakes that can be served as a main course or smaller as an appetizer. Very delicious with the Black Bean Relish. Prep time includes letting the crab mixture and patties sit to meld flavors.

Steps:
- Pick through the crabmeat to remove any bits of cartilage or shell.
- Drain well.
- In a large bowl, combine the crabmeat and the next seven ingredients.
- Mix well and let stand for 30 minutes for the flavor to blend.
- Place the flour in one bowl, the eggs in another and the bread crumbs mixed with the Macadamia nuts in a third bowl.
- Divide the crab mixture into 8 equal portions and shape each into a patty about 1/2 inch thick.
- (the mixture is light and will separated but don't despair, keep pressing each patty firmly together).
- Dip each patty into the flour to coat.
- Next dip into the beaten eggs and then roll carefully in the crumb mixture to cover well.
- Place on a plate and allow to air dry for 30 minutes.
- In a large, heavy skillet, heat the oil over medium heat.
- Cook the patties without crowding in the pan until desired browness, turning once.
- This may have to be done in batches.
- Watch the heat, and reduce if necessary, as the nuts will tend to brown more quickly than the crumbs.
- It usually takes about 3 minutes on each side to reach a golden brown and cook through.
- Serve with"Black Bean Relish" (recipe posted separately).
