HOMEMADE POLISH PIEROGI



Homemade Polish Pierogi image

My mother made many dozens of these and measured ingredients using the palm of her hand. We've passed the recipe down over the years as the family has grown. -Veronica Weinkauf, South Bend, Indiana

Number Of Ingredients 11

2 large eggs
1/4 cup water
1/2 teaspoon salt
2 cups all-purpose flour
1 large egg
1 teaspoon salt
1/2 teaspoon sugar
Dash pepper
1 carton (15 to 16 ounces) soft farmer cheese or whole-milk ricotta cheese
1 to 4 tablespoons butter, divided
Optional: sour cream and minced chives

Steps:

  • In a large bowl, whisk eggs, water and salt until blended; gradually stir in flour. Transfer to a lightly floured surface; knead 10-12 times, forming a firm dough. Cover and let rest 10 minutes., For filling, in a small bowl, whisk egg, salt, sugar and pepper. Stir in cheese., Divide dough into 4 portions. On a lightly floured surface, roll each portion to 1/8-in. thickness; cut with a floured 4-in. round cookie cutter. Place 1 tablespoon filling in center of each circle. Moisten edges with water; fold in half and press edges to seal. Repeat with remaining dough and filling. , In a 6-qt. stockpot, bring water to a boil. Add pierogi in batches; reduce heat to a gentle simmer. Cook until pierogi float to the top and are tender, 2-3 minutes. Remove with a slotted spoon., In a large skillet, heat 1 tablespoon butter over medium-high heat. Add pierogi in batches; cook until golden brown, 1-3 minutes on each side, adding additional butter as necessary. If desired, serve with sour cream and chives.

6 cups flour
10 ounces sour cream
4 eggs
1 1/2 tablespoons salt
1 1/2 tablespoons baking powder
2 1/2 lbs potatoes, cooked and mashed (Never use the dried, or boxed mashed potatoes, always use real potato)
3/4 lb cheddar cheese, grated
1/4 cup melted butter
5 eggs (reserve 1 egg white)
1/2 cup butter
1 cup chopped onion

Steps:

  • For filling: Combine mashed potatoes, grated cheese, melted butter and 4 eggs.
  • Separate remaining egg and put yolk into the filling, the white into a small bowl and set aside.
  • Egg white is used to seal filling inside dough circles.
  • For dough: Combine ingredients for dough, adding a sprinkling of water if necessary.
  • Roll out dough, press out circles. (An empty soup can may be used to make circles out of the rolled dough.)
  • Brush egg white all around inner edge of circles.
  • Put 1 tablespoon filling in center; top with another circle and press with fork to seal edges together.
  • Cooking: Put water into deep pot and bring to boil.
  • Drop pierogi into water a few at a time.
  • They will sink to the bottom and when they float to the surface, remove and drain.
  • Repeat until all pierogi are cooked.
  • In heavy skillet melt butter and add onions.
  • Cook onion until transparent; add pierogi and fry golden.
  • Serve hot with onion.
  • To freeze: Dust with flour, put on cookie sheet and freeze.
  • When ready to use, put frozen pierogi in boiling water and proceed as above.

1 (12 ounce) box pierogi
2 cups frozen green peas

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Add onion; saute 2 minutes until transparent. Add kielbasa and pierogi; saute 3 minutes until slightly browned. Add peas; cook 3 minutes longer until hot.

Fun and easy alternative to the old-fashioned, labor-intensive pierogie. Kids love this!

4 onions, chopped
4 tablespoons butter
1 (16 ounce) package lasagna noodles
16 ounces shredded Cheddar cheese
4 cups instant mashed potato flakes
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter the bottom and sides of a 9x13 inch baking dish.
  • Saute onions in the butter until translucent and soft.
  • Cook and drain lasagna as per package directions.
  • Make potatoes as per package directions for 12 servings. Combine the onions with the potatoes.
  • Place a layer of noodles over the bottom of the baking dish. Cover with a layer of potatoes, sprinkle with cheese and pats of butter. Repeat ending with noodles sprinkling top with cheese and butter. Bake at 350 degrees F (175 degrees C) for 1 hour.

As a young kid running the streets with my friends, I remember going to the back door of the neighborhood tavern and begging the cooks for pierogies. Nothing tasted better than those pleaded for treats. Since I can no longer do that, here's the next best thing. Hope you enjoy.

16 ounces wide egg noodles
6 cups prepared mashed potatoes (your own recipe or instant)
1/4 cup butter
2 large onions, chopped
minced garlic (optional)
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded white processed cheese
sour cream

Steps:

  • Cook noodles a couple of minutes less than directed on package, you want them a little chewy.
  • Drain and set aside.
  • Melt butter and saute onions until light golden; add garlic if using and continue to saute 1 minute.
  • Add onions to potatoes and mix well.
  • Spray 13x9 inch baking dish with non-stick cooking spray.
  • Add half of noodles.
  • Top with potato mixture.
  • Add cheddar cheese.
  • Top with remaining noodles.
  • Add American cheese.
  • Bake at 350 for 30 to 45 minutes, until hot and bubbly.
  • Serve with sour cream.
  • (For those who like it, you might like to add a can of rinsed and drained sauerkraut.).
