My parents ate at a diner that served a pineapple coleslaw, and my Dad has tried to mimic it. This is me mimicking his imitation!

1 medium head green cabbage, chopped
1 fresh pineapple - peeled, cored, and cut into small pieces
4 green onions, chopped
1 bell pepper, chopped
⅓ cup white vinegar
¼ cup mayonnaise
1 tablespoon white sugar
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Mix cabbage, pineapple, green onions, and bell pepper together in a large bowl.
  • Whisk vinegar, mayonnaise, sugar, salt, and pepper together in a separate bowl; drizzle over cabbage mixture and toss to coat.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours before serving.

I started making these for family get-togethers and everyone LOVED them. No one could eat enough of them. I am also using them when I cater my daughter's wedding.

½ pound sliced bacon, cut into thirds
1 (20 ounce) can pineapple chunks in juice, drained
½ cup packed brown sugar
½ cup mayonnaise
¼ cup chili sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Wrap each chunk of pineapple with a piece of bacon and secure with toothpicks. Place in a shallow baking dish. In a small bowl, stir together the brown sugar, mayonnaise and chili sauce; pour over the bacon wrapped pineapple.
  • Bake uncovered for 25 minutes in the preheated oven, until bacon is crispy on the edges and the sauce is bubbly. Serve warm.

3/4 cup mayonnaise
2 tablespoons sugar
2 tablespoons cider vinegar
1 to 2 tablespoons 2% milk
4 cups shredded cabbage
3/4 cup pineapple tidbits
Paprika, optional

Steps:

  • For dressing, mix first 4 ingredients. Place cabbage and pineapple in a large bowl. Add dressing; toss to coat., Refrigerate until serving. If desired, sprinkle with paprika.

1 (8-ounce) can crushed pineapple in its own juice, drained and juice reserved
5 slices bacon cut into 1/2 -inch pieces
2/3 cup onion finely chopped
1 tablespoon splenda
1 teaspoon almond flour
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 cup cider vinegar
Few drops of hot pepper sauce
1 egg lightly beaten

Steps:

  • 1. In a large bowl, combine cabbage and pineapple. 2. Cook bacon until crisp in a saucepan drain on paper towels. Remove all but 2 tablespoons bacon drippings. Add onion and sauté until golden. 3. Combine reserved pineapple juice and enough water to measure 3/4 cup. In a small mixer bowl, stir together splenda, flour, mustard and salt. Blend in juice, vinegar and hot pepper sauce, mixing well. Stir into onion bring to a boil. Reduce heat, stir and cook for 5 minutes. Stir a few tablespoons into beaten egg, return to saucepan cook, stirring, for 1 minute. 4. Pour hot dressing over cabbage and pineapple toss. Sprinkle with bacon and serve at once.

1 diced onion
1 (20 ounce) can crushed pineapple
2/3 cup low-fat mayonnaise
4 ounces salsa verde
1/4 cup chopped fresh cilantro
1 teaspoon pepper
1 lime
lime zest
20 baby carrots
2 stalks celery

Steps:

  • In food processor, shred cabbage and carrots. Transfer to a bowl and add mayonnaise. Add diced onion, celery and chopped cilantro to mixture. Add pineapple, lime, lime zest and pepper. Taste and add a little sugar or honey if needed. Refrigerate 4 hours-overnight. Stir and serve.
