4 boneless (skinless chicken breasts)
½ cup BBQ sauce
½ cup fresh pineapple (diced)
1 tablespoon vegetable oil
1 package frozen peas and carrots
1 cup quinoa (cooked and cooled)
1 teaspoon ground ginger
½ teaspoon garlic powder
¼ cup soy sauce
1 egg
1 cup fresh pineapple
1 red bell pepper (diced)
1 orange bell pepper (diced)
1 red onion (diced)
¼ cup fresh cilantro (chopped)
The juice of one lime

Steps:

  • Preheat oven to 350 degrees and prepare a baking dish by greasing with nonstick cooking spray.
  • Place the chicken breasts in the baking dish and cover with BBQ sauce. Top with ½ cup pineapple.
  • Bake the chicken for 30 minutes.
  • While the chicken is baking, prepare the pineapple salsa by mixing together the remaining pineapple, bell pepper, onion, cilantro, and lime juice. Set aside.
  • Then prepare the quinoa by sautéing peas and carrots in vegetable oil in a large skillet over medium heat.
  • When the vegetables are cooked, add the quinoa and season with ginger, garlic, and soy sauce.
  • Whisk the egg, then add it to the pan and stir to scramble.
  • To serve, place a layer of quinoa on the plate, then top it with BBQ chicken. Top the chicken with pineapple salsa.

1 cup BBQ sauce
⅔ cup soy sauce
2 tablespoons rice wine vinegar
2 tablespoons minced fresh ginger root
4 teaspoons sesame oil
2 teaspoons honey
4 cloves garlic, minced
2 teaspoons red pepper flakes
1 pinch kosher salt to taste
4 boneless, skinless chicken breasts, pounded thin
10 pineapple rings

Steps:

  • Whisk BBQ sauce, soy sauce, rice vinegar, ginger, sesame oil, honey, and garlic together in a large bowl until completely combined. Season with red pepper flakes and salt. Pour 1/2 of the marinade over the chicken. Marinate in the refrigerator for 4 hours. Set aside remaining marinade.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken and discard marinade.
  • Cook on the preheated grill until browned and no longer pink in the center, brushing with reserved marinade and flipping as needed, 10 to 15 minutes. Add pineapple to the grill during the last 5 minutes of cooking time. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).

1 (8 ounce) can crushed pineapple
1 tablespoon garlic powder
½ teaspoon chili powder
6 chicken leg quarters

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix barbecue sauce, pineapple, garlic powder, and chili powder together in a bowl.
  • Lay chicken legs in a 9x13-inch baking dish. Pour barbecue sauce mixture on top, making sure to coat all of the chicken. Cover with aluminum foil.
