JAZZY PINEAPPLE PECAN BUTTER
This sweetened butter is heavenly scooped into baked sweet potatoes. It is also nicely paired with bagels, toast, or pancakes. This was an entry in RSC #10.

Steps:
- Whip butter until creamy.
- Add whipping cream and whip until fluffy and light colored.
- Add brown sugar and cinnamon. Beat on low speed until incorporated.
- Fold in raisins, pineapple, and pecans.
- For sweet potatoes: Use a melon baller or small portioning scoop to form small balls. Place on wax paper lined baking sheet and freeze. After freezing the balls can be stored in a zip top bag. Place ball in sweet potato at time of serving.
- For breads: Spoon butter into a sealable container. Store in fridge.

EASY PINEAPPLE BAKE
We first had this at a special Easter dinner served for our family at the Ronald McDonald House in Philadelphia. It was a side dish served with ham, but could also be served as a dessert. I wish I could give credit to the sweet lady who shared the recipe with me.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat sugar and butter together in a bowl using an electric mixer until smooth and creamy. Add eggs and beat until smooth. Stir bread and pineapple into creamed butter mixture; pour into a 1-quart baking dish.
- Bake in the preheated oven until lightly browned and eggs are set, 45 to 50 minutes.

- Place the lid on the pan and cook gently for 30-40 minutes. Stir frequently using a wooden spoon. The mixture is ready when the fruit has softened.
- Pour the purée into the pan and add the sugar. The amount of sugar should be adjusted as explained above. Cook over gentle heat, stirring frequently. Keep cooking until the sugar dissolves.
- Bring the mixture to the boil. Cook for about another 15 - 20 minutes while stirring occasionally. You are aiming for a thick and creamy texture.
- Pour the mixture into jars. Cover each jar with a wax paper circle and cellophane. Fasten with a rubber band or elastic.
