This cheesy mashed potato casserole is so hard to resist. Break out those French fried onions and upgrade your mashed potatoes.

Steps:
- Preheat the oven to 350°F.
- Prepare the instant mashed potatoes according to the package directions.
- Add sour cream, chives, parsley, and pepper.
- Place the mashed potatoes in a 1 1/2-quart casserole dish.
- Top with cheddar cheese.
- Sprinkle French's Fried Onions around the edge of the casserole.If you are making this dish ahead to reheat later, add the shredded cheese, but wait to top with French's Fried Onions until you are ready to reheat.
- Bake for about 20 minutes or until the cheese melts.

I got this recipe from my ex-wife's mother. People absolutely beg her to make this for family dinners and potlucks. It's so simple, she'll often just give them the recipe. The only thing bad about this recipe is there are never any leftovers. You can use as much or as little cheese as you like, but we like to cover the entire thing with a healthy layer of cheese.

- In 6-quart Instant Pot™ insert, place water. Place rack in insert. Poke potatoes all over with paring knife; place on rack. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 15 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure. Place potatoes on cutting board. Remove rack, and drain off cooking liquid. When cool enough to handle, peel potatoes and set aside.
