MOM'S (ALMOST) NO BAKE PINEAPPLE SQUARES

Mom's (Almost) No Bake Pineapple Squares image

My version of my Mom's Pineapple Squares -- almost no bake dessert that's perfect for Spring or Easter! Light and fluffy and full of crushed pineapple!

Provided by Ashley Fehr

Categories     Dessert

Time 25m

Number Of Ingredients 6

1/4 cup + 1/4 cup butter (divided)
1 1/4 cups graham cracker crumbs
1 cup + 2 tbsp powdered icing sugar (divided)
1-2 tablespoons reserved pineapple juice
1 cup heavy whipping cream (35%)
3/4 cup crushed pineapple (completely drained of juice)

Steps:

  • Preheat oven to 350 degrees and line an 8x8" pan with tin foil. Spray with non stick spray.
  • In a small bowl, melt ¼ cup butter. Stir in graham crumbs. Spread into prepared pan and bake for 8-10 minutes or until dry on top. Remove from the oven and cool completely.
  • Beat remaining ¼ cup butter and 1 cup powdered sugar with an electric mixer. Add 1-2 tablespoons pineapple juice until it comes together and is smooth (you don't want it too wet!). Spread onto cooled crust.
  • Beat cream with an electric mixer on high until soft peaks form. Add 2 tablespoons sugar and continue beating until stiff peaks form. Fold in crushed pineapple and spread onto filling in the crust.
  • Refrigerate for 3-4 hours until chilled and set. Cut into 12-16 bars.

PINEAPPLE SQUARES

Pineapple Squares image

Pineapple Squares - an old time, no-bake Newfoundland Cookie Bar recipe thats been updated with a bit of a reinvention and a new flavour addition.

Provided by Barry C. Parsons

Categories     Cookies/Dessert

Time 30m

Number Of Ingredients 11

1 2/3 cups graham crumbs
1/3 cup melted butter
3 Tbsp sugar
1/2 cup cream cheese
1/2 cup butter
5 to 6 cups icing sugar
1 tsp vanilla extract
3/4 cup finely diced fresh golden pineapple, well draine
1 cup whipping cream
1 tsp vanilla extract
3 tbsp icing sugar

Steps:

  • Measure the graham crumbs into a small bowl and make a small well in the centre.
  • Pour the sugar into the well, then pour the melted butter onto the sugar.
  • Let this stand for a couple of minutes to let the butter seep into the sugar. Then stir well to combine all ingredients together. The purpose of this step is to get a good contact between the butter and sugar.
  • Press the crumb mixture firmly into the bottom of a 9x9 inch baking pan that has been lightly greased and lined with parchment paper. (For a thinner version with less frosting at the centre you can use a 9x13 inch pan and get 50% more squares too. See NOTE for adjustments below.)
  • Cream together the butter and cream cheese until smooth.
  • Beat in the vanilla extract.
  • Slowly start adding the icing sugar a little at a time.
  • Beat until smooth and the consistency of the frosting is very stiff. Usually you would consider it too stiff to frost a cake at this stage.
  • Fold in the finely diced pineapple. The pineapple should be drained of all juice. I actually let mine sit in a colander lined with paper towels.
  • Spread evenly over the prepared base and chill for several hours or overnight.
  • Beat together the 3 ingredients until stiff peaks form. Spread evenly over the chilled pineapple frosting layer.
  • Store in the fridge until ready to cut and serve.

NO-CHURN PINEAPPLE ICE CREAM SLICES

No-Churn Pineapple Ice Cream Slices image

What fun to slice into a whole fresh pineapple and discover homemade pineapple ice cream inside! Not to mention the ice cream is "no-churn," meaning no ice cream machine required. Serve as is or dip the edges in toasted coconut for a sweet, summery treat.

Provided by Food Network Kitchen

Categories     dessert

Time 6h30m

Yield 10 servings (about 20 ice cream slices)

Number Of Ingredients 6

One 4-pound pineapple
One 7.4-ounce can sweetened condensed coconut milk
1/2 teaspoon pure vanilla extract
Pinch kosher salt
1 cup heavy cream, chilled
3/4 cup sweetened shredded coconut, toasted, optional (see Cook's Note)

Steps:

  • Cut off the top of the pineapple and discard. Use a pineapple corer to remove the flesh and core of the pineapple, making sure to go all the way to the bottom without piercing any holes; discard the core and save the flesh. Pat dry the inside of the hollowed-out pineapple with a couple of paper towels (this will ensure that the ice cream adheres), then place in the freezer to chill while you make the ice cream.
  • Transfer half of the pineapple flesh (about 9 ounces) to a blender; save the other half for another use. Add the sweetened condensed coconut milk, vanilla and salt to the blender, then blend on high, scraping down the sides of the carafe with a rubber spatula as needed, until the mixture is very smooth, about 1 minute.
  • Beat the heavy cream in a large bowl with an electric mixer on medium-high speed until it's fluffy and holds stiff peaks, 1 to 2 minutes. Gently fold half of the pineapple mixture into the whipped cream with a rubber spatula until combined. Fold in the remaining pineapple mixture until all is combined and no streaks remain.
  • Spoon the pineapple mixture into the chilled, hollowed out pineapple. Cover loosely with plastic wrap and freeze until solid, at least 6 hours and up to overnight.
  • If frozen overnight, let the pineapple thaw in the refrigerator for 15 minutes before serving. To serve, use a sharp long chef's knife to cut the pineapple lengthwise into quarters. Trim off the bottom, then slice each quarter crosswise into 1-inch-thick wedges (about 20 slices total). Serve immediately as is. Alternatively, dip the edges of each pineapple slice in the toasted coconut, then serve.

PINEAPPLE SQUARES

Pineapple Squares image

My grandmother always kept this cake in the freezer for unexpected company. A nice change of dessert from the usual bar or square recipe. Garnish with icing sugar sprinkled over the top if desired.

Provided by the4taals

Categories     Desserts     Fruit Dessert Recipes     Pineapple Dessert Recipes

Time 1h25m

Yield 24

Number Of Ingredients 16

2 cups all-purpose flour
½ cup white sugar
2 teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter
¼ cup milk
1 egg
1 teaspoon vanilla extract
¼ cup butter
2 (8 ounce) cans crushed pineapple, drained and juice reserved
2 tablespoons white sugar
¼ cup cornstarch
½ cup all-purpose flour
¼ cup butter
1 teaspoon vanilla extract
⅓ cup white sugar

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Cut in butter using a pastry cutter or your hands until coarse crumbs form.
  • Whisk milk, egg, and vanilla extract together in a small bowl. Add to flour mixture and knead until just combined, adding a little more flour if too wet or a little more milk if too dry. Divide the dough into thirds; 2/3 will be for the bottom, save 1/3 for the top.
  • Roll 2/3 the dough out onto a lightly floured surface into an 11x15-inch rectangle. Place dough into the bottom of a 9x13-inch baking pan, making sure it comes at least halfway up the sides.
  • Combine pineapple and sugar in a small saucepan and bring to a boil over medium heat, about 5 minutes. Meanwhile, pour reserved pineapple juice into a bowl and add cornstarch; stir until dissolved. Add to the saucepan and stir until thickened, about 5 minutes more. Remove from heat and let filling cool in the refrigerator, about 15 minutes.
  • Scrape filling onto the bottom dough in the baking pan and smooth out.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll remaining 1/3 dough out onto a lightly floured surface into a 9x13-inch rectangle. Roll the dough onto the rolling pin and unroll on top of the pineapple filling, making sure edges of the dough reach the edges of the pan.
  • Combine flour and sugar in a small bowl. Add vanilla extract and cut in butter until coarse crumbs form. Sprinkle streusel topping over dough.
  • Bake in the preheated oven for 45 minutes. Remove from oven and let cool on a rack. Cut into 24 squares.

PINEAPPLE CREAM SQUARES (NO BAKE)

Pineapple Cream Squares (No Bake) image

I have had this recipe for years, it is still requested by my family to make, and still a favorite. No baking makes this a perfect dessert for hot summer days. I most always top it with Cool Whip topping, but that is optional. Make certain to chill this for a minimum of 3 hours (more time is even better) I most always prepare this in the morning to serve later in the day. I always prepare two (8-inch) pans of this dessert as one pan goes way too fast LOL! This is the most delicious dessert!
