Turkey and Sweet Potato Curry image

This curry is delicious on its own or served over cooked rice, preferably basmati or other long-grain white rice. Curry powder and fresh ginger bring warm, spicy flavor to each bowl.

2 shallots, coarsely chopped
3-inch piece fresh ginger, peeled and sliced
4 garlic cloves
1 tablespoon curry powder
2 tablespoons vegetable oil
2 medium sweet potatoes, peeled and cut into 3/4-inch cubes
1 package (10 ounces) frozen cut okra, thawed
1 1/2 pounds turkey cutlets, cut into 1-inch strips
Coarse salt and ground pepper

Steps:

  • In a blender, combine shallots, ginger, garlic, curry powder, and 1/3 cup water; blend until smooth.
  • Heat oil in a Dutch oven (or other 5-quart pot) over medium-high heat. Add shallot mixture; cook, stirring frequently, until starting to darken, 3 to 5 minutes. Add sweet potatoes; cook, stirring frequently, until starting to brown, 2 to 3 minutes.
  • Add okra and 3 cups water. Bring to a boil; reduce heat to medium, and simmer until potatoes are tender, 8 to 10 minutes. Stir in turkey, and cook until just opaque throughout, 3 to 4 minutes. Season with salt and pepper.

a lightly spiced, delicately floured curry that can use up your left overs or cheap cuts you find in your supermarkey

Number Of Ingredients 15

4 x Turkey Steaks (or any left overs)
3 or 4 medium sized sweet potatos
2 medium white onions
1 1/2 tsp ground cumin
1 1/2 tsp ground corriander
1 tsp ground turmeric
5 or 6 Green cardamon pods split and seeds removed
4 cloves
1/2 tsp ground cinnamon
1 tin of chopped tomatos
Small bunch of fresh corriander to garnish
25ml Veg oil
1 good knob of butter
1 large thumb of fresh ginger
3 cloves of garlic

Steps:

  • In a pestle and mortar grind the cloves and cardamon pod seeds, then finely slice the onions. Place a large sauce pan on a medium heat and add the oil and butter. When the butter begins to foam and all the ground spices including the clove and cardamon mix. When the aroma of the spices start to release add the onions and gently fry until soft and brown, this may take 20 - 30 mins so be patient and don't let them stick. If the mix starts to look a little dry add a little water.
  • Whilst the onions are cooking finely grate the garlic and ginger and set aside in a bowl, peel and chop the sweet potatos into chunks and put aside in a bowl with enough water just to cover them, also chop the turkey steak into bite size pieces.
  • When the onions are nice and soft and a lovely dark brown colour and the tin of tomatos and the grated ginger and garlic mix. Gently cook this until all the juice from the tomatos evaporates.
  • Now add the sweet potatos with the water from the bowl, bring this to the boil and simmer for 10 mins then add the turkey. Simmer again for another 10-15 mins until you have a nice consistancy.
  • simply serve with a little basmati rice, warm chapatis and garnish with fresh corriander. This, as with all currys, is better the day after. Enjoy.

3 inches piece fresh ginger, peeled and sliced

1 tablespoon curry powder
1/3 cup water

2 medium sweet potatoes, peeled and cut in 3/4-inch cubes
10 ounces frozen cut okra, thawed
3 cups water
1 1/2 lbs turkey cutlets, cut in 1-inch strips
salt and pepper, to taste

Steps:

  • Combine the shallots, ginger, garlic, curry powder and 1/3 c water in a blender; blend until smooth.
  • On medium high heat, heat the oil in a Dutch oven.
  • Pour in the shallot mixture and, stirring frequently, cook about 3-5 minutes or until the mixture starts to darken.
  • Add in the potatoes, continuing to stir frequently.
  • Cook 2-3 minutes, or until the potatoes start to brown.
  • Add the okra and 3c water; bring to a boil.
  • Reduce the heat to medium and simmer for 8-10 minutes, or until the potatoes are tender.
  • Add in the turkey and cook 3-4 minutes more (the turkey should be opaque throughout when done).
  • Season with salt and freshly ground pepper.

2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/3 cup evaporated milk
1/4 cup Swanson® Chicken Stock
1 small onion, minced (about 1/4 cup)
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
3 cups cubed cooked turkey
3 tablespoons water
1/4 cup chopped walnuts (optional)
Chopped fresh parsley
2 cups cooked, mashed sweet potatoes

Steps:

  • Stir the sweet potatoes, brown sugar, cinnamon, nutmeg and milk in a medium bowl. Spoon the sweet potato mixture around the inside edge of a 10-inch round casserole, forming a ring.
  • Heat the stock and onion in a 10-inch skillet over medium-high heat to a boil. Reduce the heat to low. Cook until the onion is tender, stirring occasionally. Stir in the soup, turkey and water. Cook until the mixture is hot and bubbling. Spoon the turkey mixture into the center of the sweet potato ring.
  • Bake at 350 degrees F for 30 minutes or until the turkey mixture is hot and bubbling. Sprinkle with the walnuts and parsley, if desired.
  • You can substitute chicken for the turkey.

This recipe was somewhat inspired by Banriona's Recipe #408979, which I thought was a great Americanized twist on a classic Lebanese recipe. In the same vein, this is like a flavorful Indian curry crossed with a traditional stew. No rice or naan needed, as it's very filling. Perfect for a cold winter night!

2 tablespoons ghee or 2 tablespoons oil
2 small onions, chopped
4 serrano peppers, chopped
3 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon ground turmeric
1 teaspoon cinnamon
2 teaspoons ground cumin
1 teaspoon ground cardamom
1 teaspoon chili powder
2 tablespoons ginger, peeled & shredded
1 lb lean ground turkey
2 1/2 cups sweet potatoes, peeled & diced into bite-size pieces
1 (14 1/2 ounce) can coconut milk (I use the light kind)
1/2-1 cup water
1 tablespoon tomato paste
1 tablespoon palm sugar or 1 tablespoon brown sugar
5 ounces frozen peas
1/2-1 teaspoon garam masala (optional)

Steps:

  • In a large saucepan, heat the ghee/oil over medium-high heat. Saute the onion, pepper and garlic for 3-5 minutes, or until the onion has softened.
  • Add the salt, turmeric, cinnamon, cumin, cardamom, chili powder, & ginger and combine well. Saute for 1 minute.
  • Add the ground turkey & stir well. Cook until meat is browned (about 3-5 minutes).
  • Add the sweet potato, coconut milk, 1/2 cup water, tomato paste and sugar. Stir well & bring to a boil, then lower heat & simmer for 20 minutes, or until the sweet potatoes are cooked through. Add the other 1/2 cup water if too much liquid gets cooked off to your liking.
  • Add the peas and garam masala, and cook just a bit more until the peas are warm. Add salt & pepper if desired; serve.

1 tbsp sunflower oil
1 large onion, thickly sliced
1 green pepper, deseeded and chopped
2 tbsp curry paste (or gluten-free alternative)
2 garlic cloves, crushed
400g can chopped tomatoes
300g leftover turkey, diced
300g leftover cooked potato (either boiled or roast), diced
2 tbsp mango chutney
small pack coriander, roughly chopped
rice or naan bread, to serve

Steps:

  • Heat the oil in a large pan over a fairly high heat. Cook the onion and pepper for 3-4 mins until starting to soften and brown slightly. Stir in the curry paste and garlic, then cook for another 1-2 mins. Add the chopped tomatoes and 150ml water. Bring to the boil and bubble for 5 mins.
  • Turn the heat down, stir in the turkey and potatoes, and cook for another 2-3 mins, then season and add the mango chutney. Scatter with coriander and serve with rice or naan.

1 medium onion, chopped
1 shallot, finely chopped
3 garlic cloves, minced
1/4 cup tomato paste
1 medium sweet potato, peeled and cubed
1 cup chicken broth
2 teaspoons smoked paprika
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups chopped fresh kale
Dash crushed red pepper flakes
1 medium ripe avocado, peeled and sliced
Minced fresh mint, optional

Steps:

  • In a large skillet, cook turkey, onion, shallot and garlic over medium heat until turkey is no longer pink and vegetables are tender, 8-10 minutes, breaking up turkey into crumbles; drain. Add tomato paste; cook and stir 1 minute longer., Add sweet potato, broth, smoked paprika, salt and pepper. Bring to a boil; reduce heat. Simmer, covered, until sweet potatoes are tender, about 10 minutes, stirring occasionally. Add kale and red pepper flakes; cook and stir until kale is wilted, about 2 minutes. Serve with avocado and if desired, mint. Freeze option: Freeze cooled mixture in freezer containers. To use, partially thaw in refrigerator overnight.
