Pineapple dream is one of those perfect potluck desserts. Cream cheese, pineapple, whipped cream and graham crackers, yum!

2 1/2 cups graham crumbs (2 sleeves)
1/2 cup unsalted butter
2 cups powdered sugar (sifted)
1/2 cup unsalted butter (softened)
4 oz cream cheese (softened)
8 oz Cool Whip (fat-free)
20 oz crushed pineapple (drained well)

Steps:

  • Preheat oven to 300 F.
  • Melt butter in the microwave and allow to cool. Combine the crumbs and butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×9 square pan and bake for 8-10 minutes. Place on wire rack to cool.
  • Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until incorporated. Turn up and beat well for a minute or so. Add a heaping tablespoon of the drained pineapple and stir in with a rubber spatula. Spread the cream cheese and pineapple mixture over the crust.
  • Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

  • In a large bowl, mix cream cheese and sugar together. Stir in 1 can of pineapple and whipped topping to cream cheese mixture. Mix until smooth.

25 g coconut flakes (unsweetened, not toasted)

125 g castor sugar
125 g pineapple filling ((see the ingredients below))
20 g plain flour
½ tsp vanilla essence
2 eggs
120 g heavy cream
⅛ tsp salt
½ tsp lemon juice
275 g pineapple chunks
60 ml water ((or pineapple syrup in using canned pineapple))
100 g brown sugar
2 tsp lemon juice
½ tbsp cornstarch ((mix with 1 tbsp water))
Whipped cream
Cubed pineapples
Pineapple filling

Steps:

  • Preheat oven to 160°Celsius.

1 1/3 cups graham cracker crumbs
1/4 cup butter, melted*
2 tablespoons sugar
1 cup sugar
4 (8 ounce) packages cream cheese, softened
4 eggs
1 cup sour cream
1 cup sweetened flaked coconut
1 (20 ounce) can crushed pineapple with juice, well-drained
1/2 cup sweetened flaked coconut, toasted
1 teaspoon freshly grated orange rind

Steps:

  • Heat oven to 325°F
  • Combine all crust ingredients in small bowl. Press crumb mixture evenly onto bottom of ungreased 9-inch springform pan. Bake 10 minutes. Cool completely.
  • Combine 1 cup sugar and cream cheese in large bowl. Beat at medium speed, scraping bowl often, until creamy (3 to 4 minutes).
  • Add eggs one at a time and beat well after each addition (1 minute).
  • Add sour cream, 1 cup coconut and drained pineapple. Continue beating, scraping bowl often, until well mixed (1 minute).
  • Spoon cream cheese mixture into prepared crust.
  • Bake for 70 to 90 minutes or until set 2 inches from edge of pan.
  • Sprinkle top with 1/4 cup toasted coconut.
  • Turn off oven; leave cheesecake in oven 2 hours.
  • Loosen sides of cheesecake from pan by running knife around inside of pan. Cover; refrigerate 8 hours or overnight.
  • Sprinkle with remaining toasted coconut and orange peel, enjoy!

2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1 can (20 ounces) crushed pineapple, drained
1 carton (8 ounces) frozen whipped topping, thawed
2 packages (3 ounces each) ladyfingers (about 48)
1 pint fresh strawberries, sliced

Steps:

  • In a large bowl, beat the cream cheese and sugar until smooth. Stir in pineapple. Fold in whipped topping. , Place ladyfingers around the sides and on the bottom of a greased 9-in. springform pan. Pour filling into pan. Cover and refrigerate for 8 hours or overnight. Carefully remove sides of pan. Top with strawberries.
