- Preheat oven to 325 degrees F. Spray 2 donut pans with cooking spray; set aside.
- In the bowl of a stand mixer fitted with the whisk attachment, combine yellow cake mix, eggs, pineapple juice, coconut milk and vegetable oil until batter is thick and smooth, about 2 minutes on medium speed.
- Spoon or pipe batter into prepared pan, filling only about 1/2 way up the sides. Use an offset spatula or spoon to spread evenly, then bake for 12 minutes until donut cakes are set. Let cool 5 minutes on a wire rack, then invert cakes on rack to cool completely.
- Melt the yellow and light cocoa candy melts according to instructions. Dip each donut into the melted yellow chocolate, dipping them deep enough to just fill the center. Remove and place on a wire rack set over a baking sheet. Let set completely.
- Transfer melted light cocoa candy melts to a small squeeze bottle or pastry bag fitted with a small tip. Pipe crossing lines onto each donut, about 4 going in each direction. Top with pineapple top cutouts.

- Heat oil to 375.
- Lay pineapple slices on platter lined with paper towels to soak up any excess juice.
- In a shallow bowl, whisk together pancake mix, water and vanilla. Batter will be slightly lumpy.
- Coat pineapple slices in batter.
- Fry in hot oil 1-2 minutes per side until golden brown.
- Place donuts on another plate covered with paper towels to drain. Sprinkle with powdered sugar.

- Put 150g water and all the dough ingredients, apart from the butter, into the bowl of a mixer with a beater paddle. Mix on a medium speed for 8 mins or until the dough starts coming away from the sides and forms a ball. Turn off the mixer and let the dough rest for 1 min.
- Start the mixer up again on a medium speed and slowly add the butter to the dough - about 25g at a time. Once it's all incorporated, mix on high speed for 5 mins until the dough is glossy, smooth and very elastic when pulled.
- Cover the bowl with cling film or a clean tea towel and leave to prove until it's doubled in size. Knock back the dough in the bowl briefly, then re-cover and put in the fridge to chill overnight.
- The next day, take the dough out of the fridge and cut it into 50g pieces (you should get about 20).
- Roll the dough pieces into smooth, tight buns and place them on a floured baking tray, leaving plenty of room between them, as you don't want them to stick together while they prove.
- Cover loosely with cling film and leave for 4 hrs or until doubled in size. Fill your deep-fat fryer or heavy-based saucepan halfway with oil. Heat the oil to 180C. Read our guide on how to deep-fry safely for more essential information.
- When the oil is heated, carefully slide the doughnuts from the tray using a floured pastry scraper. Taking care not to deflate them, put them into the oil. Do 2-3 per batch, depending on the size of your fryer or pan.
- Fry for 2 mins each side until golden brown - they puff up and float, so you may need to gently push them down after about 1 min to help them colour evenly.
- Remove the doughnuts from the fryer and place them on kitchen paper.
- Toss the doughnuts in a bowl of caster sugar while still warm. Repeat the steps until all the doughnuts are fried, but keep checking the oil temperature is correct - if it's too high, they will burn and be raw in the middle; if it's too low, the oil will be absorbed into the doughnuts and they will become greasy. Set aside to cool before filling.
- To fill the doughnuts, make a hole with a small knife in the crease of each one, anywhere around the white line between the fried top and bottom.
- Fill a piping bag with jam and pipe into the doughnut until nicely swollen - about 1 tbsp per doughnut. After filling, the doughnuts are best eaten straight away, but will keep in an airtight tin.

- 1. Preheat the oven to 400 degrees F. Spray a baking sheet with non stick cooking spray - or use parchment paper. Mix glaze if using.
- 2. Beat the egg and water in a small bowl with a fork; Set aside. Unfold 1 pastry sheet on a lightly floured surface. Using a round cutter, cut the pastry sheet into 9 (3 inch) circles. Repeat with the remaining pastry sheet. (Don't waste the scraps - re roll them and cut into as many circles as possible) Place half of the pastry circles onto a parchment lined or sprayed baking sheet. Top each with a small amount of cut up fruit and top fruit with about 1/4 teaspoon) sugar.
- 3. Brush the edges of the pastry circles with the egg wash. Place the remaining pastry circles over the filling. Press the edges firmly to seal and crimp edges with a fork.
- 4. Brush with more egg wash. Using a sharp tip of a knife cut a couple small slit in the top to release steam.
- 5. Bake for 15 minutes or until the pastries are golden brown on the top and the bottoms. Let the pastries cool slightly and drizzle the lemon glaze, or sprinkle with confectioners sugar.
- 6. Enjoy!

- Reserve 1 1/2 tablespoons pineapple syrup for glaze.
- To pineapple, add egg, biscuit mix, sugar and nutmeg; stir into stiff dough.
- Heat oil to 375 degrees F.
- Drop dough by teaspoonsful into hot oil; fry to golden brown, about 3 minutes, turning once.
- Remove with slotted spoon; drain on paper towels.
- Dip some of doughnuts into pineapple glaze, others in confectioners' sugar or cinnamon sugar.
- Serve warm.
- For glaze, combine confectioners' sugar and pineapple syrup; mix until smooth.

- Combine the apples with the sugar, cider, vanilla, cinnamon and salt. Set aside to macerate for at least 1 hour and as long as 3 hours. Drain the apples, saving the juice. Combine 1/4 cup of the juice with the corn starch. Set Aside.
- Put the apples and the rest of the juice in a large saucepan. Cook over medium-high until the juices begin to boil. Reduce the heat to medium-low and continue cooking until the apples are crisp-tender, stirring often. The apples should still hold their shape. The exact time will depend on the type of apple, estimate 10 minutes.
- Add the corn starch mixture to the apples. Increase the heat to medium-high and return to a boil, stirring constantly. Cook until the juices are slightly thickened and become translucent. Transfer the apple filling to a container and cool to room temperature. Chill until ready to use. The filling can be made 2-3 days ahead.
- In a large saucepan, bring the apple cider to a boil. Reduce the heat and simmer until the 4 cups of cider are reduced to 1 cup. Transfer the reduced cider to a bowl and add the butter to the cider so that it melts. Set the bowl aside until the reduced cider is cooled to about 110°F (a little warmer than body temp).
