3/4 cup sugar
1/2 cup butter, softened
1 (8 ounce) can crushed pineapple, well drained
1 teaspoon vanilla
1 3/4 cups all-purpose flour
1 teaspoon baking powder
2/3 cup chopped macadamia nuts
3/4 cup sweetened coconut

Steps:

  • Heat oven to 350°F.
  • Combine sugar and butter in a large bowl. Beat at medium speed until creamy.
  • Add drained pineapple and vanilla; continue beating until well mixed.
  • Reduce mixer speed to low; add flour and baking powder. Beat until well mixed.
  • By hand, stir in nuts and 1/4 cup of the coconut.
  • Place remaining coconut in a small bowl.
  • Shape dough into 1-inch balls; dip tops in coconut and place onto ungreased cookie sheets.
  • Bake 12-15 minutes or until set. Let cool for 2 minutes before removing from cookie sheets.

3 cups all-purpose flour
1/2 teaspoon baking soda
3/4 cup dark brown sugar, firmly packed
3/4 cup white sugar
1 cup salted butter, softened
1 large egg
2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple or 1 cup fresh finely chopped pineapple, well drained
1 tablespoon pineapple juice
1/4 cup sweetened flaked coconut (optional)

Steps:

  • Preheat oven to 300 degrees F.
  • In medium bowl, combine flour and baking soda.
  • Mix well with a wire whisk; set aside.
  • In large bowl with an electric mixer blend sugars.
  • Add butter and mix to form a grainy paste, scraping down the sides of the bowl.
  • Add egg, vanilla, crushed pineapple, and pineapple juice and beat on medium speed until smooth.
  • Add the flour mixture and blend at low speed until just combined.
  • Do Not Overmix!
  • Drop by rounded Tablespoonfuls onto ungreased baking sheets, 2-inches apart.
  • Sprinkle lightly with shredded coconut, if desired.
  • Bake 22 to 24 minutes or until cookies begin to turn lightly brown at edges.
  • Transfer immediately to cool flat surface with spatula.

One 2-inch piece fresh ginger, thinly sliced
2 cups pineapple juice
1 liter seltzer
Ice
6 ounces spiced rum, optional
4 pineapple chucks

Steps:

  • In a small saucepan over medium heat, stir together the sugar with 1/2 cup water and the ginger slices. Bring to a simmer to dissolve the sugar, then remove from the heat and allow to cool to room temperature.
  • In a large pitcher, stir together the ginger simple syrup, pineapple juice and seltzer. Pour into ice-filled glasses and add 1 1/2 ounces of rum to each glass, if using. Garnish each with a pineapple chunk.

¾ cup chopped pecans
½ cup sweetened flaked coconut
1 ¼ cups rolled oats
1 cup brown sugar
½ cup white sugar
½ cup unsalted butter, melted
½ cup crushed pineapple, well drained
1 large egg
2 teaspoons vanilla extract
½ teaspoon almond extract
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Spread pecans and coconut onto a baking sheet.
  • Toast in the preheated oven until coconut is very light golden brown and pecans become fragrant, 5 to 7 minutes. Remove from the oven and let cool, about 10 minutes. Leave the oven on.
  • Pulse oats in a blender or food processor until slightly ground.

2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt

1/2 cup pineapple preserves
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 375°. Combine flour, sugar, baking powder and salt; cut in butter until well blended. In a small bowl, whisk egg with water. Gradually add to flour mixture; stir to form a soft dough., Turn onto a lightly floured surface; divide into 2 portions. Roll each half into a 12x6-in. rectangle. Spread 1/4 cup preserves down the center of each rectangle. Starting at a long side, fold dough over filling; fold other side over top. Pinch to seal seams and edges. Place seam side down on parchment-lined baking sheets., Bake until lightly browned, 20-25 minutes. Cut each rectangle diagonally into 1-in. strips. Remove to wire racks to cool completely. 1 cup Betty Crocker™ macadamia nuts, chopped
1 can (14 oz) sweetened condensed milk (not evaporated)

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press dough in bottom of pan.
  • Bake 15 minutes. Sprinkle with baking chips, pineapple, coconut and nuts. Drizzle evenly with sweetened condensed milk.
