This nostalgic stuffing is almost like dessert that can be enjoyed during the meal (and after if you want). We've added a little vanilla here since it pairs well with the pineapple and is especially great with ham, balancing the sweet with the savory.

- Preheat the oven to 350 degrees F. Spray an 11-by-7-inch baking dish with cooking spray.
- Arrange the bread cubes in an even layer on a sheet pan. Bake until the bread is just beginning to dry but not browned, about 5 minutes. Set aside.
- Beat the butter and sugars in a large bowl with an electric mixer on medium speed until fluffy, about 2 minutes. Add the eggs and mix on low speed until well incorporated. Add the vanilla, can of pineapple with the juices and 1/2 teaspoon salt and mix until well combined. Fold in the cooled bread cubes.
- Pour into the prepared pan. Bake until deep golden brown and bubbly, 45 to 50 minutes.

- Preheat the oven to 350 degrees F and lightly mist a 1.5-quart baking dish with non-stick spray.
- Place the butter, sugar, and salt in a large bowl and cream together with an electric mixer until very pale and fluffy (about 5 minutes on high speed).
- Whip in the eggs, one at a time, allowing each one to fully incorporate before adding the next.
- Scrape the bottom and sides of the bowl with a silicone spatula, and fold in the pineapple and it's juice.
- Tear the bread into 1-inch pieces and fold it into the pineapple mixture.
- Transfer the mixture to the prepared baking dish and bake for 1 hour, or until bubbly and beginning to turn golden.
- Serve warm.

- Preheat the oven to 350 degrees F.
- Drain the pineapple juice into a liquid measuring cup; you should have 1 1/2 cups. Whisk in the sugar and cornstarch until the sugar dissolves. Spread the pineapple chunks in the bottom of a 13-by-9-inch baking dish and pour over the pineapple juice mixture, stirring to coat the chunks evenly.
- In a large bowl, stir together the crushed crackers, cheese and butter, then sprinkle the topping evenly over the pineapple. HOLIDAY PINEAPPLE STUFFING BAKE
This is easy to put together and makes wonderful side dish to ham or turkey, this may be doubled and baked in a 13 x 9-inch pan, do not make the mistake of using pineapple tidbits it will not work for this recipe use only crushed --- if using unsalted butter or margarine add in a pinch of salt if using salted then omit.

- Preheat the oven to 350°F. Grease a medium-sized casserole dish with butter. In a large bowl, stir together the sugar and flour and a dash of salt. Add the cheese and stir it into the sugar/flour mix. Add the drained pineapple chunks and stir until well-combined. Pour the mixture into the prepared casserole dish. In another bowl, combine the cracker crumbs, melted butter, and the 6 tablespoons of pineapple juice that you kept when you drained the pineapples. Stir together.
