"This side dish is easy to prepare, fun to serve and delicious to eat," states North Canton, Ohio's Donna Gonda. "It's a staple at my Thanksgiving dinner. I pop it in the oven and let it cook while I'm carving the turkey."

2 cups mashed canned or cooked sweet potatoes (prepared without milk or butter)
1/2 cup packed brown sugar
3 tablespoons butter, melted
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 can (20 ounces) pineapple slices, drained
10 miniature marshmallows

Steps:

  • In a large bowl, combine the sweet potatoes, brown sugar, butter, salt, cinnamon and nutmeg. Place pineapple slices in a greased 13-in. x 9-in. baking dish. Top each slice with 1/4 cup sweet potato mixture and a marshmallow. Bake, uncovered, at 400° for 10-15 minutes or until heated through.

  • Heat oven to 375°F. Scrub potatoes; prick all over with fork. Place in shallow baking pan or pie pan (do not use glass). Bake 55 to 65 minutes or until tender.
  • Set oven control to broil. Cut potatoes lengthwise in half. Mash cut sides slightly with fork. Spoon pineapple over cut sides of potatoes. Top with sunflower nuts and brown sugar.
  • Broil with tops 4 to 6 inches from heat 2 to 3 minutes or until brown sugar is bubbly.

  • In a large soup pot, boil sweet potatoes whole until soft. Remove skins, and dice into bite-sized pieces.

2 small sweet potatoes
1/2 cup canned crushed pineapple
4-1/2 teaspoons brown sugar
1 tablespoon butter
1/8 teaspoon salt
1 tablespoon dried cranberries
2 tablespoons chopped pecans, divided

Steps:

  • Wrap potatoes in foil and bake at 400° for 45-50 minutes or until tender. Let stand until cool enough to handle. Cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell., In a small bowl, mash the pulp; add the pineapple, brown sugar, butter and salt. Stir in cranberries and 1 tablespoon pecans. Spoon into potato shells. Sprinkle with remaining pecans. Place on a baking sheet. Bake at 400° for 8-12 minutes or until heated through.

1 (20 ounce) can crushed pineapple
1 cup packed brown sugar
1 pinch ground cinnamon
1 pinch ground ginger
1 pinch ground nutmeg
1 pinch ground cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 9x13 inch baking dish.
  • Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl to cool. Peel and quarter.
  • In a sauce pan, combine pineapple, sugar, cinnamon, ginger, nutmeg and cloves. Bring to boil and reduce heat.

3 lbs sweet potatoes (about 6 medium-large)
2 (8 ounce) cans crushed pineapple with juice, undrained
1/4 teaspoon ground cinnamon
4 teaspoons butter-flavored sprinkles
1/3 cup chopped pecans or 1/3 cup golden raisin
1 3/4 cups miniature marshmallows

Steps:

  • To cook the sweet potatoes in a conventional oven, bake at 400 degrees for about 45 minutes or until tender.
  • To cook in a microwave oven, prick each potato in several places with a fork, and microwave at high power for about 15 minutes, or until tender.
  • Set aside to cool; then peel and cut into bite-sized pieces.
  • Place the potato pieces in a large bowl and toss with all the remaining ingredients except the marshmallows.
  • Coat a 2-1/2 qt.
  • casserole dish with Pam, and place the sweet potato mixture in the dish.
  • Top with the marshmallows.
  • Bake at 350 degrees for 35-40 minutes, or until the sweet potato mixture is bubbly and the top is lightly browned.
  • If the top starts to brown too quickly, loosely cover the dish with aluminum foil during the last 10 minutes of baking.
