Bircher-Style Overnight Muesli with Apples image

This soaked muesli combines apples with apple juice for a fruit and grain breakfast packed with flavor.

1/2 cup Nature Valley™ toasted oats muesli original
1/2 cup apple juice
1/2 crisp sweet tart apple like Braeburn or Honey Crisp, grated (about 1/2 cup)
1 teaspoon real maple syrup

Steps:

  • In small bowl, mix muesli and apple juice. Cover and refrigerate at least 5 hours but no longer than 10 hours.
  • Top with freshly grated apple, and drizzle with maple syrup just before serving.

2/3 cup plain low-fat yogurt (not Greek)
2/3 cup low-fat milk
1 teaspoon pure vanilla extract
Pinch of salt
1 1/2 cups rolled oats (not quick-cooking)
1/4 cup plus 1 tablespoon honey, divided
2/3 cup fresh orange juice (from 2 oranges)
2 medium Granny Smith apples
4 1/2 ounces natural skin-on almonds, chopped (1 cup)
2 cups finely chopped plums, strawberries, and pears
8 ounces mixed sliced fruit, such as oranges, strawberries, plums, raspberries, and blackberries, for garnish

Steps:

  • Whisk together yogurt, milk, vanilla, and salt until smooth. Stir in oats. Cover, and refrigerate at least 3 hours and up to overnight.
  • Stir together 1/4 cup honey and the orange juice in a medium bowl. Peel apples, and grate 1 1/2 cups on large holes of a box grater. Stir apples and almonds into juice mixture. Stir apple mixture into soaked oats until well combined, and gently mix in chopped fruit. Refrigerate 30 minutes, then divide among 8 bowls. Divide sliced fruit among bowls, and drizzle with honey.

Not overpoweringly sweet, this breakfast has tasty fall flavors. When pink lady apples are available and at their best, use them for a wonderful flavor in this muesli.

1/3-1/2 cup rolled oats
1/2-2/3 cup vanilla-flavored soymilk (see my recipe if you don't have any on hand)
1/4 teaspoon cinnamon
1 dash nutmeg
1 apple, pink lady if you can find 'em
2 -3 tablespoons pecans, chopped
1 -2 tablespoon dried sweetened cranberries (optional)
soy yogurt (optional)

Steps:

  • The night before, mix the oats and spices together in a bowl, then add the soymilk.
  • Add the pecans too if you want to soften them a bit.
  • Cover and refrigerate overnight.
  • In the morning, grate 1/2 the apple (no need to peel) and stir it into the oats, along with pecans if you didn't add them yet.
  • Stir in yogurt if desired.
  • Dice the other half of the apple and dump it on top.
  • Add the cranberries if you want a sweeter muesli. You can either add them the night before, or soak for 2-3 minutes in hot water to cover,drain and sprinkle them on in the morning. (They'll make your muesli really pink!).
