SNOW SALAD
This is a refreshing dessert that is a hit with all adults and most kids too. :) My mom made this for me when I was growing up and was an absolute favorite of mine.

Steps:
- Soften cream cheese and drain pineapple.
- Combine cream cheese, pineapple, cherries, nuts and marshmallows; mix well.
- Add Cool Whip; mix well then chill.

- Mix together the cherry pie filling, condensed milk, oranges, pineapple, coconut, marshmallows and whipped topping.
- Chill for several hours and top with crushed pecans if desired.

PINK POTATO SALAD
Steps:
- Separately boil potatoes (25 min.), beets (30 min.), and carrots (15-20 min), until tender. Cool, peel and dice all of them to 1/4 inch.
- Chop the eggs and pickles into small dice. Mince celery and onion. Drain peas.
- Mix the potatoes, beets, carrots, celery, pickles, and onions very gently. Gently mix in eggs and peas. Then gently mix in mustard, mayo and sour cream. Add salt and pepper to taste.
- Refrigerate for about 2 hours before serving.

SNOW-WHITE SALAD
I love to collect recipes for all kinds of occasions. This sweet gelatin salad is one I often make for Christmas, decorating it with halved red candied cherries for "holly berries" and green candied cherries cut into "leaves".

- In a small bowl, combine gelatin and water; set aside. In a saucepan, bring pineapple and sugar to a boil. Remove from the heat; stir in gelatin mixture until completely dissolved. , In a large bowl, beat cream cheese until fluffy. Stir in marshmallow creme and pineapple mixture. Refrigerate for 30 minutes. , Prepare whipped topping according to package directions; fold into pineapple mixture. Pour into an ungreased 13-in. x 9-in. dish. Cover and refrigerate overnight. Decorate with cherries if desired.

SNOW PEA SALAD

Steps:
- Trim ends of snow peas and pull off strings. Stack about a dozen snow peas at a time on a cutting board and use a sharp knife to cut them at an angle in thin julienne. Place in a bowl of ice water.
- In a small bowl, whisk together lemon oil, lemon juice and a teaspoon of salt, or to taste, and set aside.
- In a 12-inch skillet, heat extra-virgin olive oil over medium heat. Add pancetta and cook until fat is rendered. Do not allow pancetta to brown. Add onion and cook on low until soft and transparent. Remove from heat. Drain snow peas and add to skillet. Return to medium heat and cook, stirring, just enough to warm and slightly wilt snow peas, about 5 minutes. Remove from heat.
- Whisk lemon dressing and pour into skillet. Add mint and toss. Season with salt and pepper. Transfer to shallow bowls, scatter cheese on top and serve.

- Drain cherries, reserving 1/3 cup juice (save remaining juice for another use). Cut cherries in half; set aside. , In a bowl, beat cream cheese and reserved cherry juice until smooth. Fold in whipped cream. Fold in cherries, pineapple, fruit cocktail, peaches, bananas and marshmallows. Transfer to a serving bowl. Refrigerate for at least 1 hour.
