PARMESAN PINWHEELS
Fresh herbs and Parmesan cheese are rolled up in puff pastry, sliced and baked until golden. This easy technique makes appetizers at a moment's noticeand sweet variations make this foolproof recipe into chocolate or cinnamon treats as well.

Steps:
- Heat the oven to 375°F.
- Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14 x 11-inch rectangle. Sprinkle with the cheese and herbs. Starting at a short side, roll up like a jelly roll. Wrap the pastry roll with plastic wrap and freeze for 45 minutes or until firm.
- Cut the pastry roll into 75 (1/8-inch) slices. Place the slices, cut-side down, onto baking sheets.
- Bake for 10 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes.
- Chocolate Pinwheels: Substitute 4 ounces semi-sweet chocolate, melted, for the cheese and herbs.
- Cinnamon-Sugar Pinwheels: Substitute a mixture of 1/2 cup sugar and 2 teaspoons ground cinnamon for the cheese and herbs.
CRAB PUFF PASTRY PINWHEELS

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease 2 baking sheets or use parchment paper.
- Stir Monterey Jack cheese, Parmesan cheese, green onion, garlic, seasoned salt, paprika, and red pepper flakes together in a bowl. Fold in drained crabmeat.
- Unfold pastry sheet on a lightly floured surface. Brush with some of the beaten egg white. Top with crab mixture. Roll up like a jelly roll starting at the short side. Cut into 1/2-inch slices. Place slices cut-side down on the prepared baking sheets. Brush with remaining egg white.
- Bake in the preheated oven until golden, 15 to 20 minutes. Serve warm or at room temperature.

PIZZA PUFF PINWHEELS
Make the ideal supper treat for under 5s, with ready-made pasta sauce, a little ham, grated cheese and shop-bought puff pastry

- Preheat oven to 200C/180C fan/gas 6. Unroll the pastry onto a lightly floured surface and roll it out to 40 x 32cm. Spread a layer of pasta sauce over it, leaving a 1cm border around the edges. Arrange the ham evenly on top, then scatter the grated cheese over.
- Starting at one of the short ends, roll the pastry up as tightly as possible. Chill in the fridge for 10 minutes or so.
- Take a very sharp knife and cut the roll into 12 equal slices, laying them flat on 2 non-stick baking trays as you go. Brush each pinwheel lightly with beaten egg and sprinkle over the herbs. Bake for 12-15 minutes until puffed and golden. Leave to stand for 5-10 minutes before serving.

PESTO PUFF PASTRY PINWHEEL
With three main ingredients you can make this gorgeous giant puff pastry pinwheel in no time. Pesto and ricotta fill layers of puff pastry that are cut and twisted into a pinwheel which begs to be pulled apart!

- Preheat oven to 400 degrees F (200 degrees C). Line a baking tray with parchment paper and dust lightly with flour.
- Lay puff pastry on a flat work surface; cut a 12-inch circle from each sheet. Transfer 1 circle to the prepared baking sheet.
- Spread ricotta evenly over the pastry circle. Top with an even layer of pesto. Lay the second pastry circle on top. Set a small glass upside down in the middle of the circle.
- Cut the circle, away from the glass, into 4 equal quarters. Cut each quarter in half, then each eighth in half, to make 16 equal strips. Remove glass. Twist strips twice, two at a time, in the opposite direction. Pinch ends together. Repeat with remaining strips to make a pinwheel shape.
- Bake in the preheated oven until pastry is browned, 25 to 30 minutes.

- Roll out your pastry. If it's got parchment paper pre-rolled, leave it on that. If it's doesn't or you're rolling out your own, add a pinch of flour to a surface. Slice each rectangle in half.
- Add your toppings in this order, making sure you leave 1" gap at one of the ends to seal shut:Pesto: 2 heaped tbsp pesto, 3/4 cup/75g mozzarella, 1/4 cup/20g parmesan.Pizza: 2 heaped tbsp pizza sauce, 1cup/100g strong cheddar, 12 pepperoni slices, 2 tbsp peppers, few pinches of parmesan, few pinches of oregano.Prosciutto: 1 cup/100g mild cheddar, 4 slices prosciutto, few pinches of oregano.Marmite: 2 tsp marmite, 1 cup/100g mild cheddar.
- Carefully and quite tightly roll each rectangle up until the 1" gap. Brush with egg wash, then finish the roll. Pop in the freezer for 15mins to firm up. Take out and slice each log into 6 (approx 3/4" slices).
- Space out on an oiled sprayed tray or greased parchment paper (they will expand when they cook, you might need two trays) and brush with egg wash. Pop in the oven at 390F/200C for 15mins or until golden and crispy. Keep an eye on them, they go from perfect to burnt unfortunately quickly.
