APPLE CAKE IN AN IRON SKILLET

Apple Cake in an Iron Skillet image

Grab some Granny Smith (or other tart) apples and make this easy iron skillet apple cake. This is a rustic, lumpy, imperfect cake-which is my favorite kind!

Categories     Christmas     date night     baking     comfort food     dessert     fruit     main dish     snack

Time 50m

Yield 8-10 servings

Number Of Ingredients 14

1 stick unsalted butter
3/4 c. granulated sugar
4 whole granny smith apples, cored, halved and each half cut into six equal pieces
1 stick butter, softened
2/3 c. granulated sugar
1 1/2 tsp. vanilla extract
2 large eggs
1/2 c. sour cream, room temperature
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. ground cinnamon
1 granny smith apple, peeled, cored and chopped finely
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 375 F.
  • For the apple topping: In a 9 to 10-inch skillet, melt the butter over low heat. Add sugar to the pan and stir around, then place apple slices, cut side down, in the pan. Don't pack them too tightly, but try not to leave overly large gaps. Allow this to cook over low/medium-low heat while you make the cake batter, about 10 minutes.
  • In the bowl of an electric mixer, beat the butter and sugar until light and fluffy. Mix in the vanilla and eggs. Add the sour cream and mix well.
  • In a bowl, mix the flour, baking powder, salt, and cinnamon. Stir together then gradually add the flour mixture into the creamed butter mixture until just combined. Gently stir in the chopped apple.
  • Remove the skillet from the heat. Spoon the batter over the top, then spread gently so the batter is evenly distributed. Place on a sheet tray lined with foil and bake for 25 -30 minutes, or until cake is golden brown and bubbly. Allow the cake to sit in skillet for five minutes, then invert onto a serving plate. Don't worry if some of the topping isn't perfect---it'll taste perfect!
  • Serve warm with vanilla ice cream.

FRIED APPLE PIES

Categories     dessert

Time 1h10m

Yield 16 servings

Number Of Ingredients 18

1 1/2 cups packed brown sugar
1 stick (8 tablespoons) salted butter
5 Granny Smith apples, peeled and diced
1/2 teaspoon vanilla
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
Juice of 1/2 lemon
1 tablespoon cornstarch
Two 16-ounce cans refrigerated flaky jumbo biscuits (8 biscuits per can)
4 cups vegetable oil, for frying
1/2 cup confectioners' sugar, for sprinkling onto finished pies
1 cup Cinnamon-Caramel Sauce, recipe follows, or store-bought caramel sauce
1 cup packed light brown sugar
3/4 cup half-and-half
4 tablespoons (1/2 stick) salted butter
2 pinches kosher salt
1 tablespoon vanilla
1 teaspoon ground cinnamon

Steps:

  • Heat a large cast-iron skillet over medium heat. Add the brown sugar, butter and 1 tablespoon water. Cook, stirring, until the sugar is dissolved and the mixture is bubbling. Add the apples, vanilla, salt, cinnamon and lemon juice. Mix together the cornstarch and 1 tablespoon water in a small bowl to create a slurry. Add the cornstarch mixture to the skillet and stir to combine. Cook, stirring occasionally, until the apples are tender, about 5 minutes. Pour into a heatproof bowl and let cool completely. You can make this ahead of time and chill in the fridge a day or so in advance if needed.
  • To make the pies, roll each biscuit into about a 5-inch circle that is about 1/8 inch thick. Spoon 2 generous tablespoons of the apple filling on each round of dough, just off center. Use your finger and run a little water around the edges to help them seal completely. Fold one half of each circle over onto the other half and seal in the apple filling, forcing out any air that you can. Press the edges together and crimp with a fork. Continue until they're all assembled.
  • Heat the oil in a high-sided skillet over medium heat until it reaches 350 degrees F. Fry the pies 2 or 3 at a time for about 5 minutes, carefully turning them halfway through. Remove them to a paper towel-lined baking sheet to drain.
  • When all the pies are fried, sift the confectioners' sugar over top. Serve with Cinnamon-Caramel Sauce or store-bought caramel sauce.
  • Mix the brown sugar, half-and-half, butter and a pinch of salt in a saucepan over medium-low heat. Cook, whisking gently, until it thickens, 2 to 3 minutes. Whisk in the vanilla, cinnamon and a second pinch of salt and cook another minute to thicken further. Turn off the heat and allow to cool to room temperature before serving. Chill if not using immediately.

Time 1h40m

Yield 8 to 10 pies

Number Of Ingredients 9

6 cups all-purpose flour
4 tablespoons granulated sugar
1/2 teaspoon salt
1 cup shortening, plus more for frying
2 eggs, beaten
2 cups buttermilk, more if needed
Apple pie filling, canned
Cherry pie filling, canned
Powdered sugar, for sprinkling

Steps:

  • To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.

  • Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
  • Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.

  • Make the dough by placing the flour and salt in a large bowl. Stir with a whisk. Cut the butter into 1/2-inch chunks. Sprinkle over the dry ingredients and toss to coat. Using your fingers, press and smash the cubes into small flat bits, smaller than the classic apple pie. You want them almost (not not quite) incorporated into the flour. Sprinkle 1/2 cup of milk into the bowl and stir with a fork until it starts to get shaggy. Sprinkle more milk, a tablespoon at a time, if the dough looks too dry. Once the dough starts to look shaggy, start to massage it with the palms of your hand to incorporate the dry ingredients.
  • Make the filling by peeling, coring and chopping the apples into 1/4 to 1/2-inch chunks. You want them pretty small. Heat the butter in a large skillet until melted, and add the apple chunks. Cook on medium heat for 3 to 5 minutes until the apples just start to soften. Add the sugar, spices and salt to the apples and continue to cook for about 4 to 5 minutes or until the apples are soften and are on the verge of falling apart (but are still whole). The apple pieces will start to look a bit translucent. Set aside to cool.
  • Flour a clean surface then roll out 1 dough round into a 5-inch circle. Spoon 1 heaping tablespoon into the center of the dough circle. You might be tempted to add more. Don’t.
  • Once the pies are made, place the sugar in a large bowl or baking pan. Pour the oil into a 12-inch wide saute pan with straight sides or a heavy dutch oven. Heat the oil to 350°F. Once it reaches that temperature, gently slide three or four pies in the hot oil (don’t drop it as it will splash up the hot oil and burn you). Fry for 1 to 3 minutes on each side, or until each side is a deep golden brown. Remove the pies and place immediately in the sugar, coating each side by spooning the sugar over each pie or turning the pies over in the sugar. Move to a wire rack placed on a rimmed baking sheet and repeat with the remaining pies.

  • To make these delicious fried apple pies, you’ll start first by making the homemade apple pie filling. First, peel, core, and dice 2 large apples into small cubes. I used 1 Granny Smith and 1 Red Delicious for the perfect sweet/sour combo.
  • Next, combine the apples, brown sugar, cinnamon, and vanilla in a saucepan and cook over medium heat until juices start to form for about 3 minutes. Next, combine the apple cider (or apple juice) and cornstarch in a small bowl. Pour into the saucepan and turn the heat up to high and cook for an additional 3 minute, stirring constantly, or until the mixture has thickened up. Remove from heat and set aside.
  • Next, it’s time to make the homemade pie dough. Start by sifting the flour in a large mixing bowl. Next, cut the cold butter into cubes and using a pastry cutter begin to work the flour until all the butter is tiny lumps. In a separate bowl, combine the egg yolks and salt together. A little at a time, begin to pour in the hot milk to the egg mixture and stir constantly.
  • Lastly, pour the milk and egg mixture into the flour mixture and stir until your dough has formed. Next, place the dough onto parchment paper and knead for about 1 minute or until the dough is smooth-looking.
