- Melt butter in a large cast-iron or other ovenproof skillet. Add apples and 1/2 cup sugar; stir to mix well. Cover and cook over low heat for 20 minutes or until apples are tender, stirring frequently. , Add cinnamon and remaining sugar. Cook and stir over medium-high heat 5-10 minutes longer. If desired, serve with ice cream.

- Preheat oven to 375 F.
- For the apple topping: In a 9 to 10-inch skillet, melt the butter over low heat. Add sugar to the pan and stir around, then place apple slices, cut side down, in the pan. Don't pack them too tightly, but try not to leave overly large gaps. Allow this to cook over low/medium-low heat while you make the cake batter, about 10 minutes.
- In the bowl of an electric mixer, beat the butter and sugar until light and fluffy. Mix in the vanilla and eggs. Add the sour cream and mix well.
- In a bowl, mix the flour, baking powder, salt, and cinnamon. Stir together then gradually add the flour mixture into the creamed butter mixture until just combined. Gently stir in the chopped apple.
- Remove the skillet from the heat. Spoon the batter over the top, then spread gently so the batter is evenly distributed. Place on a sheet tray lined with foil and bake for 25 -30 minutes, or until cake is golden brown and bubbly. Allow the cake to sit in skillet for five minutes, then invert onto a serving plate. Don't worry if some of the topping isn't perfect---it'll taste perfect!
- Serve warm with vanilla ice cream.

- Sift flour and salt together. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time and mix with fork. When the flour mixture is moistened, gather it into a ball, wrap it in plastic, and refrigerate for 30 minutes.
- Peel and dice the apples and place them in a saucepan. Combine the sugar and cinnamon; pour over the apples and toss to coat. Cook, covered, in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce. Allow to cool.
- Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).
- In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold in half, and press edge with a fork to seal. Repeat with the remaining pastry and filling.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Fry the pies, a few at a time, 2 to 3 minutes on each side; cook until the crust is golden brown. Drain on paper towels.

- Preheat oil for frying.
- In a sauce pan, melt the butter. Add the apples and saute for 2 minutes.
- Stir in the cinnamon, nutmeg, 1/4 cup sugar, and brown sugar. Continue sauteing for 1 minute, stirring constantly to dissolve the sugar.
- Add the water and lemon juice. Bring the liquid up to a boil.
- Add corn starch dissolved in 1 Tablespoon of water.
- Whisk the vanilla and slurry into the liquid. Reduce the heat to a simmer and cook for 15 - 20 minutes, or until the apples are soft. Remove from heat and cool completely.
- In a mixing bowl, sift the flour, sugar, salt and baking powder, together.
- Gradually add the egg mixture to the flour mixture, working it to make a thick dough.
- Break the dough into 12 equal portions. On a lightly floured surface, roll the dough pieces into thin rounds, about 5 inches in diameter.
- Put 1/4 cup of the mixture in the center of each round, fold over and crimp the edges with a fork.
- Fry the pies, two to three at a time, in the hot oil, until golden brown. Remove from the oil and drain on paper towels.
- Powder the pies with the powdered sugar. May serve with vanilla ice cream.

- Filling: Add the butter to a large saute pan and melt. Add the apples, sugar, cinnamon and lemon juice. Cook over medium heat until the apples are soft, about 15 minutes. Remove from the heat and cool.
- When the filling is cool, roll the biscuits out on a lightly floured surface so that each biscuit forms a 7 to 8-inch circle. Place 2 to 3 tablespoons of the filling on each biscuit circle. Brush the edges of the circle with water. Fold the circle over the filling to make a half-moon shape. Seal by pressing the edges with the tines of a fork.
- Preheat deep-fryer with oil to 350 °F.
- Carefully add the pies to the oil, 1 at a time, and fry until golden brown, turning the pies as necessary for even browning, about 5 to 8 minutes. Drain on paper towels. Sprinkle with powdered sugar immediately.

- Heat a large cast-iron skillet over medium heat. Add the brown sugar, butter and 1 tablespoon water. Cook, stirring, until the sugar is dissolved and the mixture is bubbling. Add the apples, vanilla, salt, cinnamon and lemon juice. Mix together the cornstarch and 1 tablespoon water in a small bowl to create a slurry. Add the cornstarch mixture to the skillet and stir to combine. Cook, stirring occasionally, until the apples are tender, about 5 minutes. Pour into a heatproof bowl and let cool completely. You can make this ahead of time and chill in the fridge a day or so in advance if needed.
- To make the pies, roll each biscuit into about a 5-inch circle that is about 1/8 inch thick. Spoon 2 generous tablespoons of the apple filling on each round of dough, just off center. Use your finger and run a little water around the edges to help them seal completely. Fold one half of each circle over onto the other half and seal in the apple filling, forcing out any air that you can. Press the edges together and crimp with a fork. Continue until they're all assembled.
- Heat the oil in a high-sided skillet over medium heat until it reaches 350 degrees F. Fry the pies 2 or 3 at a time for about 5 minutes, carefully turning them halfway through. Remove them to a paper towel-lined baking sheet to drain.
- When all the pies are fried, sift the confectioners' sugar over top. Serve with Cinnamon-Caramel Sauce or store-bought caramel sauce.
- Mix the brown sugar, half-and-half, butter and a pinch of salt in a saucepan over medium-low heat. Cook, whisking gently, until it thickens, 2 to 3 minutes. Whisk in the vanilla, cinnamon and a second pinch of salt and cook another minute to thicken further. Turn off the heat and allow to cool to room temperature before serving. Chill if not using immediately.

- To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.
- To make the pies, roll the pastry out into a large square. Trim the edges to make a rectangle. Cut into 8 to 10 long rectangles, using a butter knife.
- Spoon a tablespoon or so of filling into the top half of one of the rectangles.
- Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
- Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.
- Sprinkle with powdered sugar and serve.

- Make the dough by placing the flour and salt in a large bowl. Stir with a whisk. Cut the butter into 1/2-inch chunks. Sprinkle over the dry ingredients and toss to coat. Using your fingers, press and smash the cubes into small flat bits, smaller than the classic apple pie. You want them almost (not not quite) incorporated into the flour. Sprinkle 1/2 cup of milk into the bowl and stir with a fork until it starts to get shaggy. Sprinkle more milk, a tablespoon at a time, if the dough looks too dry. Once the dough starts to look shaggy, start to massage it with the palms of your hand to incorporate the dry ingredients.
- Make the filling by peeling, coring and chopping the apples into 1/4 to 1/2-inch chunks. You want them pretty small. Heat the butter in a large skillet until melted, and add the apple chunks. Cook on medium heat for 3 to 5 minutes until the apples just start to soften. Add the sugar, spices and salt to the apples and continue to cook for about 4 to 5 minutes or until the apples are soften and are on the verge of falling apart (but are still whole). The apple pieces will start to look a bit translucent. Set aside to cool.
- Flour a clean surface then roll out 1 dough round into a 5-inch circle. Spoon 1 heaping tablespoon into the center of the dough circle. You might be tempted to add more. Don’t.
- Once the pies are made, place the sugar in a large bowl or baking pan. Pour the oil into a 12-inch wide saute pan with straight sides or a heavy dutch oven. Heat the oil to 350°F. Once it reaches that temperature, gently slide three or four pies in the hot oil (don’t drop it as it will splash up the hot oil and burn you). Fry for 1 to 3 minutes on each side, or until each side is a deep golden brown. Remove the pies and place immediately in the sugar, coating each side by spooning the sugar over each pie or turning the pies over in the sugar. Move to a wire rack placed on a rimmed baking sheet and repeat with the remaining pies.
