PISTACHIO AND CARDAMOM CUPCAKES

Cupcakes:
3 cups all-purpose flour
5 tablespoons pistachio instant pudding
1 tablespoon baking powder
1 teaspoon ground cardamom
1 1/4 cup buttermilk
1/2 cup sour cream
1/3 cup vegetable oil
2 cups sugar
4 ounces (1 stick) unsalted butter
1 tablespoon vanilla extract
1 teaspoon almond extract
1 dram (1/16-ounce) pistachio flavored oil
5 large eggs
1/2 cup chopped salted pistachios
1 cup pitted chopped dates
1 cup honey
2 tablespoons ground cardamom
1 pound unsalted butter
8 ounces cream cheese
1/4 cup fresh orange juice
2 tablespoons orange extract
1 tablespoon vanilla extract
1 teaspoon salt
1 orange, zested
2 pounds powdered sugar
1/4 cup toasted pistachios, seasoned with salt and pepper, for garnish.

Steps:

  • For the cupcakes: Preheat the oven to 325 degrees F. Line a cupcake pan with 24 regular cupcake liners.
  • Sift the flour, instant pistachio pudding, baking powder and cardamom into a bowl. Combine the buttermilk, sour cream and oil into another bowl and set aside. In the bowl of an electric stand mixer with the paddle attachment, cream the sugar and butter until the mixture is lighter in color and fluffy, about 7 minutes. Add the vanilla, almond and pistachio flavors. Add one egg at a time, scraping down the sides of the bowl after each addition. Turn the mixer to the lower speed, add the flour mixture and the buttermilk mixture, alternating between the two, beginning and ending with the flour. Lastly, fold in by hand, the salted chopped pistachios.
  • Fill the prepared cupcake liners half full with batter and bake until golden and baked though, 25 minutes. Cool the cupcakes completely.
  • For the date and honey filling: In a heavy-bottomed saucepan, combine the dates, honey, 1/4 cup water and cardamom together and cook until over medium-low heat until the mixtures becomes thicker, 10 to 15 minutes. Transfer the mixture to a dish and cool.
  • For the orange cream cheese frosting: Whip the butter and cream cheese in the bowl of an electric mixer fitted with a paddle attachment at medium-high speed until the mixture is light and fluffy, about 5 minutes. Add the juice, orange extract, vanilla extract, salt and zest and beat until fully incorporated. Then lower the speed and add the powdered sugar incrementally and beat for 3 more minutes. Put the frosting into a pastry bag and cut 1/2 inch off the tip.
  • To assemble: Using an apple corer, remove a piece of the cupcake from the center. Fill the cupcake with 1 teaspoon of the date and honey filling. Using a large round tip #809, pipe the orange cream cheese frosting and garnish with the toasted pistachios

Saffron and pistachio, a combination known to many on the Indian subcontinent as kesar pista, is a classic flavoring in South Asian, Iranian and other desserts - and for good reason. The buttery richness of pistachios brings out the floral flavor in saffron. Kesar pista shines in other sweets like this nutty twist on a blondie. Seth Byrum, my partner and an avid home baker, suggested enriching the base with white chocolate, which feels reminiscent of khoya, the richly flavored milk solids in several South Asian confections. The radiantly golden frosting lets the saffron do the talking. Garnish the top with pistachios to mimic the top of more traditional South Asian sweets, like shrikhand.

3/4 cup/112 grams raw, unsalted pistachios, plus more for garnish
1 cup/130 grams all-purpose flour
3/4 teaspoon coarse kosher salt
3/4 teaspoon baking powder
1/2 teaspoon ground cardamom
3/4 cup/173 grams unsalted butter, melted and cooled
1 1/4 packed cups/250 grams dark brown sugar
2 large eggs, at room temperature
1/2 cup/87 grams white chocolate chips
1/2 teaspoon/.33 gram packed saffron threads
1 1/2 tablespoons whole milk
6 ounces/170 grams cream cheese, softened
1/3 cup/77 grams unsalted butter, softened
2/3 cup/93 grams confectioners' sugar
Pinch of coarse kosher salt

Steps:

  • Make the bars: Heat oven to 350 degrees. Line a 9-inch square baking pan with parchment paper such that the paper spills out over the sides of the pan, like wings.
  • In a food processor, pulse the pistachios until the nuts are very finely ground. Don't let them get pasty. Add the flour, salt, baking powder and cardamom and pulse to combine.
  • In a large mixing bowl, whisk together melted butter and brown sugar until smooth and shiny. (The butter will separate at first, then blend in.) Whisk in the eggs until incorporated. Add the pistachio mixture and mix with a silicone spatula to combine. Gently stir in the white chocolate chips until evenly distributed. Pour the batter into the prepared pan and spread in an even layer.
  • Bake until the sides are brown and pull away from the pan, and the middle is slightly paler in color, 25 to 27 minutes. A toothpick inserted in the center will come out with a few crumbs attached. Cool completely in the pan on a rack.
  • While the bars cool, make the frosting: Finely grind the saffron threads in a mortar using a pestle or in a microwave-safe bowl using the back of a spoon. If needed, transfer the ground saffron to a microwave-safe bowl or to a small saucepan if you don't have a microwave. Stir in the milk, and microwave on high or heat over medium until the mixture is frothing around the edges but not boiling, about 30 seconds. Place the bowl in the refrigerator or freezer to quickly cool the mixture.
  • Meanwhile, in a large bowl, use an electric hand or stand mixer or a heavy whisk or wooden spoon to beat the cream cheese and butter until smooth. If working by hand, this takes some muscle. Add the confectioners' sugar and salt and beat again until homogeneous and no clumps of sugar remain. Beat in the cooled saffron milk until well-combined. The frosting will turn a bright golden hue.
  • Once the bars have cooled completely, scrape the frosting over the top, and use a spatula to spread it evenly. Crush or chop some pistachios for garnish and sprinkle all over the top. Refrigerate for at least 2 hours before eating. The bars keep in an airtight container in the refrigerator for up to 5 days or in the freezer for 1 month.

  • Carefully transfer the cut pieces to two baking sheets lined with silicone mats or parchment paper, leaving a little space between each square. Chill until firm, about 30 minutes.
