Steps:
- Add the coconut powder, butter, condensed milk and 8 teaspoons of the pistachio powder to a large nonstick skillet set over medium-low heat and stir until the mixture forms a ball, 7 to 10 minutes. Remove from the heat and let rest until cool enough to handle, about 5 minutes.
- Put the remaining 1/4 cup pistachio powder on a small plate. Form the coconut mixture into quarter-size balls. Roll each ball in the pistachio powder to coat.
PISTACHIO COCONUT LADOO
Pistachio Coconut Ladoo is made with dry roasted pistachios, coconut, and cashews that are blended with edible roses, rose water, and cardamom.

- Here are the main ingredients you'll need.
- Dry roast the pistachios until they are slightly brown. This will take 1-2 minutes. Remove from the stove and set aside.
- Next dry roast coconut flakes. This will take 1 minute. Remove from the stove and set aside.
- Now add the cashews and dry roast for a couple of minutes. Remove from the stove and set aside.
- Add 1 tbsp ghee. Let it melt.
- Now add all the dry roasted nuts and coconut. Just saute for a minute at the most and coat everything with ghee.
- Transfer the nuts and coconut to a food processor. Also, add the edible roses.
- Pulse a few times until it forms a grainy texture. Add maple syrup, rose water, and cardamom.
- Pulse a few more times until it's a more smooth texture. Do not over pulse else you'll end up with nut butter.
- Transfer the mixture to a bowl.
- Using a mini-scoop, form round balls.
- You should end up with about 7 ladoos. Refrigerate the ladoos for at least 1 hour.
- Garnish with edible roses and enjoy!

- Add the dessicated coconut to a large nonstick skillet over low heat. Cook, stirring frequently, until lightly toasted and aromatic, about 2 minutes.
- Add the sweetened condensed milk and stir until well combined. Turn off the heat and keep stirring until it forms a soft, cohesive dough, 3-5 minutes. Add the cardamom and stir to incorporate.
- Transfer the dough to a bowl and place in the fridge for 5 minutes, until firm and cooled.
- Add the finely shredded coconut to a shallow dish.
- Grease your hands with ghee or coconut oil. Scoop about 1½ tablespoons of the ladoo mixture into your hands at a time and roll in rounds.
- Roll the balls in the shredded coconut to coat evenly.
- Arrange the ladoos on a plate and refrigerate for about 5 minutes to harden.
- Garnish with the crushed pistachios, then serve.
- Enjoy!

- Add the desiccated coconut to a frying pan or wok over medium heat. Warm the coconut, stirring frequently, until it just begins to brown. At this point, take the pan off the heat and immediately transfer the coconut to a medium-size mixing bowl.
- Add roughly 3/4 of the condensed milk to the bowl and stir with a spatula until well-combined. We are aiming for a mixture which is slightly sticky to the touch - the best way to tell is to try to roll a ladoo and see if the mixture holds together. Adjust the consistency by adding more condensed milk or coconut until you can easily roll the ladoos.
- When rolling the ladoos, I use a two-step method: first press the mixture within your hand (by folding your hand in half), switching between hands as necessary, and secondly use the centre of both hands to roll the ladoo into a perfect sphere.
- Enjoy the ladoos plain, or coat in sugar after rolling. You can also garnish your ladoo with chopped pistachios, almonds or even rose petals!
