PIZZA CUPCAKES
They're portable, sort of like a mini pizza, except shaped like a cupcake. They're a great savory snack and a great addition to a game day buffet. Feel free to customize to your family's tastes with additions like ham, sausage, bell peppers, salami, mushrooms, olives, jalapenos, etc. I recommend not omitting the tomato, that really adds something special.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Spray 8 cups of a muffin tin with cooking spray.
- Finely chop cherry tomatoes and drain any liquid. Set aside.
- Unroll pizza crust on a floured work surface and roll out thinly into a large rectangle. Using a 4-inch round cookie or biscuit cutter, cut 8 circles in the dough. Place dough circles in the prepared muffin cups, pressing dough into the bottom and up the sides of each cup.
- Drop 1 teaspoon mozzarella into each cup. Top with 1 tablespoon of pizza sauce. Add chopped tomatoes and red onions. Add 1 tablespoon of mozzarella to each cup, and top with pepperoni. Sprinkle each cup with Italian seasoning, red pepper flakes, and garlic salt to taste.
- Bake in the preheated oven until cheese is bubbling and melted, 14 to 15 minutes. Remove from the oven and let cool in the tin for about 5 minutes. Remove from the tin and serve hot.

- Heat oven to 375°F. Spray 18 muffin cups with cooking spray.
- In 10-inch skillet, brown beef with pizza seasoning and salt over medium-high heat until beef is browned; drain. Return beef to skillet; stir in pizza sauce.
- Place 1 wonton skin in each muffin cup. Divide half of ground beef evenly among muffin cups. Top each with about 1 tablespoon cheese. Repeat layers starting with second wonton skin.
- Bake 20 minutes or until cheese is bubbly.

PIZZA MARINARA WITH TUNA AND CAPERS
This pizza tastes like Southern Italy. The hot red pepper flakes are especially nice, but don't overdo it. Just a light sprinkle will give the pizza a little heat.

- Place a pizza stone, if you have one, on the middle rack of the oven. Preheat the oven to 450°.
- If using drained canned tomatoes, season with half the garlic and salt to taste.
- Break up the tuna in a bowl with a fork and add the remaining garlic and half the thyme and rosemary.
- Spread the tomatoes or tomato sauce over the pizza. Distribute the tuna over the tomato sauce. Sprinkle on the remaining thyme and rosemary, the pepper flakes, capers, and strips of sweet red pepper. Drizzle on the olive oil.
- Place the pizza pan on the stone in the hot oven. Bake 10 to 15 minutes, until the crust is brown. Remove from the heat, cut into wedges (I use kitchen scissors for this), and serve.

- Preheat the oven to 400 degrees F (200 degrees C). Spray 9 wells in a cupcake tin with nonstick cooking spray, or line with paper liners (spray the liners with nonstick cooking spray).
- Combine flour, sugar, salt, garlic powder, Italian seasoning, and baking powder in a bowl. Whisk to combine and make a well in the center.

- Spray muffin tin with cooking spray. preheat oven to 400 degrees.
- Roll out pizza dough on lightly floured surface. cut dough into 12 even sized pieces. place one piece in each hole in the muffin tin and press dough to bottom and sides to make a little cup.
- Place 1 to 2 tsps sauce in each dough cup, spreading on bottom and on sides. (Do not use more sauce or they will be soggy.) You will have sauce left over! Add toppings of your choice: cut up pepperoni, small pieces of italian sausage, vegetables, etc. Divide cheese evenly over all 12 cups, sprinkling on top.
- Bake in preheated 400 degree oven - use time listed on pizza dough to check for doneness. Add time as needed. Sides of dough cups should be lightly browned and cheese and sauce should be bubbly hot.
- Allow to cool a bit before removing from pan (just a few minutes). Serve with extra sauce if desired. Enjoy!
