- For the crust: Make one day prior to baking. Combine warm water, sugar, and yeast in a small bowl.
- Stir until combined.
- Let mixture sit for 5 minutes, until foam begins to build on surface.
- In a large bowl sift flour and salt and make a deep depression in the center of the mixture.
- Add oil and yeast-water mixture to the depression and combine using a fork until you can use your hands.
- Dust a clean flat surface with flour and kneed the dough until the dough has a smooth consistent texture. This should take about 1 minutes.
- Rub a light coating of oil on dough and put in air-tight container and store in warm place for 2 hours, until it doubles in size.
- Punch down dough, put back in air-tight container and store in refrigerator for 24 hours. (if you do not have that time you can use the dough now).
- When ready to use roll out to 18 inches.
- Place dough on pan and make a ring around the edge with string cheese.
- Moisten the outering with water and fold over the dough to cover cheese and score the center of dough with a fork.
- Finally, lightly brush the dough with olive oil.
- For the sauce: Combine tomato sauce, water, sugar, lemon juice, and spices in a sauce pan over medium heat.
- Once it starts to bubble, drop heat down and simmer for 30-60 minutes until desired thickness is reached (this makes sauce for two pies).
- Assembly: Heat oven to 475°F.
- Spread 1 cup of pizza sauce to the edges of the pizza crust.
- Add 1 1/2 cups of shredded cheese and toppings.
- Bake for 12 to 16 minutes.

- Combine sauce ingredients and let sit for 1 hour.
- Put yeast, sugar, salt, and dry milk in a large bowl.
- Add water and stir to mix well.
- Let rest for two minutes.
- Add oil and stir again.
- Add flour and stir until dough forms and flour is absorbed.
- Turn out on to a flat floured surface and knead for about 10 minutes, adding more flour as needed, until elastic and no longer sticky.
- Divide dough into three balls.
- Put 3 ounces of oil in each of three 9-inch cake pans, making sure it is spread evenly.
- Using a rolling pin, roll out each dough ball to about a 9-inch circle.
- Place in cake pans.
- Spray the outer edge of dough with Pam and cover with a plate.
- Place in warm area and allow to rise for 1 to 1 1/2 hours.
- Preheat oven to 475°F.
- For each 9" pizza, spoon 1/3 cup sauce on dough and spread to within 1-inch of edge.
- Distribute 1 1/2 ounces shredded mozzarella cheese on sauce.
- Place toppings of your choice in this order: Pepperoni or ham, vegetables, meats (cooked ground sausage or beef) Top with 3 ounces mozzarella cheese.
- Cook until cheese is bubbling and outer crust is brown.
- Serve hot.

- 1.Preheat the oven to 400 degrees. 2.Mix together the parmesan, onion salt, garlic powder, and oregano in a small bowl or cup. Reserve for later. 3.Shape or roll the raw pizza dough into a square about 1/4-inch thick 4.Use a sharp knife to cut the dough into smaller squares about five inches across. 5.Cut each of those squares in half, on the diagonal. You should be left with triangles that are five inches wide at the base. 6.Top the base of one of the triangles with pepperoni and mozzarella cheese, leaving space around the edges. 7.Roll the triangle from the base, working up to the point to form a crescent. The filling should be completely contained. 8.Repeat with the remaining dough triangles. 9.Place the pizza rolls onto a greased baking pan. Brush with the melted butter, then sprinkle with the reserved seasoning mixture. 10.Bake for 15 to 2o minutes, until dough is cooked and cheese is melted.[4]

- Make the Pizza Dough: Combine the wet ingredients in the bowl of a Kitchen Aid mixer. Knead in the flour over low for 5 minutes. Shape into a ball and place into a greased bag. Refrigerate overnight.
- To Assemble Stuffed Crust Pizza: allow the dough to rest at room temperature for 5 minutes. Roll the dough out to a 16-inch circle. Place the string cheese around the edge leaving a 1-inch border. Wrap dough over the string cheese and pinch down to seal.
- Run a docker wheel over the dough reaching the crust.
- Spread the pizza with marinara sauce and top with the pizza toppings.
- Brush the crust with cooking oil and bake on the bottom rack of a pre-heated 500°F oven for 7-9 minutes or until golden and done.
- Brush the crust with additional oil right out of the oven. Serve.

- Combine 4 cups bread flour, beer, water, shortening, yeast, brown sugar, salt, garlic powder, and onion powder in the bowl of a stand mixer fitted with a dough hook attachment. Mix, adding remaining flour a little at a time, until dough pulls away from the sides of the bowl and forms into a ball, about 2 minutes.
- Lightly grease a large bowl with 1 teaspoon olive oil. Add dough. Cover with a clean towel and let rise until doubled in size, about 1 hour.
- Grease 2 pizza pans with remaining 2 teaspoons olive oil; dust with cornmeal.
- Punch dough down gently and divide into 2 portions. Place dough on the prepared pans. Cover and let rest, about 5 minutes. Stretch dough out 1 inch past the edge of the pans.
- Arrange 8 sticks of cheese, ends touching, around the edge of 1 pan. Fold overhang over cheese and press dough to seal. Repeat with second pan.
