PIZZA PATTIES
To cut preparation at mealtime, mix and shape these patties the night before and refrigerate. If you like lots of sauce, you may want to serve extra spaghetti sauce on the side for dipping.

- In a large bowl, combine the green pepper, onion and Parmesan cheese. Crumble sausage over mixture and mix just until combined. Shape into four patties. , In a large skillet, cook patties over medium heat for 7-8 minutes on each side or until meat is no longer pink; drain., Add the spaghetti sauce; bring to a boil. Reduce heat; cover and simmer for 7-8 minutes or until heated through. Place a patty on the bottom of each bun; drizzle with spaghetti sauce. Sprinkle with mozzarella cheese; replace tops.

PORCUPINES
Beefy meatball patties rolled in rice and cooked in tomato sauce. Not gourmet, but something a little different.

Steps:
- Mix together: beef, bread crumbs, egg, salt, paprika, and green pepper.
- Form into balls using about 1/3 cup meat mixture for each.
- Roll each ball in rice to coat lightly, then flatten somewhat to form thick patties.
- Heat Prego and chili powder in deep saucepan.
- Add patties to sauce, making sure there is sauce all over the patties (otherwise your rice will not cook well and will be crunchy--yuk).
- Cook covered over medium heat until done (about 45 minutes), turning patties as needed to keep well covered in sauce.
PORCUPINES
These are great to make ahead of time and then freeze. We freeze them with mashed potatoes and corn as part of a homemade TV dinner.

- In a large bowl, combine the ground beef, rice, 1/2 cup of water and onion. Blend in salt, celery salt, garlic powder and pepper. Mix well. Shape into 1 1/2 inch balls.
- Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium heat, brown the meatballs; drain fat.
- In an 11x7 inch baking dish, combine the tomato sauce and 1 cup of water. Place the browned meatballs into the tomato sauce, turning to coat well.
- Cover and bake in a preheated oven for 45 minutes. Uncover, and cook for an additional 15 minutes.

We are big fans of pizza burgers that some greasy spoons serve, but it is so hard to find a good one so I decided to come up with my own. Here is a real simple recipe that puts smiles on the faces of my family.

Steps:
- Combine beef, tomato paste, salt, sugar, garlic powder, Italian seasoning, pepper, and oregano in a large bowl. Mix thoroughly. Cover and refrigerate to let flavors marry, about 4 hours.
- Form beef mixture into 8 thin patties. Place 1 slice of mozzarella cheese on each of 4 patties; leave at least a 1/2-inch border, breaking up the cheese as needed. Place remaining patties on top and pinch edges to seal in the cheese.
- Heat a skillet over medium-low heat. Fry burgers until browned and centers reach 165 degrees F (74 degrees C), 6 to 7 minutes per side. Serve on buns.

- In a large bowl, combine 1/3 cup pizza sauce, bread crumbs, pepper, onion, egg whites and garlic. Add beef; mix lightly but thoroughly. Shape into 6 oval patties., In a large nonstick skillet, cook patties over medium heat 4-5 minutes on each side or until a thermometer reads 160°., Meanwhile, place bread on an ungreased baking sheet. Brush tops with oil; sprinkle with Italian seasoning. Broil 3-4 in. from heat 1-2 minutes or until golden brown., Place remaining pizza sauce in a microwave-safe bowl. Microwave, covered, on high for 10-20 seconds or until heated through. Place patties on toast; top with sauce and cheese. Freeze option: Place patties on waxed paper-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. Freeze remaining pizza sauce in an airtight container. To use, cook frozen patties and pizza sauce as directed, increasing time as necessary for a thermometer to read 160° for patties and for sauce to be heated through.
