LAZY WEEKEND BREAKFAST CASSEROLE
Easy egg and cheese breakfast casserole, fluffy, and a little bit crispy around the edges. Mix it up with your favorite omelet ingredients. Great for a lazy weekend morning.

Steps:
- Preheat the oven to 350 degrees F (175 degrees. Coat an 8-inch square baking pan with cooking spray.
- Combine eggs, Cheddar cheese, cottage cheese, flour, butter, baking powder, and salt in a large bowl. Stir to mix well. Pour into the prepared baking dish.
- Bake in the preheated oven until golden brown and a knife inserted into the center comes out clean, about 25 minutes. Let cool for 5 minutes. Top with hot sauce before serving.

YA GOTTA TRY IT BREAKFAST CASSEROLE
Had I not eaten this first, then read the recipe, I doubt I would have tried it--who lays awake at night dreaming this stuff up?

Steps:
- Brown the sausage, set aside to cool (or put in fridge while prepping).
- Mix all other ingredients together (use a large bowl).
- Add cooled sausage (hot sausage makes the eggs weird).
- Fill lightly greased 9X13 pan.
- At this point, you may bake, refrigerate or freeze. If frozen, remove from freezer the night before serving.
- Bake at 350°F for 45 minutes.
- If it seems to be getting too brown, cover lightly with foil last 10 minutes or so.

Steps:
- Place sausage and bacon in two large, deep skillets. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- Butter one side of six slices of the bread. Placed slices butter side up in the bottom of a 9x13 inch baking pan.
- In a large bowl, stir together cooked sausage and bacon with onion and cheese. Place half of his mixture on top of buttered bread. Then add another six slices of bread (no butter). Add remaining meat/cheese mixture. Beat together milk and eggs; pour over top of casserole. Cover with foil and refrigerate overnight.
- The next morning: preheat oven to 425 degrees F (220 degrees C).
- Bake, covered, in preheated oven for 45 to 60 minutes.
