Steps:

  • Top one piece of bread with marinara sauce, mozzarella cheese, and pepperoni.
  • Cover with a second piece of bread and butter both slices of bread from edge to edge.
  • Place in preheated toastie machine and cook until bread is golden brown. (If the toastie is not browning evenly, flip half way through).
  • Remove from toastie and slice in half.
  • Enjoy!

2 to 3 tablespoons extra-virgin olive oil
4 to 5 sprigs fresh thyme, washed, dried and stemmed
1 loaf Italian bread, cut into 16 (1-inch) thick rounds on the bias
Kosher salt
16 ounces fresh, tangy goat cheese, preferably in log form, cut into 16 slices
Sea salt

Steps:

  • The thing I like most about a recipe like this is that you have a chance to showcase your favorite type of cheese in a way that's hard for people to resist. I like goat cheese for the "tang" factor and the supple texture. This goes great with a bowl of my chicken soup but can really fit in with any soup for the "comfort" factor.
  • Heat a large skillet, over medium heat, and add the olive oil. When the oil begins to smoke lightly, shut off the heat and add the thyme leaves. The thyme should make a crackling sound as it hits the oil, cooking it slightly and mellowing the flavor. Add the bread in a single layer. Turn the heat back on and cook over medium heat until the first side browns, 2 to 3 minutes.
  • Use a pair of tongs to turn the toasts on their second side and season with kosher salt. Top each round with a slice of cheese and continue cooking them over very low heat or off the heat, for 2 to 3 minutes. Adjust the seasonings with sea salt, to taste. Serve alongside soup, if desired.

1/2 teaspoon Italian seasoning
Pinch crushed red pepper
2 slices bread
1 tablespoon plus 1/4 cup marinara sauce, warmed
2 slices mozzarella
2 slices provolone
2 ounces pepperoni
1 mini sweet pepper, sliced thin
1 to 2 tablespoons black olives
4 fresh basil leaves

Steps:

  • In a small bowl, mix together the butter, Parmesan, Italian seasoning and crushed red pepper. Brush one side of each slice of bread with this mixture.
  • Heat a nonstick skillet over medium heat. Lay one piece of the bread, butter-side down, in the skillet. Spread 1 tablespoon marinara sauce on the bread and layer on the mozzarella, provolone, pepperoni, pepper slices, olives and basil leaves. Top with the second slice of bread, butter-side up. Toast in the skillet, flipping as needed, until the bread is golden and the cheese has melted, 4 to 5 minutes.
  • Remove from the skillet and slice in half. Serve with the remaining 1/4 cup marinara on the side.

2 slices bread (crusts are good) or 1 roll, halved
1 tablespoon double concentrate tomato puree or 1 tablespoon tomato paste
cheese, enough to cover the bread

mixed herbs (optional)

Steps:

  • Grill one side of the bread (crust side) until it's whatever colour you like toast to be.
  • Very lightly grill the other side, toast should be slghtly firm, but not yet browned.
  • Spread the tomato puree over the lightly toasted side.
  • Add the toppings- cheese last.
  • Sprinkle a pinch of mixed herbs over each slice.
  • Place under the grill again and grill until the cheese is bubbling.

1 tablespoons all-purpose flour
1 cup whole milk
1/4 cup grated Parmesan
1/4 cup grated Pecorino Romano
1/2 teaspoon kosher salt (Diamond Crystal)
A few grinds of black pepper
1/4 cup olive oil
2 garlic cloves, grated
1 loaf soft French bread, split lengthwise, insides mostly dug out
4 ounces mozzarella, low-moisture and part-skim, or fresh (drained and patted dry, if necessary), grated or torn
4 ounces sliced provolone (from the deli), cut into 1/2-inch pieces (about 1 cup)
2 tablespoons grated Parmesan
Red-pepper flakes or dried oregano, or both, for serving

Steps:

  • Make the sauce: Heat oven to 450 degrees. Melt the butter in a medium pot over medium heat. Once melted, whisk in the flour and cook, stirring constantly, until starting to turn golden, about 1 minute. Whisk in the milk, a few splashes at a time to start, until evenly incorporated. Bring to a full boil, reduce to a simmer, and cook, whisking occasionally, until slightly thickened and the mixture coats the back of a spoon, about 5 minutes. (It will continue to thicken as it cools.). Remove from heat, and whisk in Parmesan, pecorino, salt and pepper. Let cool.
  • Prepare the pizza: Combine olive oil and garlic in a small pot over medium heat. Cook, swirling occasionally, until the garlic starts to sizzle but doesn't brown, about 2 to 4 minutes. Remove from heat.
  • Place the French bread cut side up on a baking sheet. Brush cut sides with garlic oil. Bake until edges are golden, 5 to 7 minutes.
  • Toss together the cheeses in a medium bowl. Spread sauce over the two bread halves all the way to the edges and top with cheese.
  • Return to the oven and bake until melted, about 5 minutes. Increase heat to broil. Broil until the cheese is bubbly and browned in spots (watch carefully!), 1 to 2 minutes more. Let cool 5 minutes before slicing and serving. Serve topped with red-pepper flakes and oregano, if you like.
