Steps:
- In saucepan, combine rice and 1 1/4 cups (300 mL) water; bring to boil.
- Cover and reduce heat to low; cook for 25 minutes or until rice is tender.
- With fork, stir in rice vinegar and sesame seeds.
- Meanwhile, line 8-inch (1. 2L) round or 8-inch square cake pan with plastic wrap.
- With spatula, press rice firmly and evenly into pan.
- Let cool completely.
- Turn out onto flat serving plate.
- Top with layer of avocado slices.
- Using scissors, cut nori into thin strips; sprinkle over avocado.
- Arrange crabmeat, cucumber and ginger over top.
- Stir together mayonnaise, milk and wasabi powder; drizzle over top.
- Cut into wedges to serve.

- Heat a medium nonstick pan over medium-high heat. Add the beaten egg to the pan and tilt the pan so the egg covers the bottom in a thin layer. Cook until the egg is firm, 3 minutes. Remove from the pan and let cool, then roll up.
- In a liquid measuring cup, mix together the sugar, salt, and rice vinegar and microwave for 2 minutes, or until the solids fully dissolve.
- Pour the seasoned sushi vinegar over the cooked rice and gently toss the rice until it comes to room temperature.
- Place a sheet of nori on a cutting board. Dip your hands in water and then pick up about half of the seasoned sushi rice and gently arrange it over the nori, spreading evenly all the way to the corners.
- Top the rice with another nori sheet, then cut the the sushi crosswise into 4 even strips. Set aside.
- Place another sheet of nori on a sushi rolling mat. Place a quartered strip of cucumber on the bottom edge of the nori and another cucumber strip an inch above it. Place 2 of the sushi rice/nori strips on top of the cucumber.
- Place a strip of salmon in between the strips of nori. Then, place the rolled omelet on top of the salmon.
- Place 2 strips of tuna on either side of the omelet roll. Then, place another piece of salmon on top of the omelette.
- Place the last 2 strips of rice and nori over the salmon. Place another strip of cucumber over the top piece of nori and roll the sushi 90 degrees.
- Tuck the final piece of cucumber in place and continue to roll the sushi until the nori completely wraps around, making sure to keep the roll as square as possible.
- Cut the roll into slices and serve immediately with soy sauce, wasabi, and pickled ginger alongside.

- Combine water, rice, vinegar, salt, and sugar in a medium saucepan, and let stand 10 minutes. Turn heat on medium-high, and bring to a boil. Reduce heat to medium; cover and cook until rice is tender, 18 to 20 minutes. Transfer rice to a baking sheet, and allow to cool, about 10 minutes.
- Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high. Add rice to skillet; using wet hands, press rice, forming a large rice patty. Let rice cook, undisturbed, until lightly golden on bottom, about 5 minutes. Brush top of rice cake with remaining 1 tablespoon oil. Carefully place the back of a small pizza pan over skillet, and flip skillet to invert the rice cake. Slide rice cake back into hot skillet over medium-high, and cook other side until lightly golden and crisp, about 5 minutes. Remove from skillet, and let cool, about 10 minutes. (Rice patty can be chilled in freezer 5 minutes to speed up the process.)
- Spread wasabi mayonnaise in a thin layer over rice patty leaving a 1-inch border. Arrange smoked salmon in a ring around outer edge of mayonnaise layer. Arrange cucumber slices in a ring overlapping salmon. Arrange tuna slices overlapping cucumber. Arrange avocado slices in center of pizza. Sprinkle jalapeño slices evenly over pizza, and spoon ginger slices in center of avocado slices.
