2 ⅓ cups all-purpose flour
1 tablespoon baking powder
¾ teaspoon salt
1 ½ cups white sugar
½ cup shortening
2 eggs
1 cup milk
1 teaspoon vanilla extract

Steps:

  • For a Yellow Cake: Sift together flour, baking powder, salt, and sugar. Cut in shortening until fine crumbs are formed. Add eggs, milk, and vanilla. Beat at low speed for 1 minute, then high for 2 minutes, scraping the bowl frequently.
  • Pour batter into greased and floured 9x13 inch pan. Bake in preheated 350 degree F oven (175 degrees C) for 25 to 30 minutes.
  • Variation for a White Cake: Prepare as for the basic cake except use 3 egg whites for the 2 whole eggs. Whites may be beaten separately and added for a lighter cake.
  • Variation for a Chocolate Cake: Add 1/4 cup cocoa powder to the basic cake mix prior to adding the milk.
  • Variation for a Spice Cake: Add 1 teaspoon cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground allspice to the basic cake mix.
  • Variation for a Pineapple Upside Down Cake: Melt 1/2 cup butter in the bottom of a 9x13 pan. Add 2/3 cup brown sugar, stirring into the butter. Arrange pineapple slices in the pan. Top with the basic (yellow cake) mix recipe. Bake 30 to 35 minutes, cool 5 minutes, and invert to serve.

2 1/4 cups self raising flour
1 1/2 cups caster sugar
1 teaspoon vanilla essence
2 eggs
1 cup milk
125 g melted butter

Steps:

  • Mix all ingredients in bowl.
  • For Chocolate Cake substitute 1/4 cup Cocoa for 1/4 cup Flour.
  • In 1 small tin cook for 45 - 50 minutes.
  • in 2 tins cook for 20 - 25 minutes.
  • Ice with your favourite thick butter icing.

250 g butter
1/3 cup icing sugar (U.S confectioner's sugar)
1/3 cup cornflour (U.S corn starch)
1/4 cup sugar
1/2 teaspoon vanilla
2 1/3 cups plain flour

Steps:

  • Melt butter over low heat, allow to cool slightly.
  • Sift icing sugar and cornflour into bowl, add sugar.
  • Add butterand vanilla, beat mixture until thick and creamy.Add sifted flour, mix well.
  • Press mixture into 18 cm x 28 cm (7in x 11in) baking pan (lamington tin in AUS), smooth over with a spatula; mark into fingers with sharp knife.
  • Prick each finger decoratively with a fork.
  • Bake in moderate oven for 30 minutes or until light golden.
  • Cut into fingers while still warm. Cool in tin.

3 egg whites
3/4 cup milk
1 teaspoon vanilla extract
Frosting of your choice
ADDITIONAL INGREDIENTS FOR SPICE CAKE:
2 eggs
3/4 cup milk
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
Frosting of your choice

Steps:

  • In a bowl, cream shortening and sugar. Combine flour, baking powder and salt; gradually add to creamed mixture until blended and crumbly. Store in an airtight container in a cool, dry place for up to 3 months. Yield: about 11 cups (enough for three cakes). , To prepare white cake: In a bowl, combine 3-1/2 cups cake mix, egg whites, milk and vanilla. Beat on medium speed for 2 minutes. Pour into a greased 9-in. square baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack before frosting.
