Exceptional Plantain Cake made with overripe plantains. This scrumptious plantain dessert will become a regular at your table. Simple enough for breakfast and elegant enough ton serve when receiving guests. This recipe makes at least 10 servings so there is enough to go round!

4 overripe plantains
3/4 cup oil (175 ml)
12 oz evaporated milk (354 ml)
2 teaspoons vanilla extract
Zest of one lemon
Juice of one lemon
4 large eggs
2 cups flour (250g)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup granulated sugar (150g)
1 teaspoon cinnamon powder

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease and flour a 9 1/2 inch bundt pan.
  • Peel plantains and place in a large bowl. Mash the plantains into a paste using a fork.
  • Add oil, vanilla and, lemon juice milk and mix until just combined.
  • In another large bowl whisk together flour, salt, sugar, baking powder, baking soda, lemon zest.
  • Add wet ingredients to dry ingredients and mix until just combined.
  • Beat eggs then add to mixture and mix until just combined.
  • Pour the batter into the prepared pan.
  • Bake for 1 hour until a toothpick inserted in the cake comes out clean.

This recipe is definitely from the South. We had a friend who used to make our family a prune cake every Christmas. When I make this cake, I always talk my father into cracking the walnuts out of the hulls for me. We pick up the walnuts in the fall and use them all winter long...the trees are everywhere! We have a 12-acre farm and are building a cabin on it.

2 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup vegetable oil
1 cup buttermilk
2 large eggs, beaten
1 cup chopped cooked pitted dried plums (prunes), drained
1 cup chopped nuts
BUTTERMILK GLAZE:
1 cup sugar
1/2 cup butter, cubed
1/2 cup buttermilk
1 tablespoon light corn syrup
1/2 teaspoon baking soda

Steps:

  • In a large bowl, combine first seven ingredients. Add oil, buttermilk and eggs; mix well. Fold in plums and nuts. Pour into a greased 13x9-in. baking pan. Bake at 325° for 40-45 minutes or until cake tests done. Remove from oven and punch holes in top of cake with a wooden skewer or pick. Immediately combine glaze ingredients in a saucepan. Bring to a boil and boil for 2 minutes, stirring constantly; pour hot glaze over warm cake. Cool in pan.

4 cups sifted flour
1 cup brown sugar
1 1/3 cup molasses
5 ounces lard (1/2 cup + 2TBS) [I substituted crisco]
5 ounces margarine
1/2 teaspoon salt
1 1/3 cup water
1 1/3 teaspoon soda
cream cheese whipped with a little milk
hot lemon sauce

Steps:

  • 1. Mix brown sugar, salt and shortening until well blended. Add sifted flour and blend well using no. 1 speed on mixer. This makes a dry crumb mix. 2. Mix water and soda together, and add to molasses. 3. Make crust in oblong cake pan or 2 9" square cake pans. Use part of crumb mixture, patting down firmly until about 1/4 " thick 4. Arrange crumbs and molasses mmixture in alternate layers. Sprinkle crumbs loosely over botom crust. Add 1/2 molasses mixture, more crumbs, rest of molasses, and top with crumbs. 5. Bake in 350 degree oven for 30-35 minutes. 6. Top with whipped cream cheese and hot lemon sauce.

1 cup oil for frying, or as needed
3 ripe plantains - peeled, halved, and each half cut into 3 to 4 pieces
6 eggs, separated
1 cup white sugar
1 tablespoon white sugar
1 splash vanilla extract, or to taste
1 cup all-purpose flour
1 teaspoon baking powder
1 pinch salt
6 ounces queso fresco, crumbled

Steps:

  • Heat about 1/2 inch of oil in a large, heavy skillet over medium-high heat; fry plantains until beginning to brown on both sides, 5 to 7 minutes. Transfer to a paper towel-lined plate to cool completely, at least 10 minutes.
  • Preheat oven to 300 degrees F (150 degrees C). Heavily grease a 9x13-inch cake pan.
  • Beat egg whites in a bowl using an electric mixer until stiff peaks form. Slowly add 1 cup plus 1 tablespoon white sugar; beat on high until completely smooth and thickened. Add vanilla extract and mix well. Add egg yolks, 1 at a time, and beat until completely smooth again.
  • Sift flour, baking powder, and salt together in a bowl. Gradually mix flour mixture into egg mixture until batter is just mixed.
  • Spread 1/2 of the batter into the bottom of prepared cake pan. Place cooled plantains in an even layer on top of batter; top with enough queso fresco to lightly coat. Add 1 more layer plantain and cover with remaining batter, carefully working out any air bubbles with a spatula.
  • Place pan on the middle rack of preheated oven and bake until the center starts to firm up, 40 to 50 minutes.

My mom used to make this cake for special Holidays and it is my husbands favorite cake. I am carrying on the tradition in her memory. It will always be mom's recipe.

1/2 cup(s) cooking oil
4 - eggs
1 11oz can(s) mandarin oranges
1 3 oz box(es) instant vanilla pudding
1 20 oz can(s) crushed pineapple
1 8 ounce(s) carton cool whipped topping

Steps:

  • Mix cake mix, oil,eggs,and mandarin oranges with juice. Mix well and pour in round cake pans that have been lightly oiled and floured. For 2 layer bake 25 minutes on 350degrees for 3 layer 18-20 minutes. Cake is done when toothpick inserted comes out clean.
  • Icing: Add vanilla pudding,crushed pineapple w/juice and cool whip. Mix well and spread between layers and finish by covering cake. This cake has to be refrigerated and the longer it sits the better it gets. Happy eating!

Another recipe from my favorite Reader's Digest cookbook (called Down Home Cooking). It's a breakfast dish that resembles a giant puffy pancake. The recipe originated in South Carolina in the 18th century, and this version is topped off with assorted fresh berries (and any berries can be used, such as raspberries, strawberries, blueberries).

2 tablespoons unsalted butter or 2 tablespoons margarine
3 large eggs
1 large egg white
1 cup low-fat milk (1% milk fat)
2/3 cup all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons grated orange rind
3 tablespoons orange juice
1 1/4 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons confectioners' sugar
2 cups fresh berries (optional)
maple syrup (optional)

Steps:

  • Preheat oven to 425°F
  • In a heavy, oven-proof skillet, melt butter in the oven.
  • In a large bowl, with electric mixer, beat eggs, egg white, milk, flour, sugar, orange rind, orange juice, 1/4 reaspoon of the cinnamon, and nutmeg for 2 minutes or just until smooth.
  • Remove the skillet from the oven, tilt to coat the sides with the melted butter. Pour mixture over the butter, and return to oven to bake (at 425°) for 20 minutes or until puffed and golden.
  • In a small bowl, mix the confectioner's sugar with the remaining 1 teaspoon of cinnamon, and sprinkle over the cake.
  • Serve with fresh berries or syrup if you wish.
