GRANDMA'S OATMEAL PIE
This recipe for the Best Oatmeal Pie is Grandma's prized blue ribbon winning recipe. Like a pecan pie but with oatmeal!

Steps:
- Preheat the oven to 350F degrees.
- Place the pie crust in a pie plate and flute edges if desired, set aside.
- With a hand mixer beat eggs until light and fluffy.
- Add in the granulated sugar, brown sugar, flour, cinnamon and beat until well combined.
- Next add the corn syrup, melted butter and vanilla and beat until incorporated.
- Lastly fold in the oatmeal.
- Pour into the prepared pie crust and cook for 45 -55 minutes. Until the center has no jiggle.
- Let cool fully about 3-4 hours before slicing. Serve with ice cream if desired.

OLD-FASHION OATMEAL PIE
This great pie recipe goes back over 100 years. The recipe came from my grandmother's grandmother who was living in Charleston, South Carolina during the 1860's. Family history has it, that during the Civil War, since pecans were in short supply in the South, oatmeal was substituted for the traditional pecan pie and the results were astonishing. Now served at every family gathering since that time.

- Beat butter and eggs until blended. Beat in cake mix and oats. Refrigerate, covered, 2 hours or until firm enough to roll, though dough will remain fairly soft., Preheat oven to 350°. On a well-floured surface, roll half of dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. round cookie cutter. Place 1 in. apart on parchment-lined baking sheets. Bake until set, 8-10 minutes. Remove from pans to wire racks to cool completely. Repeat with remaining dough., Spread frosting on bottoms of half of the cookies; cover with remaining cookies.
