White Wine-Poached Cod with Creamy Dill Sauce image

Serve with boiled potatoes, a simple green salad, and an ice-cold glass of white wine for a lovely spring meal that reflects the essence of Norwegian cooking.

1/4 cup crème fraîche
1/4 cup chopped fresh dill
1/2 teaspoon freshly squeezed lemon juice (plus more for seasoning)
1/8 teaspoon kosher salt (plus more for seasoning)
3 cups water
1 cup dry white wine
2 tablespoons fresh rosemary leaves
1 bay leaf
1 teaspoon kosher salt
1 1/2 pounds cod fillets (rinsed, cut to fit in a large skillet)

Steps:

  • In a small bowl, stir together the crème fraîche, dill, lemon juice, and salt. Taste and adjust seasonings, as needed. Set aside.
  • In a large skillet over medium-high heat, combine teh water, rosemary, bay leaf, and salt. Bring to a low boil.
  • Add the cod and adjust the heat to maintain a simmer. Cook for about 7 minutes, depending on thickness, until the cod is cooked through and begins to flake. Carefully transfer the fish to a platter. Serve the fish wth the sauce drizzled over top or in a ramekin on the side.

1 lb cod or any other firm white fish (snapper, tilapia, haddock, grouper)
1 onion, sliced into half circles
2 garlic cloves, crushed
3-5 parsley leaves
1-2 dry bay leaves
3-5 peppercorns
4 Tablespoons white wine, plus 1-2 Tablespoons more for the sauce
1 can (14 oz) evaporated milk
½ - 1 teaspoon Old bay seasoning
salt, pepper, to taste
1 Tablespoon butter
1 Tablespoon flour
½ Tablespoon fresh dill, minced

Steps:

  • Season the fish with salt and pepper.
  • Layer the onions on the bottom of the skillet.
  • Add the crushed garlic cloves, fresh parsley leaves, white wine, dry bay leaf and peppercorns.
  • Nestle the fish on top.
  • Pour the evaporated milk over the fish. It should cover the fish almost completely.
  • Sprinkle the Old Bay seasoning and add some salt and pepper to taste to the evaporated milk.
  • Bring it to a boil and reduce the heat to a simmer. Keep the skillet covered and cook on low heat until the fish is cooked through, about 10-15 minutes.
  • You can make this dish in the oven too.
  • Arrange all the ingredients in a deep baking dish the same way you would in a skillet, or put the fish on the bottom and everything else on top.
  • Cover with aluminum foil and place in a preheated 400 degree oven.
  • Bake for 20-25 minutes until the fish easily flakes with a fork but isn't falling apart.
  • Use a slotted spoon to gently take out the fish and spoon some of the delicious liquid over it.
  • OR
  • Strain the liquid through a fine mesh sieve and set is aside.
  • In a skillet or small saucepan, melt butter and add the flour to it.
  • Cook the flour until it's completely incorporated into the butter and starts to turn just a little bit golden.
  • Pour in the white wine, whisking as you add it. Add the reserved poaching liquid. Cook for about 3 minutes, until the sauce thickens.
  • Add fresh minced dill and pour over the fish.

8 (3/4-inch thick) salmon steaks
1 cup chicken broth
1 small onion, thickly sliced
4 sprigs fresh parsley
4 slices lemon
salt and ground black pepper to taste
2 tablespoons butter
2 tablespoons all-purpose flour
4 teaspoons finely chopped fresh dill
1 teaspoon white sugar
¼ teaspoon salt
2 large egg yolks, lightly beaten
2 teaspoons lemon juice

Steps:

  • Rinse salmon and pat dry.
  • Combine chicken broth, onion, parsley, lemon, salt, and pepper in a large skillet. Bring to a boil. Add salmon to the skillet in a single layer. Bring back to a boil. 2 tablespoons unsalted butter
1 strip lemon peel (3 inches)
2 tablespoons all-purpose flour
1/4 cup plus 2 teaspoons fresh lemon juice (about 2 lemons)
1/2 cup whole milk
4 cod fillets (5 ounces each), skinned
1/2 cup homemade or store-bought fish or vegetable stock
Coarse salt
3/4 cup finely chopped fresh flat-leaf parsley, plus sprigs for garnish
2 tablespoons finely chopped fresh chives

Steps:

  • Melt butter over medium heat in a small saucepan. Add flour; whisk until a paste forms. Reduce heat to low; cook, whisking, 2 minutes. Whisking constantly, pour in milk in a slow, steady stream; whisk until incorporated. Whisk in stock. Add 1/2 teaspoon salt, and cook, whisking occasionally, 10 minutes. Remove from heat; let stand 10 minutes to thicken slightly. Stir in parsley and chives.
  • Meanwhile, bring 1 1/2 quarts water, the lemon peel, 1/4 cup lemon juice, and 1/2 teaspoon salt to a boil in a medium saute pan or other wide straight-sided pan. Place fillets in liquid (do not crowd). Return to a boil, then immediately turn off the heat. Let stand until just cooked through, about 10 minutes.
  • Reheat sauce over medium-low heat, if necessary, and add remaining 2 teaspoons lemon juice. Gently lift fillets from liquid with a slotted spatula; place a fillet on each of four plates. Spoon one-quarter of sauce over each serving, and garnish with a parsley sprig.

1 1/2 lbs cod fish fillets
1 cup milk
1 1/2 cups water
1 bay leaf
4 sprigs fresh parsley
2 tablespoons fresh parsley, chopped
4 whole peppercorns
2 whole cloves
4 tablespoons unsalted butter
1/2 teaspoon garlic, minced
3 tablespoons shallots, minced
1/2 lemon, juice of
salt & freshly ground black pepper

Steps:

  • Cut cod fillets into four serving size pieces and place in large pan in one layer.
  • Add the milk and the water to the pan so that the fish is barely covered--if necessary add more water.
  • Add the bay leaf, the parsley sprigs, peppercorns and cloves.
  • Bring to a simmer and cover and cook gently for three to four minutes until fish just flakes--cooking time will depend upon the thickness of the fish--do not overcook.
  • While the fish is poaching, start the sauce by melting one tablespoon of the butter in a saucepan and briefly cooking the garlic and the shallots in the butter.
  • Remove 1/4 cup of the poaching liquid and add it to the sauce, stirring all the while.
  • Bring the sauce to a boil, add the lemon juice and swirl in the remaining butter, one tablespoon at a time.
  • Remove from the heat and add the minced parsley.
  • Taste the sauce and adjust seasoning.
  • Drain the fish and serve it hot with the lemon-butter sauce poured over it.

The cooking technique here yields the most tender flesh you may ever encounter with salmon.

1 small bunch fresh dill
1 whole salmon (wild, if possible), about 6 pounds, cleaned and scaled (or substitute a center-cut section of a larger salmon)
1 tablespoon salt
2 tablespoons sugar
2 teaspoons yellow mustard seeds
1 teaspoon black peppercorns
1 onion, peeled and quartered
3 tablespoons Dijon mustard
2 tablespoons light brown sugar
1 cup sour cream
3 tablespoons white wine vinegar
3 tablespoons chopped dill
1/2 teaspoon salt, or as needed
1 generous bunch dill
2 lemons, cut into wedges

Steps:

  • To poach salmon, begin by placing the small bunch of dill inside cavity of the salmon, and put salmon in a fish poacher or a large roasting pan. (If necessary remove head to fit salmon in pan.) Cover with water, and add salt, sugar, mustard seeds, peppercorns and onion. Place over high heat, and bring to a boil. Turn salmon over, and cook 10 minutes. Turn off heat, and let salmon cool in water for about an hour.
  • To make sauce, whisk together the mustard and brown sugar in a small pitcher. Add sour cream and vinegar, and whisk until smooth. Mix in the chopped dill, and season with salt. Cover, and refrigerate until serving.
  • To serve, remove salmon from poaching liquid and lay on large sheet of parchment or waxed paper. Remove skin from top, gently peeling it away, along with fins. Carefully lift top layer of salmon in one long fillet, removing it from backbone and transferring it to a large platter.
  • Lift backbone off fish in one piece, and pick out any other visible bones. Turn fish over, and remove skin as before. Then place second fillet alongside the first on platter. Arrange leafy sprigs of dill between fillets, and drizzle sauce on top. Scatter lemon wedges around edges of plate. Pass pitcher of sauce separately.
