POACHED SALMON WITH LOBSTER POTATOES AND VEAL GLACE

Steps:
- Melt 1/2 cup of butter in a large pot over medium-low heat. Add garlic, onion, fennel, leek, orange and bell pepper and sweat until soft. Add wine, 3 cups of water and bay leaves and simmer for 20 minutes. Strain, discard the solids and season with salt and pepper. Set aside.
- Boil the potato until soft and pass through a food mill. While still hot, whisk in 6 tablespoons of butter, bit by bit, allowing each to melt before adding the next. Whisk in the creme fraiche, then fold in the lobster, bacon and parsley. Season with salt and pepper. Keep warm in a double boiler, for no more than 15 minutes.
- Heat the broth to a simmer in a pan that will allow the salmon to be completely submerged. Poach until medium rare, about 3 minutes, turning once. Remove from broth and season lightly with salt and pepper. Heat the veal glace.
- Place a large dollop of lobster potatoes in the center of each plate and top with salmon. Drizzle glace around potatoes and garnish salmon with tarragon. Serve immediately.

GINGER POACHED SALMON WITH LIME BASIL CREAM
Steps:
- Halve 1 lime and squeeze the juice into a large straight sided skillet or pot with a lid. Add 6 cups water, the squeezed lime halves, ginger, and peppercorns and bring to a boil over medium-high heat. Reduce heat to a simmer, cover, and cook for 10 minutes to infuse the water with flavor; reduce heat to lowest setting, carefully slide salmon into the water, cover, and poach until fish is just cooked through, 5 to 7 minutes. Remove the fish with a slotted spoon and cool completely before transferring to an airtight container. Add about 1/2 cup poaching liquid to the container to keep the fish moist and chill in the refrigerator until ready to serve.
- Meanwhile, zest the remaining lime and add about 1/2 teaspoon zest to the bowl of a food processor; add the juice from half the lime to the bowl (should be about 1 teaspoon juice). Add the basil leaves, a pinch of salt and a few grinds black pepper and pulse until it begins to turn into a paste. Add the creme fraiche and puree until very smooth. Transfer to a serving bowl and refrigerate until ready to serve.
- To serve, plate the cold salmon with a drizzle of lime basil cream over the top.
TRADITIONAL POACHED SALMON
Steps:
- Drizzle the olive oil over the salmon fillets and season with some sea salt and white pepper. Set aside.
- Fill a high-sided large skillet one-third of the way up with water. Add the wine and lemon halves. Bring to a low simmer, add the salmon and let cook until firm to the touch, 5 to 7 minutes for medium. For well-done salmon, cook for 10 minutes.
- Serve garnished with the lemon wedges and parsley.

- Bring 1 1/4 inches of water to a boil in a large straight-sided skillet. Generously season with salt. Add salmon, skin-side down; return to a boil. Remove from heat, cover, and let stand until salmon is just opaque throughout, 15 to 17 minutes. Use a slotted spatula to transfer salmon to a plate, skin-side up.
- Meanwhile, bring 2 inches of water to a simmer in a large pot fitted with a steamer basket (or a metal colander). Place potatoes in basket, cover, and steam until easily pierced with the tip of a sharp knife, 12 to 15 minutes.
- Whisk together buttermilk and mayonnaise in a bowl, stir in dill, and season with salt and pepper. Remove skin from salmon; flake fish into large pieces. Divide salmon, potatoes, and cucumber among plates; drizzle with dressing, and serve with lemon wedges.

- Pick enough tarragon leaves to measure 1/2 cup (do not pack).
- Chop enough chives to measure 1/3 cup.
- Coarsely chop shallot.
- In a food processor puree tarragon, chives, and shallot with remaining sauce ingredients until smooth and season with salt and pepper.
- Sauce may be made 1 day ahead and chilled, covered.
- Bring sauce to cool room temperature before serving.

- In a deep 10-inch skillet bring wine and water to a simmer, covered.
- Cut salmon into 6 pieces and season with salt and pepper.
- Submerge 3 salmon pieces, skin sides down, in simmering liquid (add hot water if necessary to just cover salmon) and poach at a bare simmer, covered, 8 minutes, or until just cooked through.
- Transfer cooked salmon with a slotted spatula to a platter to cool and poach remaining salmon in same manner.
- When salmon is cool enough to handle, peel off skin and if desired with a sharp knife scrape off any dark meat.
- Salmon may be cooked 1 day ahead and chilled, covered.
- Bring salmon to cool room temperature before serving.
- Assemble:.
- Cut potatoes lengthwise into 1/8-inch-thick slices.
- In a steamer set over boiling water steam potatoes until just tender, 4 to 5 minutes.
- Spoon sauce onto 6 plates and arrange some potatoes in a circle, overlapping slightly, on top of sauce .
- Season potatoes with salt and arrange salmon on top of potatoes.
- Garnish salmon with peas.

SMOKED SALMON AND POTATO TERRINE WITH VEAL DEMI-GLACE

- Place potatoes in a medium saucepan, and fill with water to cover. Bring to a boil, and cook uncovered until potatoes are very tender, about 25 minutes. Drain well, add olive oil and mash coarsely. Set aside.
- Preheat oven to 400 degrees. Have ready an empty 8-ounce can, with label, top and bottom removed, for use as a mold. Coat inside of can with cooking spray. Set can on a baking sheet, and arrange a single layer of salmon evenly across bottom of can. Top with a 1/2-inch-thick layer of potato. Tamp lightly with a spoon to eliminate air pockets, but do not pack down or the salmon layer will be obscured. Add another single layer of salmon, another layer of potato and then a third layer of each. Slowly slide can up to free it from terrine. Return can to baking sheet and repeat to make four terrines.
- Transfer baking sheet to oven, and bake until terrines are hot and lightly browned on top, about 8 minutes. While terrines are baking, place demi-glace in a saucepan over low heat. When demi-glace is warm, add truffle butter, and stir until melted. Season with salt and pepper to taste, and keep warm.
- To serve, drizzle demi-glace across each of four serving plates. Use a wide, stiff spatula to transfer a terrine to each plate. Serve immediately.

- Rinse salmon and pat dry.
- Combine chicken broth, onion, parsley, lemon, salt, and pepper in a large skillet. Bring to a boil. Add salmon to the skillet in a single layer. Bring back to a boil. Reduce heat, cover, and simmer until salmon flakes easily with a fork, 5 to 10 minutes. Remove salmon from the skillet and keep warm.
- Strain cooking liquid and reserve 2 cups.
- Melt butter in a small saucepan over medium heat. Whisk in flour, dill, sugar, and salt. Cook until bubbling, about 1 minute. Add reserved cooking liquid. Cook, whisking constantly, until sauce begins to thicken.
- Slowly stir 1/2 cup sauce into the egg yolks. Pour back into the saucepan. Cook, stirring constantly, until thick, 1 to 2 minutes. Do not boil. Stir in lemon juice. Spoon sauce over salmon. Serve remaining sauce alongside.

- Pour water and wine into a large pot. Add 4 lemon slices, peppercorns, dill, and bay leaf; bring to a boil. Reduce the heat until the liquid is calm with tiny bubbles rising to the surface. Allow the mixture to simmer, uncovered, for 20 minutes.
- Place 1 salmon fillet, skin-side down, into the pot. Cover and poach the salmon to desired degree of doneness, 12 minutes for pink interior to 17 minutes for fully-cooked. POACHED VEAL TONGUE WITH POTATO, PARSNIP, AND SCALLION MASH
Poached veal tongue is one of the ingredients in the classical Italian dish bollito misto, boiled mixed meats. It is one of my favorite dishes, but even without the other four or five meats I enjoy the poached tongue. The brining somewhat cures the meat and makes it retain the lively pinkish color throughout.

- To brine the tongue, mix the salt with the water in a large bowl and submerge the tongue in it. Refrigerate for 6 hours or overnight.
- Bring the ingredients for the poaching liquid to a boil in a pot large enough to accommodate the tongue later, and let boil vigorously for 20 minutes.
- Remove the tongue from the brine, and lower it into the boiling broth. Cook, partially covered, at a lively simmer for 1 1/4 hours, then turn off the heat and leave the tongue submerged in the hot liquid for at least 1/2 hour. While the tongue is resting, get the potatoes and parsnips going (recipe follows).
- Fish the tongue out of the broth, and as soon as it is cool enough to handle, remove the peel (the warmer the tongue, the easier that will be). Following the photographs, start at the butt end to remove the peel; once you have gotten started, it should come off quite easily in big pieces. Trim away any gristle and fat at the butt end, and when ready to serve, cut into slices.
- Serve the tongue warm with the potato, parsnip, and scallion mash and at least one of the recommended condiments. The grated horseradish should be sprinkled on while the tongue is still warm, to infuse the slices with its sharp flavor. Leftover tongue is delicious cold, with the suggested sauces or others in this chapter. It makes a great sandwich with some mustard.
- Peel the baking potatoes, cut them in half, and submerge them in a pan of cold water to cover. Bring to a boil and cook 20 minutes, then add the parsnips and cook another 20 minutes, until both are tender. If the parsnips are getting too soft, fish them out of the pot with a wire sieve. When both the potatoes and parsnips are done, put them through a ricer, or strain and mash them in a bowl, with the butter and salt. Fold in the scallions. If the mash has to wait a little while before being served, put the bowl in a skillet with a small amount of boiling water, and simmer to keep warm.
