1/2 pound Italian turkey sausage links, casings removed
1/2 pound lean ground beef (90% lean)
1 package (8.8 ounces) ready-to-serve Spanish rice
4 large poblano peppers
1 cup enchilada sauce
1/2 cup shredded Mexican cheese blend
Minced fresh cilantro, optional

Steps:

  • Preheat broiler. In a large skillet, cook turkey and beef over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain., Prepare rice according to package directions. Add rice to meat mixture., Cut peppers lengthwise in half; remove seeds. Place on a foil-lined 15x10x1-in. baking pan, cut side down. Broil 4 in. from heat until skins blister, about 5 minutes. With tongs, turn peppers. , Fill with turkey mixture; top with enchilada sauce and sprinkle with cheese. Broil until cheese is melted, 1-2 minutes longer. If desired, top with cilantro.

GRILLED STUFFED POBLANOS

4 poblanos, roasted, seeded, skins removed
2 tablespoons butter
1 small onion, diced or 1/2 large onion
1 small red bell pepper, diced
1/4 cup pepita seeds
1 small tomato, diced
1 cup Yellow Cooked Rice, recipe follows
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons freshly chopped cilantro leaves
1 cup shredded Monterey jack cheese
1/2 cup sour cream
2 cups water
Pinch salt
1 cup yellow rice

Steps:

  • On a preheated grill roast your poblanos for about 10 minutes or until the skins begin to blister and char. Place into a bowl and cover with plastic wrap for about 5 minutes. In a medium skillet add the butter and saute the onion and red bell pepper until soft for about 5 minutes. Once cooked place into a medium bowl. In the same cleaned skillet toast the pepita seeds for about 3 minutes. Place into bowl with onions, peppers, diced tomato, cooked rice, salt, pepper and cilantro. Mix well. Carefully remove skins from poblanos. With a paring knife or your fingernail (the poblano with be tender), make a slit in the poblano from bottom to top. Pull and discard the seeds and inner membranes, being careful not to tear the rest of the poblano. With a spoon stuff poblanos with rice mixture. Top with cheese. Cover a section of the grill with foil and place the poblanos back on the grill for about 5 to 10 minutes until cheese melts. Top with a dollop of sour cream.
  • Boil 2 cups salted water. Add rice, cover and lower heat. Cook for about 15 minutes. Fluff with fork when done.

1 cup stone ground yellow cornmeal
1/2 cup all-purpose flour

1/2 cup buttermilk
1 egg
8 ounces pepper Jack cheese, shredded
1 cup frozen corn kernels, thawed
1/2 cup diced and seeded roasted poblano peppers

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a 12-inch cast-iron skillet on the stovetop over medium heat. Add 1/4 cup butter and allow to melt while you begin to prepare the batter. Reserve the melted butter for later use, carefully wipe out the pan and place in the oven to heat.
  • In a large bowl, combine the cornmeal, flour, baking powder, salt and baking soda. In another bowl, combine the milk, buttermilk, egg and melted butter. Make a well in the dry ingredients and gradually incorporate the wet mixture, stirring until the lumps are dissolved. Fold in the cheese, corn and poblanos.
  • To bake the cornbread, carefully remove the skillet from the oven and add the remaining 2 tablespoons butter so it sizzles. Coat the pan with the butter and quickly pour the cornbread batter into the skillet. Place the skillet in the oven and bake until golden brown, about 20 minutes.
  • Remove from the oven and let cool slightly before slicing. Serve warm.

4 bacon strips, diced
1 medium onion, chopped

1 (4 ounce) can chopped green chilies
2 teaspoons taco seasoning mix
4 ounces cream cheese
½ cup salsa
2 green onions, chopped

  • Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in green chiles and taco seasoning. 1 Tbsp. roasted ground cumin
1 tsp. chili powder
1 beef skirt steak (1 lb.)

2 onions, cut into thick wedges
1 lime, cut into 4 wedges

Steps:

  • Heat greased grill to medium-high heat.
  • Mix dressing, lime zest, juice, garlic and spices until blended; reserve 1 Tbsp. mixture. Pour remaining mixture over steak in shallow dish; turn to evenly coat both sides. Refrigerate 1 hour to marinate.

1 pound tomatillos, papery skins removed
2 garlic cloves, unpeeled and lightly smashed
1 onion, cut into eighths
1 jalapeño, halved, seeds and veins removed
1 1/2 tablespoons olive oil
1/2 cup cilantro leaves
1 tablespoon lime juice, or to taste
1/2 teaspoon kosher salt, or to taste
8 medium poblano peppers
3 medium tomatoes, roughly chopped
3 garlic cloves, chopped
1 small onion, chopped
1 tablespoon olive oil
2 pounds ground beef
2 teaspoons dried oregano
1 1/2 teaspoons kosher salt

  • Heat oven to 375 degrees. Toss tomatillos, garlic, onion and jalapeño with oil. Arrange on a baking sheet. Roast until vegetables are golden and cooked through, about 20 minutes. Discard garlic skins. Transfer vegetables to blender. Add cilantro, lime juice and salt; puree until smooth. Taste, and adjust seasoning, if necessary. Set aside.
  • Meanwhile, cut poblanos in half, lengthwise, slicing through stems; remove and discard seeds and veins from pepper cavities.

  • Heat oil in a large skillet over medium-high heat. Add beef and cook, breaking it up with a fork, until browned, about 7 minutes. Stir in oregano, 3/4 teaspoon salt and pepper, and cook 1 minute. Pour in tomato sauce, broth, sugar, cinnamon stick, remaining 3/4 teaspoon salt and cloves. Simmer until most, but not all, of the liquid has evaporated, about 15 minutes. Stir in almonds.
  • Fill cavity of each pepper with meat mixture. Transfer peppers to a baking dish, cut side up. Bake until peppers are soft, 30 to 40 minutes. Serve hot, topped with salsa verde.

3 pound(s) round steak or flank steak, or even chicken breasts. if you are using chicken you need 4 large breasts
4 large poblano peppers about 4 inches long
1 tablespoon(s) olive oil
1/3 cup(s) onion, chopped
2 clove(s) garlic, minced
1 ounce(s) pepper jack cheese, 2 slices cut in half, plus extra for garnish
5 ounce(s) cream cheese
3 ounce(s) chorizo, casing removed
2 teaspoon(s) fresh lime juice
1 tablespoon(s) fresh cilantro, chopped, or to taste
1/2 teaspoon(s) each, salt and pepper
1 1/2 cup(s) salsa verde (green salsa), plus extra to eat with later

Steps:

  • Put olive oil in pan and saute the onion until translucent, add garlic, cook a minute more, add chorizo, and cook until cooked through.
  • In a big bowl put the cream cheese, dump the chorizo mixture over and stir to combine. Stir in cilantro, lime juice, salt and pepper
  • Remove stems from poblanos, (you cold use anaheims if you like they are not so spicy). Slit pepper from top to bottom and remove seeds and veins. We like spicy, so I just leave them in.
  • Line each pepper with a half slice of pepper jack cheese, then stuff with 1/4 chorizo mixture.
  • You want 4 pieces of steak each big enough to go around a pepper when pounded out. Maybe from 3/4 to a pound.
  • Put each piece of steak in a zip lock bag, and pound out until big enough to go around the pepper.
  • Put a stuffed pepper in the middle of your piece of steak, seam side down.
  • Roll steak around the pepper, secure with butchers twine. At this point you can cook, or cook the next day.
  • Put a disposable slow cooker liner in your cooker, put steaks in, and pour the salsa over.
  • Cover, cook on low for 6 to 8 hours
  • We like this with yellow rice and sour cream and diced pepper jack cheese on the side.
