POLKA DOT MEATLOAF
String cheese is the secret ingredient in this flavorful meatloaf that's ready to bake in 10 short minutes.

Steps:
- Heat oven to 375°F. In large bowl, mix ground beef, 1/4 cup of the ketchup, the bread crumbs, Worcestershire sauce, salt and egg. Press 1/3 of mixture in bottom of ungreased 8x4-inch loaf pan.
- Place 2 pieces of the string cheese lengthwise and evenly spaced over beef mixture, with one end of the cheese about 1/2 inch from one end of pan. Cut 2 pieces of string cheese in half crosswise. Place 2 half pieces on beef mixture so cheese extends full length of pan. Press cheese into beef mixture.
- Top with half of remaining beef mixture; pat evenly in place. Top with remaining string cheese in 2 rows; press in. Press remaining beef mixture over cheese. Press ends and edges of beef mixture well to seal in cheese; smooth top.
- Bake 45 minutes. Meanwhile, in small bowl, mix remaining 1/4 cup ketchup, the mustard and brown sugar.
- Remove meatloaf from oven. Spoon juices from meatloaf; spoon ketchup mixture evenly over top.
- Return to oven; bake 30 to 45 minutes longer or until thermometer inserted in center of meatloaf reads 160°F. Let stand 15 minutes before cutting into slices.

PANTRY MEATLOAF
This is our favorite meatloaf recipe. I love this recipe because I can always keep the ingredients in my pantry for an emergency meal. I use ground turkey but you can use any ground meat you like. Also, if you don't have onion soup mix, add 1 medium onion instead. If you want you can use store-bought bread crumbs in place of the toast slices.

- Preheat the oven to 400 degrees F (200 degrees C).
- Roll toast with a rolling pin until crumbled; place in a large bowl. Add turkey, condensed soup, eggs, soup mix, Worcestershire sauce, salt, and pepper. Mix with your hands until well combined. Transfer mixture to a loaf pan and top with ketchup.

POLKA DOT QUICK BREAD
I adopted this recipe from Recipezaar, and I'm very proud to be it's new owner. I made a few changes from the original recipe and I think my version is perfect! This quick bread is great for breakfast on the go or as a late night snack with a glass of milk. I plan on making these next Christmas for gifts!

- Preheat the oven to 350 degrees F.
- Spray a 9 X 5-inch loaf pan with non-stick cooking spray; set aside.
- Coarsley chop the cranberries and set aside in a small bowl.
- In a medium bowl, combine the milk, egg, melted butter (cooled), and orange juice with a whisk; set aside.
- Sift the flour, sugar, baking powder, and salt into a large bowl.
- Add the chopped cranberries, cheese and nuts to flour mixture and toss to coat cranberries.
- Add the milk mixture to the flour mixture and stir until just moistened.
- Pour into the prepared loaf pan and bake for about 1 hour until a wooden pick inserted in the center comes out clean.
- Cool in the pan on a rack for 10 minutes, then remove from the pan. (It is important to let it cool, otherwise the bread might stick as you turn it out!)
- Cool to room temperature on the wire rack before slicing.

- Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
- In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
- Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
- Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
- Slice and serve.
