POLLO ENTOMATADO
Este receta pollo entomatado fácil y sencilla esta llena de sabor. No necesitas muchas especies o hierbas de olor para crear un guisado memorable! En lo personal me encanta aprovechar las verduras de acuerdo a la temporada del año, y en este caso los tomates están en su punto.

- Sazona el pollo con sal y pimienta.
- Calienta el aceite a temperatura media alta en una olla grande, que tenga tapa. Ya que este caliente el aceite, agrega las piezas de pollo con la parte de la piel de pollo hacia abajo. Freír el pollo, volteando por lo menos una vez por cada lado para que se dore. Este paso tarda unos 10 minutos.
- Reduce la lumbre a temperatura media, y agrega la cebolla picada y el ajo. Cocina por unos tres minutos hasta que la cebolla este transparente.
- Agrega los chiles cortaditos y continua cocinando por 5 minutos más. Asegurate revolver bien para que no se pegue nada a la parte de debajo de la olla, revolviendo con una cucharada de madera.
- Mezcla los tomates ya picaditos a el resto de los ingredientes cocinandose en la olla, y cocina por otros 5 minutos. Agrega el knorr-tomate disuelto en la media taza de agua tibia y sube la temperatura a media alta. Una vez que empiece a hervir, reduce la flama. Verifica la sazón para ver si necesita más sal a tu gusto. Ponle la tapa a la olla, y deja cocinar a fuego lento por unos 25 a 30 minutos o hasta que el pollo este cocido y tierno.

ENTOMADO DE POLLO (TOMATILLOS AND CHICKEN)
This is a delicious recipe I found on a blog. Traditionally, the meat is beef or pork, but this recipe uses chicken. Tomatillos look like green tomatoes, but with a husk on the outside. They range from the size of a cherry tomato to the size of a clementine. You want to buy tomatillos that are firm to the touch, bright green, with the husk still close to the tomatillo. Prep time is inactive.

Steps:
- Sprinkle chicken thighs on both sides with lemon juice, salt, and pepper. Marinate in fridge for about 2 hours.
- Heat olive oil in a large skillet or sauté pan over medium heat. Sauté garlic and onion.
- Add chicken, skin side down. Cook for 4-5 minutes or until light brown. Turn over and cook 4-5 more minutes.
- If you must, drain the juice, but I highly recommend you don't so you keep the flavor. Add the tomatillos, peppers, and oregano. Cover and simmer for 20 minutes.
- Season with additional salt and pepper if desired, and serve.

- Combine the oregano, cumin seeds and chile piquin to a mortar and crush with pestle. It will be slightly coarse, set aside.
- To a large pot, add the guajillos, chile de arbol, tomatoes and tomatillos. Cover with water and bring to a rapid boil. Reduce heat to simmer and cook for 10 minutes. Let cool for 15 minutes. Drain all but 1 cup of the liquid. Transfer to the blender. Season, to taste, with salt and pepper. Blend on high until smooth. Set aside.
- At the same time, in another pot, add the chicken, whole section of onion, whole cloves of garlic, bay leaves, 1 teaspoon of peppercorns, 10 cups of water and salt to taste. Bring up to a boil, skimming the foam off the top as needed. Reduce to a simmer, cover partially and cook for 40 minutes.
- Remove chicken from the pot and set aside. Strain out the solids from the broth and reserve all of the chicken broth.
