Baked Goat Cheese Bites make with pre-made phyllo cups.

15 phyllo shells
3 tbsp pomegranate seeds
fresh thyme
2 tbsp honey
3 ounces goat cheese

Steps:

  • Preheat oven to 350 degrees.
  • Place phyllo shells on ungreased baking pan. Scoop 1 teaspoon of goat cheese into each shell. Bake for 3-5 minutes.
  • Remove from oven and top each with about 5 pomegranate seeds, a drizzle of honey and some fresh thyme.

Whipped Goat Cheese Pomegranate Bites image

These beautiful whipped goat cheese pomegranate bites are made in less than 30 minutes and are the perfect stunning holiday appetizer. Store bought pie crust is cut out and baked into little flakey cracker rounds and topped with honeyed whipped goat cheese, pomegranate seeds and a sprinkling of honey and rosemary. You will love this new quick and easy holiday appetizer!

Number Of Ingredients 10

1 Pillsbury refrigerated pie crust, unrolled
1/4 cup extra virgin olive oil
Fresh cracked pepper
4 ounces goat cheese
2 tablespoons honey, divided
3 teaspoons finely minced fresh rosemary, divided
1 teaspoon lemon zest
1 teaspoon grated garlic
1-2 tablespoons heavy cream
Pomegranate arils

Steps:

  • Preheat oven to 450 degrees and line a baking sheet with parchment paper, set aside. Using a small 3-inch cooking cutter cut out little round in your pie crust. Cut out as many little rounds as you can get out of your pie crust - about 24 rounds. Lay your pie crust rounds onto the prepared baking sheet. Brush each round with olive oil and sprinkle each one with cracked pepper. Using a fork poke each round a few times so it does not puff up too much. Bake for 5 minutes or until they are golden brown. Remove from the oven and let cool. While the pie rounds are cooling in a bowl add goat cheese, 1 tablespoon honey, 1 teaspoon minced rosemary, lemon zest, grated garlic and 1 tablespoon heavy cream. Using a mixer blend together until whipped and easily spreadable. if it's too thick add a bit more heavy cream until you have reached desired texture. Spread the whipped goat cheese onto the cooled pie rounds, top with a few pomegranate arils, a sprinkling of the remaining rosemary, a drizzle of the remaining honey and a few cracks of black pepper.

12 frozen phyllo shells
4 tablespoons goat cheese (chevre)
1/2 cup pomegranate arils
2 teaspoons honey
2 tablespoons fresh thyme

Steps:

  • Preheat oven to 350°F degrees.
  • Fill each phyllo shell with about 1 teaspoon of goat cheese each. Top with just a pinch of thyme and a drizzle of honey (about 1/8 teaspoon of honey per cup, just eyeball it). Bake for 6-7 minutes.
  • Remove from oven, top each cup with another pinch of thyme and about 1 teaspoon of pomegranate arils. Serve warm or at room temperature.

150g pack soft, rindless goat's cheese
250g tub ricotta
50g pomegranate seeds, from a tub
½ small bunch chives , snipped
1 tbsp clear honey
2 tsp red or white wine vinegar
loaf of crusty bread , to serve

Steps:

  • Mash the goat's cheese and ricotta together in a bowl, then use a spatula to roughly spread over a large plate. Scatter with the pomegranate seeds and chives and set aside until ready to serve.
  • Stir together the honey and vinegar, then as you're about to serve, drizzle over the plate. Enjoy with crusty bread.
