POOR MAN'S LOBSTER

This way of preparing Halibut makes it taste just like lobster, especially when dipped in melted butter. The texture is smooth and tender.

1/2 cup sugar
1/4 cup salt
1 pound halibut
1/2 cup butter ((sweet cream works great))
1 lemon

Steps:

  • In a medium to large pot bring 2 quarts of water, sugar, and salt to a boil.
  • Cut halibut into 2-3 large pieces (so it cooks faster) and add to water.
  • Boil for about 10 minutes or until halibut is nice and flaky.
  • In the meantime, melt butter in a pot, but do not boil.
  • Remove halibut from water, squeeze a little fresh lemon on it and serve with melted butter (I like to completely submerge my halibut in the melted butter, much like you would do with lobster).

1 lb frozen haddock
2 cups water
1 tablespoon vinegar
1 teaspoon Old Bay Seasoning or 1 teaspoon lemon pepper
melted butter

Steps:

  • Combine first four ingredients put in a large sauce pan.
  • Bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Drain liquid.
  • Serve with melted butter.

I grew up Catholic, so haddock on Fridays during lent was a tradition. This was one of my favorite ways of having it, and it is so easy. Lobster tail is my favorite food, and although this is not as fantabulous as lobster tail, it will give you that fix when you need it for a lot less $$$! It is so good!

2 lb haddock, fresh or thawed (if frozen) - i always use icelandic
2 Tbsp old bay seasoning
2 Tbsp vinegar (plain old white)
1 can beer (i use light)
salt & pepper
lemon wedges
butter

Steps:

  • 1. So easy. Mix beer with Old Bay, vinegar, & some salt & pepper in Dutch Oven or other large saucepan. Place haddock over top. Pour about a beer can full of water over top of haddock -- just enough to cover.
  • 2. Turn heat to boil & boil covered for 20 minutes over med heat.
  • 3. Remove haddock with large spatula & place on serving plate. Squeeze lemon juice over top. Serve with melted cups of butter. (Don't be alarmed if the haddock doesn't look beautiful when you take it out. Inside it's all nice & white & flaky).
  • 4. Just as I do w/ lobster tail, I like to flake the haddock pieces & then let them sit in my melted butter for a minute as I eat. Enjoy!

1 cup butter, melted
1 teaspoon kosher salt
1/2 teaspoon pepper
1/8 teaspoon paprika
fresh parsley sprig, for garnish
lemon slice, for serving

Steps:

  • Preheat oven to 375°.
  • Arrange fish in a shallow casserole; pour half the melted butter over the fillets.
  • Sprinkle with salt, pepper, and paprika.
  • Place the fish in the oven and bake, uncovered, basting occasionally, until the fish flakes with fork, about 15-20 minutes.
  • Garnish with parsley; serve with lemon slices and the remaining melted butter for dipping.

1 lb haddock
2 qt water, boiling
2 medium onions, quartered
2 stick celery, cut in big slices
1/4 c white vinegar
1 tsp old bay seasoning
1 tsp salt

Steps:

  • 1. Cut fish into squares. Put all ingredients except fish in pot and bring to a boil.
  • 2. After water comes to a boil, drop haddock into water. After water comes to a boil again, cook 12 minutes and lift out. Pour melted butter over and serve.

6 (6 oz) cod, haddock or pollock, thawed if frozen
6 c water
1 c sugar
2 Tbsp salt
1 c butter, melted, divided
Paprika

Steps:

  • Mix the water, sugar and salt together in a 2 qt pan, bring to a boil. Remove from the heat and add the fish fillets. Make sure they are completely covered. Cover and let sit for 5 minutes if fillets are an inch or more thick, 3-4 minutes if less than an inch thick. Remove with slotted spatula, drain on paper towels and pat dry. Preheat broiler (spray broiler pan or cookie sheet with non-stick spray). Pour 1/2 c of butter into a bowl. Dip each piece of fish, turning to coat thoroughly. Place fish on broiler pan or cookie sheet and pour the butter from the bowl used for dipping on top of the fish. Sprinkle fish with paprika. Broil 8 minutes for each inch of thickness. Use remaining 1/2 c butter as to dip fish in.
