POOR-MAN'S STEAK (IE: STUFFED HAMBURGER)
This poor-man's steak is just a hearty stuffed hamburger patty. I've grilled onions and peppers and stuffed them into a hamburger patty with cheese. The result is delightful and delicious. #TexasHomesteader

Steps:
- Grill the onions, bell peppers & jalapenos on a griddle coated with bacon grease & set aside.
- Season ground beef with 1 teaspoon salt, 1/2 teaspoon of pepper & 1/2 teaspoon onion powder.
- Separate the 2 lbs of ground meat into sections of just under 1/4 lb each, resulting in 10 halves (5 burgers).
- Flatten meat sections & add the sautéed peppers & onions to the middle of half the patties. Add a small cube of cheese on top of the sautéed veggies.
- Fry each side until done - about 5-6 minutes each side.
- Serve them on a bed of fried potatoes and ladle on brown gravy.

- In a large bowl, combine water, cracker crumbs and salt; add beef and mix well. Press into a 15x10x1-in. baking pan lined with waxed paper. Cover and refrigerate overnight. , Cut the meat into 12 squares. Coat each square lightly with flour. In a large skillet, cook over medium heat in oil, a few pieces at a time, until a thermometer reads 160° and juices run clear; drain. , Remove waxed paper from the baking pan; spread the soup in bottom of pan. Place meat squares in a single layer over soup. Bake, uncovered, at 350° for 10-12 minutes or until heated through; Spoon some soup over each meat square.

AMISH POOR MAN'S STEAK
First had this dish at an Amish church in rural Ohio. I will never forget the delicious smell of that church kitchen! After a little questioning, a kind woman gave me the recipe. Great for a plan-ahead meal.

- Mix ground beef, milk, saltine cracker crumbs, onion, salt, and black pepper in a bowl. Shape mixture into a narrow loaf and place onto a baking sheet; cover and refrigerate 8 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cut loaf into 1-inch-thick slices and sear the 'steaks' in the hot skillet until browned, 2 to 3 minutes per side. Insides will still be pink. Arrange slices in a roasting pan. Spread mushroom soup over steaks.
- Bake steaks in the preheated oven until mushroom soup is bubbling and meat is no longer pink inside, about 1 hour. An instant-read meat thermometer inserted into the center of a meat slice should read at least 160 degrees F (70 degrees C).

- 1. Mix all the ingredient together. Then press into a large flat pan. Cover pan with foil or plastic wrap. Let this set overnight in the refrigerator.
- 2. Preheat oven to 325 degrees. When ready to bake cut in squares, dip each piece in flour and brown in a skillet with a little oil in it. Then put the browned pieces in a casserole.
- 3. Make gravy by combining 1 can cream of mushroom soup mixed with 1 can water. Pour gravy mixture over meat pieces and bake slowly (325 degrees) for 2 hours or until meat is done.
- 4. Grandma always served these with mashed potatoes and hot fresh yeast rolls.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. - In a large bowl, use your hands to gently combine ground beef, cracker crumbs, water, salt, onion powder and pepper. Shape into 4-6 equal-size patties, using your fingertips to pat the middle of the patties slightly thinner than the outer edge (making a “dimple” in the middle of each patty). Place the patties on the prepared tray. Refrigerate for at least 1 hour, or overnight.
- Heat a pat of butter and about a teaspoon of oil in a large skillet or griddle over medium-high heat. Fry the patties until browned on both sides (about 3 minutes per side). Don’t worry about cooking the patties all of the way through, because they will finish in the oven.
