Steps:
- Line a lightly sprayred cookie sheet with saltines - cover the whole surface breaking them to fit if necessary. Melt two sticks of butter with one cup of brown sugar. Cook at medium heat until it starts to carmelize and get a little thick. Poor over the saltines. Spread around to cover all saltines. Poor the bag of chocolate chips over that and let it sit for 5 minutes. Then use a rubber spatula to spread the softened/melted chips all over the saltines. Place in the refrigerator for at least an hour and a half. Take out and use a spatula or your hands to break it up into small pieces - all the pieces will be oddly shaped - similar to peanut brittle. Keep cold and be prepared to try and control yourself - it is a little addictive!

POORMAN'S TOFFEE
Easy and Yummy...though a bit odd sounding when you read the recipe. I haven't made it in years, so the times are estimated. But I remember it being pretty quick to make besides the chilling. Chilling time is included in prep time.

POOR MAN'S TOFFEE
This toffee/cookie/brittle type of treat is great to whip up in just minutes with almost nothing in the pantry! I guess that's why it's called Poor Man's Toffee! You can personalize it to suit your taste. Some people sprinkle chocolate chips on top as a chocolate covered toffee. (I detest touching chocolate chips so I never use them!) (I know--that's really weird--but I think they have the texture of thumb tacks in my mouth!!!) You can also use chocolate graham crackers but I think they are hard to tell if they're burning! Ha!

Steps:
- Line a 13 X 9 or close to that size, pan with foil. (I use the non-stick type and it can be reused over and over).
- Place graham crackers on the foil with entire bottom covered in crackers. If you have any space, just break some crackers and fill it in with the broken pieces.
- Combine butter, sugar in a saucepan; cook until it's melted about 2 minutes. Add nuts. Remove from stove and set aside.
- Pour buttery mixture over the crackers and spread to sides. Don't worry if it's thin in spots--when it heats it will spread evenly. Bake at 350 degrees for 10 minutes--my oven bakes fast so I watch it at 8 minutes! It shouldn't be very brown--just golden brown. Remove and cool. (I put mine outside on the deck or you can put it in the fridge to hurry it up) Break into pieces and watch it disappear fast!
POOR MAN'S PIE
This is an awesome recipe that I got from my coworker. It can be modified in many ways, including for the slow cooker. It's a simple meal of things you often already have on hand that really sticks to the bones, and it can also be a fun way to use up some leftovers.

POOR MAN'S COOKIES
In the 1930s, producers of a popular radio program called Jake and Lena invited listeners to write in for this recipe. My mother changed the name from Jake and Lena Cookies to Poor Man's Cookies because they contained no eggs, milk or nuts. Despite the name, the cookies are rich in taste!
