Porcini With Shrimp and Jamon Serrano (Serrano Ham) image

Jamon serrano is from Spain and is similar to Italian prosciutto. If you can't find it, use prosciutto. This makes a nice addition to the Tapas menu, or as a light supper. Serve with crusty bread.

2 tablespoons olive oil
1 garlic clove, peeled and chopped
12 ounces porcini mushrooms, sliced (fresh)
salt & freshly ground black pepper, to taste
16 medium raw shrimp, peeled (tails can be left on)
4 tablespoons dry white wine
3 ounces jamon serrano, diced
5 -6 sprigs fresh flat-leaf parsley, chopped

Steps:

  • In a large frying pan, heat oil over medium heat and add garlic. Cook about 1 minute and add porcini; saute briskly. Season with salt and pepper.
  • When mushrooms start to turn brown, add shrimp and wine. Cook until shrimp have turned pink and wine has reduced, about 3 minutes.
  • Dived mixture between 4 warmed plates. Scatter diced ham and parsley over top and serve.

4 ripe tomatoes, chopped
1 garlic clove, finely chopped
3 tablespoons olive oil
salt
pepper
20 slices baguette
5 -6 slices serrano ham

Steps:

  • Mix together the chopped tomatoes, garlic glove, olive oil, salt and pepper. Keep in the fridge until needed.
  • To serve, toast 20 slices of baguette. Spoon a little tomato topping on to each piece of toast. Tear 5-6 slices of jamón serrano into pieces and put one piece on each slice of bread.

  • In a large heatproof measuring cup, soak the porcini in the boiling water until softened, about 15 minutes. Reserve the mushrooms and their soaking liquid separately. In a small bowl, mix the mascarpone with 1/4 cup of Parmesan and the garlic.
  • Meanwhile, in a medium saucepan, bring the chicken stock to a boil. Cover the stock and keep at a gentle simmer over low heat.
  • Heat the olive oil in a large saucepan. Add the scallions, bacon and rosemary and cook over moderate heat, stirring, for 5 minutes. Stir in the rice until coated with the oil. Add the wine and boil until almost evaporated, about 2 minutes. Pour in the mushroom soaking liquid, stopping when you reach the grit at the bottom of the measuring cup. Add 1 cup of the stock and cook over moderate heat, stirring constantly, until absorbed. Continue adding stock, 1 cup at a time, stirring until absorbed. The risotto is done when it is creamy and the rice is al dente, about 25 minutes total cooking time. Stir in the mascarpone and the porcini. Season the risotto with salt and pepper.
  • Melt the butter in a medium skillet. Add the ham; toss over moderate heat until warm. Spoon the risotto into bowls, top with the ham, sprinkle with the parsley and serve with the remaining 1/4 cup of Parmesan.
