1 large pork tenderloin (1 1/4 to 1 1/2 pounds), trimmed
3 tablespoons packed light brown sugar
1 teaspoon dried sage
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
2 sweet potatoes (about 1 1/2 pounds), cut into 1/2-inch wedges
1 red onion, cut into 1/2-inch wedges
3 tablespoons extra-virgin olive oil
Pinch of cayenne pepper
1 cup low-sodium chicken broth
2 teaspoons dijon mustard
2 tablespoons chopped fresh chives

Steps:

  • Position a rack in the upper third of the oven; preheat to 450 degrees F. Pierce the pork all over with a fork. Combine the brown sugar, sage, garlic, 3/4 teaspoon salt and a few grinds of black pepper in a bowl; rub all over the pork.
  • Toss the sweet potatoes and onion with 2 tablespoons olive oil and the cayenne on a baking sheet; season with salt and black pepper. Roast, tossing once, until golden, 20 minutes; set aside.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the pork and cook, turning, until golden, 5 minutes; transfer to the baking sheet with the vegetables (reserve the skillet). Roast until the sweet potatoes are tender and a thermometer inserted into the center of the pork registers 145 degrees F, 11 to 13 minutes.
  • Meanwhile, add the broth to the skillet; bring to a simmer over medium heat, scraping up any browned bits with a wooden spoon. Stir in the mustard, chives and a few grinds of black pepper. Slice the pork; drizzle with the pan sauce. Serve with the roasted vegetables.

1 medium white onion, quartered
2 cloves garlic
1/2 chipotle in adobo sauce, plus 1 tablespoon of the sauce
2 tablespoons vegetable oil
1 large pork tenderloin, trimmed and cut into 1-inch chunks (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
1 tablespoon chili powder
One 8-ounce sweet potato, peeled and cut into 1/2-inch chunks
2 cups low-sodium chicken broth
1 tablespoon pickled jalapenos
1 cup 2 percent Greek yogurt
1/4 medium head red cabbage
1 medium Haas avocado
1 lime
1/2 cup loosely packed fresh cilantro
Eight 6-inch corn tortillas, warmed

Steps:

  • Puree the tomatoes, onions, garlic, chipotle and adobo sauce in a food processor until completely smooth.
  • Heat the oil in a large Dutch oven or pot over medium-high heat until nearly smoking. Add the pork in a single layer, season with 1 teaspoon salt and 1/2 teaspoon pepper and cook, undisturbed, until beginning to brown, about 2 minutes. ¼ cup Dijon mustard
3 pounds pork loin, cut into 1-inch cubes
3 tablespoons olive oil
1 sweet onion, chopped

1 ⅓ cups chicken broth
1 cup dry sherry
3 pounds sweet potatoes, cut into 1-inch cubes
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a large casserole dish or Dutch oven with cooking spray.

2 tablespoons sherry
3/4 cup pineapple juice
1/2 teaspoon dry ground ginger

1 pound pork tenderloin, cut into a 1/2 by 3-inch julienne
1 medium yellow onion, peeled and cut into 1/4-inch julienne
1 large sweet potato (about 1 1/2 pounds), peeled and cut into 3/8 by 3-inch julienne
1 large sweet red pepper, ribs, and seeds removed, cut into 3/8 by 3-inch julienne
1/2 pound snowpea, trimmed
4 scallions, trimmed and sliced into 1/4-inch diagonals

Steps:

  • In a small bowl, mix cornstarch and brown sugar together. Then add tamari, sherry, pineapple juice, ginger, and granulated garlic, and mix well. Set aside.
  • In a large saute pan, heat oil over medium high heat. Saute pork, browning on all sides. When browned, remove with slotted spoon and set aside. In same pan and oil, saute yellow onion until golden brown. Add sweet potatoes and sweet peppers to sauteed onions and continue to saute an additional 3 to 4 minutes, until vegetables begin to soften. Add additional oil if necessary.
  • Add sauteed pork and snow peas to sauteed vegetables in pan. Stir cornstarch mixture to blend and pour over pork and vegetable mixture. Cook over medium heat stirring frequently, until sauce thickens, becomes glossy, and coats the pork and vegetables. Add scallions and toss to combine.
  • Serve over cooked white rice.

2 apples, peeled, cored and sliced
3 ounces frozen apple juice concentrate, thawed

Steps:

  • Wash and peel the two sweet potatoes. Cut the potatoes into rounds and keep covered with water to prevent them from browning until ready to use.
  • Wash and peel the two apples. Core and cut the apples into slices.

This is one of my daughter's favorite meals. We use chicken, the original recipe called for pork shoulder. This freezes very well. For an even quicker dinner, precook and freeze the rice in a separate baggie. If making and serving on the same night. Allow 45 minutes for the meat to marinate.

1 lb boneless skinless chicken breast (or thighs)
1 tablespoon olive oil
1 garlic clove, minced
1 cup diced green pepper
1 cup diced onion
1/3 cup soy sauce (I use low sodium)
8 ounces pineapple chunks, reserve juice
2 tablespoons vinegar
2 tablespoons brown sugar
1 teaspoon grated gingerroot
1 tablespoon cornstarch
4 cups cooked rice

Steps:

  • Cut chicken into bite sized pieces. Place in a large zipper baggie.
  • Add garlic, reserved pineapple juice and ginger root. Seat bag and squish it around to coat the chicken with the marinade.
  • Place the bag in the fridge and allow chicken to marinate for 45 minutes. (this can be done in the morning).
  • While chicken is marinating, chop bell pepper and onion.
  • Heat oil in a large skillet or wok.
  • Add green pepper and onion and saute for 3-4 minutes.
  • Add chicken and marinade and cook and stir for about 10 minutes or until chicken is cooked through.
  • In a small bowl, mix together cornstarch, brown sugar, vinegar, and soy sauce. STir to make sure there are no lumps. Add this mixture to the skillet. Stir.
  • Add the pineapple chunks to the skillet.
  • Stir until the mixture has thickened slightly.
  • Serve over cooked rice.
  • To freeze: Allow to cool. Package in a rigid container or in a large freezer bag.
  • To serve: Thaw overnight in fridge and reheat on stovetop over medium low heat OR heat in microwave until bubbly.

  • Mix together mashed sweet potatoes, eggs, butter, orange rid, brown sugar& vanilla.

8 boneless pork chops
4 tablespoons vegetable oil
4 apples, cored and peeled
2 onions, cut into small wedges
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
6 cups frozen roasted sweet potatoes
4 cups apple juice

Steps:

  • Cut chops into slices, not too thin or they dry out, cook lightly, do not over cook as they dry out AND they still get cooked once more. Leave a line of pink inches.
  • Using 2 large ziplock freezer bags (or food saver bags), place half of cooked pork in each bag.
  • Drizzle 2 tablespoons of oil in each bag, squish the meat around in it to coat, you might want to do this each time you add stuff to the bag. It helps keep things nicely covered.
  • Place 2 chopped apples in each bag.
  • 1 onion chopped in each bag.
  • 1/2 tsp's of thyme and salt, 1/4 teaspoons pepper in each bag.
  • Add 3 cups of frozen roasted sweet potatoes to each bag.
  • Add 2 cups of apple juice to each bag.
  • Close and shake the bags really really well.
  • Freeze here.
  • To cook:.
  • Remove from freezer, dump contents of bag in a large pan, add a little water, about a tbsp., cover, cook 10 minutes, you want it to thaw,uncover and simmer 10 minutes longer.
  • Alternatively you can precook the apple and onion when you cook the pork, but then they're softer like the things you buy in the store freezer.
