PORK CHOP ZUCCHINI CASSEROLE
Pork Chop Zucchini Casserole and is a fabulous one pan meal! If you love stuffing you will love this pork chop casserole, so delicious and so easy.

Steps:
- Prepare a 13x9 inch pan with cooking spray. Set aside.
- In a large bowl combine 1 package of the stuffing mix with 1/2 cup of the melted butter.
- Evenly distribute the stuffing mixture into the 13x9 inch pan. Set aside.
- Wipe out the large bowl and mix together the soup, milk, sour cream, carrots, zucchini, parsley and pepper.
- Pour evenly over top of the stuffing into the 13x9 inch pan.
- Crush remaining package of stuffing and place in a shallow bowl.
- In another shallow bowl, add the water, egg or milk, whichever you choose. I usually use water, and did for the photo. My friend Sandra swears that using egg is best. Again it is totally up to you.
- Dip pork chops in water, egg or milk then roll in stuffing crumbs. Press pork into stuffing crumbs if necessary. You want to coat the pork chops as evenly as possible.
- Place pork chops on top of the casserole.
- I usually take the unused stuffing mix, and add enough melted butter to coat the crumbs (couple of tablespoons) and dump it on top of the casserole as well.
- Bake, uncovered, at 350° for 60-75 minutes, depending on how thick your pork chops are, until they are tender.
- If you are using cheese we add it at around the 50-55 minute mark and then broil for a minute or two once the pork chops are cooked to make sure the cheese is nice and brown. The cheese tastes great on the pork chops with the stuffing too. Enjoy!

- In a large bowl, combine two-thirds of the stuffing mix with butter; place half in a greased 13x9-in. baking dish. In another large bowl, combine the zucchini, carrots, soup, milk, sour cream, parsley and pepper; spoon over stuffing. Sprinkle remaining buttered stuffing on top. , Crush remaining stuffing mix; place in a shallow bowl. Place water or milk in another shallow bowl. Dip pork chops in water or milk, then roll in stuffing crumbs. , Place pork on top of stuffing mixture. Bake, uncovered, at 350° for 1 hour or until pork chops are tender.

Steps:
- Place the pork on your wooden board and thinly slice it.
- Heat a skillet over medium heat and add the pork.
- Season it with salt, dried thyme, and paprika powder.
- Cook it for 7-8 minutes, while stirring from time to time.
- Preheat the oven to 360°F/180°C.
- Thinly slice the zucchini, tomato, and onion and place the slices in a large bowl.
- Add the garlic in a small bowl. Mix it with fresh thyme, salt, and olive oil. Pour this dressing over the veggies and mix. Season with salt and nutmeg.
- Grab an oven tray and lay the veggie slices on the bottom. Keep a few veggies for topping the meat. Add the meat and the remaining veggies. Top with shredded mozzarella.
- Add the skillet in the oven and leave it for 25 minutes!

SQUASH AND PORK CASSEROLE

- Preheat the oven to 375 degrees F. Heat the olive oil in a large skillet over medium-high heat. Add the pork, 1/4 teaspoon salt and a few grinds of pepper. Cook, breaking up the pork, until slightly browned, 2 minutes. Add the garlic, mushrooms, half of the scallions and 2 tablespoons panko; cook 3 minutes. Add the tomatoes, half of the parsley and 1/3 cup water. Increase the heat to high; cook until slightly thickened, 3 minutes.
- Combine the cottage cheese, 3/4 cup Mexican cheese and the remaining parsley in a bowl. Sprinkle 3 tablespoons panko in a 9-inch-square baking dish. Top with half of the squash, overlapping slightly; season with salt. Top with two-thirds of the pork sauce and the cheese mixture. Add the remaining squash; season with salt. Add the remaining 3 tablespoons panko, pork sauce and 1/2 cup Mexican cheese.
- Cover with foil and bake until the cheese melts and the squash is tender, about 20 minutes. Uncover and turn on the broiler; broil until golden, 2 minutes. Top with the remaining scallions.

- Combine 2 cups of chicken broth and brown rice in a saucepan over medium heat and bring to a boil. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, about 20 minutes.
- Meanwhile, heat olive oil in a deep skillet over medium heat and cook pork until browned on all sides, about 5 minutes. Add zucchini and cook for 3 minutes. Add 1 cup chicken broth and simmer until zucchini are soft, about 5 minutes. Add rice. Mix in green onions, rosemary, and Parmesan cheese and cook until well combined, 1 to 2 minutes. - In a shallow dish, combine the flour, 2 tablespoons cheese, salt, dill and pepper. Dip pork chops in flour mixture to coat both sides; shake off excess., In a large skillet, brown chops on both sides in oil. Top with onions; add water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Place zucchini over the onions. Sprinkle remaining cheese over zucchini. Sprinkle with paprika. Cover and simmer for 10-15 minutes or until vegetables are tender and a thermometer inserted in pork reads 145°. Let stand 5 minutes.

The name is long, I'll admit, but please dont let that discourage you from trying this. I made this up when I couldnt find a recipe I needed to use with the ingredients I had on hand.

- In one saucepan put in all zucchini and saute it until it is tender (about 10 minutes). Make sure you keep turning the zucchini over. Season them with garlic salt.
- In another saucepan brown the pork chops seasoned with the pepper and garlic salt (I use alot of garlic salt) on both sides.
- Place the chops in a 9x13 baking dish and then put the tomatoes in the saucepan and let them cook a little bit.
- In a bowl combine the soup and sour cream and milk. Then once mixed add in the stuffing and coat well.
- Lay the zucchini on the pork chops, then the tomatoes, and sprinkle with a little salt.
- Then spread the stuffing on the other layers and sprinkle the cheeses on top.
- Bake in an oven at 350 for 35-45 minutes, or until chops are fully cooked through.

CASSAROLED PORK CHOPS

- pre heat the oven to 100 degrees / gas mark 2
- peel and halve the onions, cut carrots in halve, make up the vegetable stock in a jug
- place the chops on a chopping board trim the the fat set aside for later, place the chops in a casserole dish laying the onions in the gaps as you do so,
- place the carrots the rest of the onions, chillies, tomato puree, thyme and all the stock in the casserole dish season with salt and pepper
- pop the lid on place in the middle of the oven for 5 hours.
- after 5 hours remove from the oven straine but retain all the fluid, remove all the bones and discard, put the carrots and onions back in the fluid in a large saucepan place the meat back in add 2 - table spoons of gravy granules bring to the boil then simmer for 1 hour stirring occasionaly to prevent sticking.
- place an oven dish with a little oil in to a pre heated oven at 180 degree gas mark 6, mean while peel and halve 4 potatoes and part boil, drain and leave to rest, once the oil is hot pour the potatoes into the hot oil cook for 1 hour shaking 3o mins into cooking, steam the broccoli and carrots until tender. then serve and enjoy.
