Steps:
- Heat oven to 400°F. Spray cookie sheet with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
- In shallow dish, mix cereal, 1 tablespoon cilantro, 1 teaspoon garlic, the orange peel, onion powder, oregano, cumin and pepper. Dip pork chops into buttermilk; coat completely with cereal mixture. Place on cookie sheet.
- Bake 25 to 30 minutes or until pork is no longer pink in center.
- Meanwhile, in 1-quart saucepan, heat oil over medium heat. Cook 1 tablespoon garlic in oil about 1 minute, stirring occasionally, until golden. Stir in lime and orange juices. Heat to boiling, stirring occasionally. Remove from heat; stir in 2 tablespoons cilantro. Cover; refrigerate until serving time. Serve with pork chops.

PORK CHOPS CUBANO WITH GARLIC-CITRUS SAUCE
A crunchy and tasty coating of garlic, onion, oregano, cumin, cilantro and Panko breadcrumbs* creates memorable baked chops with a tasty garlic-citrus sauce * the original recipe used bran cereal for the crunch, I always use Panko for mine! You may substitute bran cereal for the fiber if you wish. This is a recipe that should please anybody who loves pork chops as much as hubby and me! Lots of crunch, moist succulent chops and a dreamy garlic and citrus sauce that goes oh so well with the the taste of pork. FDA now states that it is safe to cook chops, pork loins and roasts to 145 degrees F. This will give you a slightly pink center and much juicer meat! However, ground pork should still be cooked well to 165 degress F. the same as ground beef. ENJOY!

- Pre-heat oven to 400 degrees F. Spray cookie sheet with cooking spray. Place Panko bread crumbs seasoned with 1 tsp salt, pepper, cumin and mix in 1 TBL cilantro, 1 tsp garlic, the orange peel, onion powder, 1 tsp ground oregano 1 tsp ground cumin and pepper set aside in a shallow dish. eg: 9 X 9 baking dish.
- Place buttermilk into another shallow pan.
- Dip pork loin chops into buttermilk; coat completely with the Panko mixture. Place on the cookie sheet.
- Bake 20-25 minutes or until pork is no longer pink in center. The "new rules" state that pork may now be cooked with a slightly pink center to only 145 degrees F. That is how I cook mine. or use a meat thermometer if you feel more comfortable using that. You just want to have the most succulent, juicy chops. Not too dry!
- Meanwhile in a 1 quart saucepan, heat oil over medium heat. Cook 1 TBLS garlic in oil about 1 minute, stirring occasionally, until golden. Stir in lime and orage juices. Heat to boiling stirrings occasionall. Remove from heat; stir 2 TBLS chopped fresh cilantro. Cover; refrigerate until serving time. Serve with pork loin chops. You can double this recipe if you like.
SLOW-COOKER CUBAN PORK

- Toss the onion, bell pepper, cilantro and garlic with 1 tablespoon olive oil in a 6- to 8-quart slow cooker. Rub the pork chops with the cumin, 3/4 teaspoon salt and several grinds of pepper; add to the slow cooker. Drizzle with the remaining 1 teaspoon olive oil, squeeze in the juice of 1 orange and add the squeezed orange halves. Cover and cook on low until the pork is very tender, 7 to 8 hours.
- Cook the rice as the label directs, sprinkling the peas on top of the rice during the last 3 minutes of cooking. Remove the pork chops to a bowl; discard the bones and orange halves and shred the meat with 2 forks. Stir the vinegar and the juice of 1/2 orange into the slow cooker. Season with salt and pepper; add the juice from the remaining 1/2 orange to taste.
- Return the pork to the slow cooker. Fluff the rice with a fork, stirring in the peas. Serve the pork with the rice; top with cilantro.
CUBAN PORK CHOPS WITH MOJO
Steps:
- In a gallon-sized resealable plastic bag, combine 1 cup orange juice, 1/2 cup lime juice, and vinegar. Add pork and let it sit and marinate for about 1 hour in refrigerator.
- In a small mixing bowl, combine all dried spices. Pat the pork chops dry with a paper towel and rub with the dry spice mixture.
- Heat oil in a large saute pan over high heat. Place the pork chops in the pan and sear on 1 side until brown. Flip over and turn the heat down to medium-low. Add onion and saute for 2 minutes. Then add the garlic and continue to cook until garlic begins to brown. Pour in the remaining 1/4 cup orange juice, 1/4 cup lime juice, and white wine. Simmer until the liquid is slightly reduced and begins to thicken. The chops should be cooked through.
- Remove the chops from pan and put on a warm plate. Continue to reduce juices in pan by half. Pour over the chops and serve immediately.
- Garnish with watercress, tomatoes and avocado.
CUBAN CITRUS GARLIC SAUCE
Not sure if this is authentic as a Mojo or not- has cilantro. Sounds good for pork and other things too!

- Add garlic and cook until fragrant and pale golden brown., 2-3 minutes.
- Stir in juices, a bit less than 1/4 cup water, cumin, oregano, salt and pepper.

- Cool to room temperature, then stir in cilantro.

This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

- Season both sides of pork chops with paprika, salt, and pepper.
- Heat a large skillet over medium-high heat; add 2 tablespoons butter. Sear pork chops until golden brown and no longer pink in the center, 2 to 4 minutes per side. Remove pork chops from the skillet and set aside.
- Melt remaining butter in the same skillet over medium-high heat. Add mushrooms and cook until golden and excess moisture evaporates, about 5 minutes. Add garlic and mustard; cook until garlic is fragrant, about 1 minute.
- Add flour to the skillet, stirring to remove any lumps. Slowly add beef broth, whisking until incorporated. Season with salt and pepper. Reduce heat to medium and simmer, stirring often, until sauce thickens, about 5 minutes. Check for seasoning again.

- In a large skillet, brown chops in oil on both sides. Add water, paprika, and pepper; bring to a boil. Reduce heat to low; cover and simmer about 35 minutes, turning once. , Meanwhile, grate peel from the stem end of the orange, then cut six slices from the other end. Set aside. CREAMY CITRUS SAUCE PORK CHOPS
Boneless center cut pork chops cooking in a citrusy sauce. Suprizingly easy and done in under 45 minutes! I like this recipe because it is quick and the kids gobble it up. The sauce is really good and can be poured over rice as a side dish too. I found the base of this recipe 15 years ago when I first started to cook. I have added to it and made it my own. Makes great leftovers.

- Chop onion and set aside.
- Heat oil in large high sided pan over medium heat.
- Salt and pepper each chop, put in hot oil.
- Cook about 3 minutes on each side or until nicely browned.

- Finely grate zest from one orange into a small bowl, then squeeze 1 cup juice from oranges. Stir in lime juice. Set aside.
- Season pork with salt and pepper, then press in flour to coat, shaking off excess. In a large skillet, heat 1 tablespoon oil over medium-high until shimmering. Add pork and cook until golden brown on both sides, 2 to 3 minutes per side. Transfer to a plate. Reduce heat to medium and add remaining tablespoon oil. Add onion, season with salt, and cook, scraping up browned bits, until crisp-tender, 2 minutes. Add garlic and cook 1 minute, stirring.

- In a medium bowl, combine the ginger and rice vinegar. Season with salt and pepper. Set aside.
- Trim the bok choy and cut into 3- to 4-inch pieces, if large, or cut down the middle lengthwise, if using baby bok choy. Heat 1 tablespoon oil in a large (12-inch) skillet over medium-high heat. Working in batches, add the bok choy to the pan, cut-side down, if using baby bok choy, and sear on one side until golden brown, 3 to 4 minutes. Add additional oil, if necessary. Arrange chops and orange halves in the skillet, cut-side down. Sear one side of the pork (without moving it) until deep brown, 5 to 6 minutes. Flip the pork but leave the orange undisturbed. - Add the shallots and garlic to skillet and cook until softened and starting to brown, about 3 minutes. Add all the pork chops and any accumulated juices back to the pan, overlapping if necessary. Add the orange juice and 1/4 cup water. Bring the liquid to a simmer, swirling the pan to release any bits stuck to the bottom. Cover and cook for 3 minutes, then uncover and cook until the pork is cooked through, 6 to 8 minutes. Transfer the cooked chops to a board and allow the sauce to continue cooking until reduced and sticky, 2 to 3 minutes. Remove from heat.
- Transfer the bok choy to the serving platter. Slice the pork and transfer to the platter along with any accumulated juices from the meat. Spoon the pan sauce and squeeze the caramelized orange halves over the top.
