4 pork chops
1/2 tablespoon black pepper (or to taste)
1 teaspoon hot paprika (or more as needed)
1/2 teaspoon sea salt (or to taste)
1 tablespoon oil
1 cup low sodium chicken broth
1 tablespoon Worcestershire sauce
6 tablespoons brown sugar
0.75 (5 1/2 ounce) can tomato paste
4 slices lemons

Steps:

  • Season pork chops on both sides with pepper, paprika and salt; set aside. In a large saucepan over medium, heat oil. Add pork chops and cook until brown, about 3 minutes per side. Transfer chops on a plate and remove fat with a paper towel. Add chicken broth, Worcestershire sauce, brown sugar and tomato paste. Stir well and place pork chops back to the pan and spoon sauce over. Cover, reduce heat to medium-low and simmer for 45 minutes.
  • Place lemon slices on pork chop, pressing gently to extract some juice and simmer for 15 minutes. Brush the chops here and there. If sauce is not thick enough, mix 2 teaspoons cornstarch in ½ cup cold water and add to the sauce. Served with mash and veggies; make.

Number Of Ingredients 13

6 to 7 pounds cooked meats (such as leftover roast turkey, roast pheasant, capons, roast beef, roast leg of lamb, pork or veal chops, roast pork, and perhaps some stewed meats)
3 tablespoons olive or vegetable oil
2 large onions, chopped
8 medium tomatoes, chopped
1 (32-ounce) jar mixed pickles, chopped
Reserved juice from meats
3 pounds potatoes, peeled and quartered
18 eggs, hardboiled
6 tablespoons sugar
2 teaspoons powdered mustard
Vinegar from pickles
1 cup white wine
3 cups rice

Steps:

  • Remove any bones from the meats and cut into 1-inch square pieces. Set aside. Heat the oil in a large pot over medium heat and saute the onion until slightly golden. Add the tomatoes and let cook until the liquid has evaporated. Add the pickles and the chopped meats. Mix well, cover, and cook over low heat for 10 minutes to blend flavors. Add reserved juices and enough water to barely cover meats. Place potatoes over meats, cover, and cook until potatoes are done (about 20 minutes).
  • While O Diablo is cooking, peel the eggs and separate the yolks from the whites. Mash the whites with a fork and add to the pot. Mash the yolks and mix with the sugar and the powdered mustard. Add enough of the vinegar from the pickle jar to form a paste (about 1/2 cup). When the potatoes are done, thicken sauce in pot with the egg yolk mixture. Cook 5 minutes more. Add white wine; increase the heat and bring to a boil. Cook another 3 minutes. Remove from heat and let it set, covered, until dinner is served.
  • Cook rice according to package directions. When ready, reheat O Diablo and serve with rice. Some prefer this dish with bread instead of rice to sop up the juices; either way, it is delicious.
  • Prepare this dish in the morning so that the flavors will have melded by dinnertime. The leftovers of this dish will keep up to 2 weeks in the refrigerator.

1 (1 pound) whole pork tenderloin
salt and freshly ground black pepper to taste
2 teaspoons vegetable oil
½ cup chicken broth
2 tablespoons heavy cream
1 tablespoon extra-hot prepared horseradish
1 tablespoon Dijon mustard
¼ teaspoon cayenne pepper
1 tablespoon cold butter
1 teaspoon chopped fresh chives

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Season pork with salt and pepper.
  • Heat oil in an ovenproof skillet over high heat. Cook pork until browned on one side, 3 to 4 minutes. Turn over pork and transfer the skillet to the preheated oven. Cook until pork is browned and still slightly pink in the center, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer pork to a plate.
  • Remove any excess oil from the skillet and place it over medium-high heat. Pour in chicken broth and bring to a boil, scraping any browned bits off of the bottom of the pan. Whisk in cream, horseradish, Dijon mustard, and cayenne pepper. Continue cooking until the mixture is reduced to a thick sauce, 3 to 4 minutes. Remove from heat and whisk in cold butter. Stir in chives.
  • Slice pork into 1/2-inch slices and serve topped with sauce.

½ teaspoon ground cumin
2 cloves garlic, pressed or minced
½ cup minced onion
2 tablespoons Safeway SELECT Verdi Olive Oil
4 raw steak with refuse, 135 g; yields excluding refuses boneless center-cut pork loin chops, trimmed of fat
2 avocado, NS as to Florida or Californias medium-size ripe avocados, pitted, peeled, and sliced
4 sprigs Cilantro sprigs
4 wedges Orange wedges

Steps:

  • In a small bowl, mix chili powder, cumin, garlic, onion, and oil. Spread about 1 tablespoon of the chili mixture on each side of each chop. Place each chop between 2 sheets of plastic wrap. With a heavy, flat-sided mallet, pound meat firmly but gently all over to a thickness of about 1/4 inch.
  • Place pork on a lightly oiled grill 4 to 6 inches above a solid bed of hot coals (you can hold your hand at grill level for only 2 to 3 seconds) or over high heat on a gas grill. Close lid on gas grill. Cook, turning once, until pork is well browned on both sides and no longer pink in center; cut to test (5 to 6 minutes).
  • Serve pork with avocado slices; garnish with cilantro sprigs and orange wedges. Squeeze juice from the oranges over meat and avocado to taste.
