Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Melt butter in a large skillet over medium heat; cook and stir onion and apple slices in the melted butter until tender, about 5 minutes. Transfer onion and apple to a bowl.
- Place pork chops in the same skillet; cook over medium heat until pork chops are browned on both sides, about 5 minutes per side.
- Mix applesauce, brown sugar, mustard, and cinnamon into onion and apple mixture.
- Place pork chops in a 9x9-inch baking dish; season with salt and black pepper. Spoon applesauce mixture over pork chops; cover dish.
- Bake in the preheated oven until pork chops are no longer pink in the center, about 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

PORK CHOPS WITH APPLE SAUCE

- In a shallow pan, pour marinade over pork chops and marinate for 1 hour.
- Remove the meat from the marinade and drain off the excess. In a skillet over high heat, pan-sear the pork chops on both sides in butter and oil to seal in juices. Sprinkle with a handful of fresh chopped parsley and thyme; season with salt and pepper. They should be well browned on the outside and pink in the center. Transfer the pork chops to a roasting pan, place in a single layer and set aside.
- In the same skillet, saute apples in a bit more butter and oil, add more parsley and thyme. Deglaze the pan with brandy. Pour in brown sauce and cider vinegar to create a pan sauce. Spoon the apple sauce over the pork chops. Sprinkle with more chopped herbs and salt and pepper.
- Roast in a preheated 325 degree oven for 15 to 20 minutes. A meat thermometer inserted into the pork should read 155 degrees F.

The fresh piece of ginger is key here (only costs about .30 or.40 cents), so don't short cut with dried or you will be missing out. You can use regular raisins if you don't have golden.

- Heat a large pot of water for pasta. Season water with salt and cook pasta to al dente.
- Add apples to a medium pot and stir in cider, sugar, raisins, cinnamon and a pinch of salt. Place pot over medium-high heat and cook until tender, about 12 minutes.
- Season chops with salt and pepper. Heat 2 tablespoons extra-virgin olive oil in a skillet over medium-high heat. Add chops and cook 6 to 7 minutes on each side.
- While chops cook, heat 2 tablespoons butter in a sauce pot over medium heat. Whisk in flour and cook a minute then whisk in milk and season with salt and pepper. Grate cheese and stir into sauce and season with nutmeg, to taste, and a dash of hot sauce. Reduce heat to low.
- Add broccoli to pasta last 2 minutes of cook time. Drain and return to pasta pot. Add cheese sauce and stir to coat.
- Add mustard and syrup to chops and glaze, 1 minute.
- Serve pork with apple sauce, macaroni and cheddar with broccoli along side.

- In a large bowl or pitcher, mix the water, salt and sugar until dissolved. Place the pork chops in a gallon freezer bag and pour the brine into the bag. Leave this in the fridge for 1.5-2 hours.
- Preheat the oven to 275°F After the 2 hours, take the pork chops out of the brine and pat them dry. Sprinkle with salt, pepper and thyme on both sides. In a preheated saute or large frying pan, sear the pork chops about 5 minutes per side.
- Put the pork on a sheet pan and put that in the oven. Meanwhile, in the pan that the pork chops were seared in, saute the onion and apple with butter and an extra drizzle of olive oil. Season with salt and pepper.
- When the onion and apple have softened, about 5 minutes, sprinkle flour over and cook for 1-2 minutes until the flour is absorbed and has turned a golden color.
- Add the chicken stock, scrapping any of the crusty bits on the bottom of the pan; stir to combine. Place the pork chops back in the pan and pour any of the juices that accumulated on the bottom of the pan from the oven.
- Simmer for 5 more minutes and serve alongside rice, potatoes or stuffing.

- Season pork chops with salt and pepper.
- Place a large skillet over medium-high heat. Lay seasoned pork chops into the hot skillet. In the spaces between the chops, add the butter and onions. Cook and stir the onions while the first side of the chops cook until browned, 5 to 7 minutes. Turn the chops and continue cooking until the no longer pink in the center, 5 to 7 minutes more. - Trim most of fat from chops andsprinkle on both sides with salt and pepper.
- Quarter, core and peel apples.
- Heat oil in skillet large enough to hold chops in one layer. Cook until nicely browned on one side, 2 or 3 minutes. Turn and cook again until browned, 2 or 3 minutes more.
- Continue cooking chops about 15 minutes, turning often. Arrange quartered apples around the chops. Cover closely and continue cooking 5 minutes.

- Mix together the flour, cumin, salt and pepper on a large plate. Lightly coat each chop with the flour mixture, set aside.
- Heat the oil and butter in a large skillet over medium-high heat.
- Sprinkle the apple halves with a dash of salt and pepper. Cook the apples cut-side down about 5 minutes or until golden brown. Remove from pan, cover and set aside.
- Place the chops in the skillet, sprinkle with parsley, and cook until golden brown and crispy, 4-5 minutes per side.
- While the pork is cooking, whisk the broth and vinegar together.
