1/2 cup Rice (( Jasmine rice ))
4 cups Water
1 Century egg
5 slices Ginger
2 sticks Green onion ((small))
2 pieces Pork ((Country style boneless pork ribs around 1/4 pound))
2 teaspoons Sesame oil
1/8 teaspoon White pepper
1/4 teaspoon Garlic powder
1/2 teaspoon Salt

Steps:

  • Wash and rinse ½ cup of jasmine rice and put them into an instant pot. Then, add 4 cups of water. Cover the lid and close the vent. Push the manual button and adjust time for 15 minutes at high pressure and natural release.
  • Meanwhile, peel and cut 5 slices of ginger and cut into strips and set aside.
  • Wash and cut 2 sticks of green onion into small pieces and set aside.
  • Crack 1 and remove century egg shells. Then, wash it and cut into slices.
  • After, wash and cut 2 pieces of boneless pork rib style (around ¼ pound) into small thin pieces.
  • Then, add 2 teaspoons of sesame oil, ½ teaspoon of salt, ¼ teaspoon of garlic powder, ⅛ teaspoon of white pepper, mix it well and marinate for 15 minutes before cooking.
  • When the congee is done, open the lid and push the sauté button and adjust time for 5 minutes. (You can add more minutes if you want thicker congee).
  • Next, add the ginger and marinated pork. Keep stirring the rice porridge until the pork is cooked.
  • After that, add the sliced preserved egg, green onion and mix it well. You can add more salt white pepper or sesame oil to your taste.

Pork bone congee or "gee gwut jook" in Cantonese phonetics, is a simple rice congee dish flavored with a meaty pork bone stock.My mom's pork bone congee soup goes back to as long as I remember it as a little kid and is just as good now as it was then!

3 pounds pork back bones ((cut into 2-inch pieces, washed, and drained))
1 tablespoon salt
4½ quarts water
2 pieces dried squid or 2 pieces dried conch or 3 large dried scallops) ((smashed into small pieces, optional))
1 cup uncooked rice ((soaked in water for 30 minutes))
1 scallion ((chopped))
¼ cup cilantro ((chopped))
Fresh ground black or white pepper ((to taste))

Steps:

  • Rub the pork bones in 1 tablespoon of salt and marinate for at least 6 hours, ideally overnight, in the refrigerator.
  • Put the marinated pork bones in a large pot with 4½ quarts of water, and bring to a boil. Boil for 5 minutes. Skim off any foam with a spoon or a fine-meshed strainer, and discard.
  • Next add the dried squid/conch/dried scallops (if using), cover the pot loosely, and turn the heat down to a simmer. Let the soup simmer for 4 hours.
  • Taste the soup and re-season with salt if needed. Add the soaked rice and simmer for another hour. If you decide to use Judy's method for 20-minute Congee, then all you need is an additional 30 minutes after adding the grains!
  • One point I'd like to make here is that the texture and consistency of congee is a very personal thing. Some like their congee cooked like a gruel, where you can't see any signs of individual rice granules at all. Others prefer the rice granules cooked until they just open up or "blossom like a flower," to use the literal translation of a Chinese expression. Finally, some prefer it thick and others prefer it thin. This recipe yields a thick congee, where the rice is cooked until it blossoms like a flower. But once you're familiar with this congee recipe, feel free to adjust the amount of water and/or rice according to your own preferences!
  • At this point, give your congee another taste, and add additional salt to taste. Ladle the congee into small bowls, and serve with chopped scallion, cilantro, and pepper.

3/4 cup long-grain rice
8 cups water (or substitute chicken, vegetable, or beef stock )
Method 1:1 teaspoon salt
Method 2: 1 teaspoon sunflower oil (or peanut, vegetable, or olive oil)
Optional: minced ginger, minced garlic, lotus root, ginkgo nuts, shredded chicken, crumbled pork, bok choy, soft-boiled egg, crushed peanuts, etc.

Steps:

  • Gather the ingredients.
  • Rinse and wash the rice and soak it in water for 30 minutes; then drain the water.
  • In a large pot or Dutch oven , bring the rice and 8 cups of water or stock to a boil.
  • When the rice is boiling, turn the heat down to medium-low. Place the lid on the pot, tilting it to allow some of the steam to escape (the same as you would do when cooking white rice ).
  • Cook on medium-low to low heat, stirring occasionally,​ until the rice has the thick, creamy texture of porridge. This can take about 1 1/2 to 1 3/4 hours.
  • Add the salt, taste, and add any seasonings or toppings as desired, such as crushed peanuts.
  • Rinse and wash the rice and soak the rice in the water for 30 minutes; then drain the water.
  • Add 1 teaspoon of oil to the rice and mix evenly. Adding oil can help the rice cook quicker and also make the congee smoother and softer in texture.
  • In a large pot or Dutch oven, boil the water and add the rice.
  • Turn the heat down to medium and keep stirring the rice for five minutes.
  • Turn the heat to medium-low, put on the lid, and simmer for 45 minutes. You can tilt the lid to allow the steam to escape. Season to taste and add your choice of toppings.
  • Rinse and wash the rice and soak the rice in water for 30 minutes, then drain the water.
  • Put the rice into a freezer bag and freeze for 2 to 3 hours. This can result in a smoother textured congee.
  • Boil 1 quart of water in a large pot or Dutch oven and then add the frozen rice into the boiling water.
  • Bring it to a boil again, lower the heat to medium, and cook for 15 minutes.
  • Turn off the heat and cover with the lid; let sit for 15 minutes before seasoning and adding your choice of toppings.

500 gram pork bones
2 inch ginger, peeled and bruised
10 cups water
2 rice cooker cup (1 1/2 regular cup) rice, soaked in water for 1 hour
salt
ground pepper
200 gram ground pork
3 tablespoon Tianjin preserved vegetables (Chinese: dong cai) (*)
1/4 cup water
2 drops of sesame oil
2 scallions, thinly sliced diagonally
2 inch ginger, peeled and cut into thin matchsticks
1 packet of wonton skin, cut into thin strips and deep fried
soy sauce

Steps:

  • Boil pork bones, ginger, and water in a big soup/stock pot. Reduce heat, cover, and simmer for 1 hour.
  • Remove the pork bones and ginger, then drain to remove scums and impurities from the stock. Return the stock to the pot.
  • Bring the stock back to a boil and add the rice. Once it boils, reduce heat and simmer for 2 hours until the rice breaks down into smooth thick congee. Stir every so often to prevent the congee from sticking to the bottom of the pot.
  • Meanwhile, mix ground pork, Tianjin preserved vegetables, water, and sesame oil together until well combined. Set aside.
  • Once the congee has finished cooking, drop teaspoonful of ground pork mixture into the congee until all the pork mixture is used up. Once the ground pork is cooked through, about 5 minutes, season with salt and pepper.
  • Turn off heat, serve hot with garnish.

1 cup long grain white rice
½ teaspoon salt
1 teaspoon vegetable oil
5 cups water
½ pound boneless pork loin roast
1 ½ teaspoons oyster sauce
1 salted (hard-cooked) duck egg, chopped
1 hundred-year egg, minced
1 (1 inch) piece fresh ginger root, thinly sliced
½ cup chopped green onion
ground black pepper to taste
soy sauce to taste

Steps:

  • Rinse and drain the rice, and place in a large pot. Stir in the salt and oil, and let stand for 5 minutes.
  • Add the pork to the rice, and stir in the water. Bring to a boil, then simmer over medium heat for 15 minutes, or until the pork is cooked through. Remove the pork from the pot with a slotted spoon, and set aside. Continue to simmer the rice for 20 minutes. Chop the pork into small cubes, and mix with the salted egg and hundred-year egg.
  • After the 20 minutes are up, stir the pork and egg mixture back into the congee along with the oyster sauce. Serve in bowls, and garnish with ginger and green onion. Have soy sauce and pepper on the side for seasoning.

Congee, or jook in Cantonese, is a nutritious rice porridge that is usually eaten when someone isn't feeling well. The simplest version of congee is made with just rice, water and salt, so it is easily digestible and a blank slate for any flavor. There are many varieties of congee; ours focuses on the popular combination of salted pork and century egg (though you can easily make it without the egg). It is important to take the time to soak the rice so it cooks evenly and breaks down to make congee. We tested two methods for hydrating the rice grains--soaking the rice in water in the refrigerator overnight and freezing washed rice for 6 hours. We found that the refrigerator technique resulted in a creamier and more fragrant congee base.

1 cup jasmine rice
Kosher salt
1 pound boneless, skinless pork shoulder, cut into 1/2-inch-thick by 3-inch-long strips
2 teaspoons neutral oil, such as vegetable or canola oil
2 century eggs, roughly chopped, optional (see Cook's Note)
1 1/2 teaspoons granulated sugar
Freshly ground white pepper
1 scallion, cut into 1/4-inch slices, optional
1-inch piece fresh ginger, peeled and cut into julienne strips, optional
Toasted sesame oil, for drizzling, optional

Steps:

  • Wash and drain the rice twice with cold water in a medium bowl. Add enough cold water to come 1 inch above the rice. Cover and soak in the refrigerator at least 8 hours and up to 12 hours.
  • Massage 2 teaspoons of salt into the pork in a medium bowl until the salt dissolves, about 30 seconds. Cover and marinate in the refrigerator at least 8 hours and up to 12 hours.
  • Add 11 cups cold water to a 7-quart Dutch oven and bring to a boil over high heat.
  • Pour off all the water from the soaked rice. Add 1/2 teaspoon salt and the neutral oil and massage using a spatula or spoon until the oil and salt are well distributed and most of the rice grains are broken.
  • Rinse the pork strips under running water to remove excess salt and drain.
  • Add the rice and pork to the boiling water. Bring back up to a rolling boil, stirring continuously, about 8 minutes. Reduce the heat to medium low and simmer, stirring every 10 to 15 minutes using a wooden spatula, until the mixture has thickened, the rice grains have broken down and the texture is similar to the consistency of cooked grits, 50 to 70 minutes. (To thin out the consistency, add warm water 1/4 cup at a time. To thicken the consistency, simmer until desired thickness, about 5 minutes.)
  • Stir in the century eggs if using and cook until the eggs are warmed through, about 3 minutes. Stir in the sugar, 1/2 teaspoon white pepper and salt to taste.
  • Divide among bowls and top with scallions, ginger and a drizzle of toasted sesame oil if desired.
