SPRING ROLL RECIPE

Spring Roll recipe image

Recipe video above. Everybody's favourite Spring Rolls, made at home! Nothing like the ones at suburban Chinese takeout joints with unidentifiable mushy fillings and overly greasy. These are shatteringly crisp and golden, just like they should be, and you will actually be able to taste the filling!

Provided by Nagi

Categories     Starter

Time 30m

Number Of Ingredients 20

1 tbsp oil
2 garlic cloves (, finely chopped or minced)
400 g / 13 oz pork mince ((ground pork), or chicken or turkey)
6 dried shiitake mushrooms soaked in boiling water OR 8 fresh ((Note 1))
1 1/2 cups shredded carrot ((1 large or 2 small))
1 1/2 cups (heaped) bean sprouts
1 1/2 cups (packed) shredded green cabbage ((any type is fine))
1 tsp cornflour / cornstarch
1 1/2 tbsp Oyster Sauce
2 tsp soy sauce ((light or all purpose is best, dark is also ok))
15 - 20 spring roll wrappers, defrosted (21.5 cm / 8" squares) OR 35 - 40 small spring roll wrappers (Note 2), or Egg Roll wrappers to make Egg Rolls (Note 6)
2 tsp cornflour (for sealing rolls)
1 tbsp water (for sealing rolls)
Oil for frying (I use vegetable) OR oil spray for baking (I use canola)
2 tsp cornflour/ cornstarch
2 tbsp water
½ cup apple cider vinegar
1/3 cup brown sugar ((adjust to taste))
2 tbsp tomato ketchup
2 tsp soy sauce

Steps:

  • Heat oil in a skillet or wok over high heat. Add garlic, stir quickly, then add pork. Cook, breaking it up as you go, until it turns white.
  • Add carrot, bean sprouts, cabbage and mushrooms. Cook for 3 minutes or until vegetables are wilted. Add cornflour, soy sauce and Oyster sauce, cook for 1 minute until the liquid is gone. The Filling should not be watery, it should be kind of sticky (watery filling = soggy spring rolls = ? ).
  • Cool Filling (super speedy: spread on tray, refrigerate 5 minutes). (Hot filling = spring rolls burst open = ? )
  • Mix cornflour and water in a small bowl (for sealing the rolls).
  • Carefully peel off one spring roll wrapper, keep the others covered under a damp tea towel.
  • Place the wrapper with the SMOOTH SIDE DOWN (Note 3) in a diamond position. Place a very heaped dessert spoon of filling on the bottom. Roll up halfway, fold sides in, then finish rolling. Use cornflour sludge to seal. (Watch VIDEO below). They should be about 12 cm / 5" long, 2.5cm / 1" wide once wrapped.
  • Pour enough oil in a wok or large saucepan (Note 4) so it is double the height of the spring rolls. Heat on medium high until hot - stick a bamboo chopstick or wooden spoon handle in, if rapid bubbles appear, then it's hot enough.
  • Carefully place spring rolls in the oil (about 4 - 5 at a time) and cook, turning occasionally, until deep golden - around 1 1/2 - 2 minutes. Transfer to paper towels to drain.
  • Repeat with remaining spring rolls. Serve while hot with Sweet and Sour Sauce!
  • Place spring rolls on a rack and place the rack on a tray. Spray very generously with oil all over (use canola or other natural oil). Bake at 200C/400F (standard) or 180C/350F (fan / convection) for 20 to 25 minutes until golden and crispy - no need to turn.
  • Combine ingredients in a small saucepan over medium heat. Bring to simmer, stirring regularly, then simmer until it thickens to taste (about 3 - 5 minutes).

CRISPY PORK & VEGETABLE ROLLS

Crispy pork & vegetable rolls image

Crispy Thai rolls with pork and vegetables - great for a starter. You can make these ahead and freeze

Provided by Mary Cadogan

Categories     Buffet, Canapes

Time 45m

Yield Serves 6, with other dishes

Number Of Ingredients 14

2 tbsp cornflour
50g vermicelli rice noodles
100g minced pork
1 garlic clove , finely chopped
1 carrot , grated
50g oyster mushroom , finely chopped
2 tbsp finely chopped coriander
2 tbsp light soy sauce
1 tsp sugar
¼ tsp ground white peppercorns
7-8 spring roll wrappers (try an oriental foodshop, if you find them, buy extra and freeze)
vegetable oil , for frying
iceberg lettuce or cos lettuce and mint sprigs, to serve
sweet chilli sauce , for dipping

Steps:

  • Blend the cornflour with 3 tbsp cold water to make a paste to stick the rolls together. Put the noodles in a heatproof bowl, pour over boiling water to cover and leave for 3 minutes. Drain. Cool under running cold water, then drain well, tip into a large bowl and snip into small pieces with scissors.
  • Add the pork, garlic, carrot, mushrooms, coriander, soy sauce, sugar and pepper. Mix together well with your hands.
  • Take one wrapper out of the pack and put it on a board (keep the rest covered or they will dry out). Cut the wrapper in four and put a heaped teaspoon of filling onto one side of each square, brushing the sides with paste as you go (1), fold over the end, then the two sides (2) and roll up (3). Make the rest in the same way. Cover and chill until needed.
  • Heat about 3cm of oil in a wok or frying pan, add half the rolls and fry until crisp and golden, about 2-3 minutes. Drain on kitchen paper and cook the rest. Serve on a platter with lettuce leaves, mint sprigs and a small bowl of dipping sauce. Get each guest to take a leaf of lettuce and a mint spring, then wrap it around a roll with a slick of sauce - a lovely combination.

PORK SPRING ROLLS

Pork Spring Rolls image

Great finger food for a gathering. Serve with sweet chilli sauce, soy sauce. I have found that if you want to make them the day before, they will soften up, just pop them in a medium heat oven for about 20 minutes and they will be nice and crispy. To make this easy, chop all ingredients in a food processor.

  • Bring several cups of water to boil in the saucepan. Add the bamboo shoots and blanch them for 1 minute to get rid of the odor. Drain and rinse with cold water.
  • The spring roll wrappers dry out easily. I usually take a short stack of wrappers (about 5 or 6) out of the package at a time. Then, cover the wrappers with a thick dry cloth to prevent them from drying. You can also cover it in plastic wrap.
  • Take 1 sheet of the spring roll wrappers, and place lay it on the counter in a diamond shape, with one corner pointed towards you. Take about 2 tablespoons of filling and place it on the bottom. I like to leave a 1.5 to 2-inch gap between the filling and the bottom corner.
  • Line paper towels over a baking sheet or over 2 large plates. You’ll be draining your spring rolls over these paper towels.
